For The Love Of Vegetables

Ever since I was little I always remember having a love for vegetables. Whether it was my grandmother’s sopa de auyama or a plain bag of carrots and lettuce, I was known to be a veggie monster. Or perhaps I thought I was a bunny?

Although I don’t have it often, one of my all-time favorite breakfasts is a plateful of latkes. I would usually just eat them with applesauce, but people also serve them with sour cream. My dad likes to add corn to them when he makes them–something I definitely recommend trying.

Over the weekend I went on a full-blown cooking storm, and I’m pretty sure that’s what I spent most of my time doing. But really there’s not a day that goes by where I don’t prepare something. Anyway, I had stumbled upon a recipe for Sweet Potato Veggie Burgers. Having just used the sweet potatoes for another recipe, I used delicata squash instead. Besides it had been hanging around for too long. For the spices I used a ‘blackened seasoning’ blend, nutritional yeast, and thyme.

After the veggie burgers were done, and I had gone on a late night run (my prime running time), by the time I came back… I don’t know what it was but I decided that the veggie burgers would be great for breakfast! Not just that, but instead of serving them as a patty I thought they’d be interesting as pancakes. Something reminiscent of potato pancakes or latkes.

Something was missing...

It needed something to contrast in color and in flavor.

Aha!

I love how spring onions are a mild yet put a skip in a dish’s walk. They tasted good, but were a bit dry even if I had served them as veggie burgers. Next time I’ll experiment by adding in some eggs and oil to the equation.

Friends, Food, and Family

Good morning everyone! I wanted to give you all a heads up that from now on I will be answering your questions in the comments section, so don’t forget to check back if you asked one! I use to do that, but somewhere along the line I stopped. It’s a lot easier to reply right on the post rather then sending out e-mail, especially because I want to get back to you guys. But if they are in-depth or personal questions, then of course an e-mail would be sent.

Sherried Winter Squash Bisque

As some of you may know, thick soups are my favorite! Especially ones involving butternut squash. This recipe caught my eye awhile ago and me oh my, my taste buds saw fireworks! Imagine your grandma’s most comforting specialty soup… times ten!

Serve with a dollop of Greek yogurt and some thyme (and coconut oil if you’re so inclined).

As part of Foodbuzz’s Tastemakers program I was generously sent a loaf of Nature’s Pride Hearty Wheat with Flax to try out.

The bread was great for sandwiches!
Especially ones filled with homemade hummus, Vegenaise, and veggies.
It can also be enjoyed with banana slices and chocolate hazelnut butter.

You can go sweet, savoury, or simple with this bread–say if you’re just in a toast and butter mood. I also think it’s neat that they thought of incorporating flax into the bread, a good way to get in some Omega-3′s!

In other news, I went to the Hispanic Gala that my friend helped organize.

I glamorously biked to the event in this gown… just this gown. It was quite a liberating and exhilarating experience, and that’s not counting actually being at the gala! I met a lot of wonderful people from all over the world, and I was so proud of my friend for playing such a vital role in making it all happen.

Another blue moon came around and I went to the hot bar at Whole Foods.

I love that hot bars let you get a little bit of this and a little bit of that. Now if only everything were as light as lettuce then I think blue moons would come around more often.

I finally got my hands on purples potatoes!

I’ve had a very peculiar ingredient sitting in my kitchen forever, but I hadn’t used it until recently. One day I decided to look up recipes that called for pomegranate molasses. That’s when I came across this recipe on one of my favorite sites for cooking: lentil hummus wrap with pomegranate molasses. I also made the red lentil hummus that went along with the recipe, and loved the idea! I have been cooking a lot with red lentils lately, but it was a nice change to what I usually make out of them.

This was a vegan version of one of my step-dad’s all time favorite candy bars: Almond Joy.

I don’t think he’s had one in awhile, so I thought it’d be interesting for him to try a vegan version. We both thought these were delicious, and had just the right amount of coconut with a bite int0 a crunchy almond to top it all off.

Speaking of coconut…

Remember I mentioned the new Super skincare line in my last post? Well, I’ve been trying out their products and seeing how they make me and my skin feel. First up. Lush Lips. Can you believe they got their inspiration for soft skin from coconut oil? Finally, a skincare line that catches on to that! This lip moisturizer has a subtle coconut smell, and doesn’t leave your lips feeling sticky. Last thing I want is to be eating my own hair because it gets stuck on my lips.

The Face + Eye Cleanser

In my last post Allison asked me what I thought about the cleanser, so I thought I’d share my thoughts. Since the product uses the famous superfood, açaí, it has a bit of a sweet smell, and it feels soft and milky on your skin as your washing it. The cleanser was gentle enough to use on the eyes to remove any makeup. Actually, the smell and texture made me want to indulge in the whole experience of washing my face. Yes, it actually felt like an experience! So how did my skin feel afterwards? It felt hydrated, fresh, and soft. A wonderful feeling to have at the beginning of the day and at the end don’t you think?

And the weekend will be spent celebrating this little lady’s birthday!

She’s been one of my best friends since the days of… peculiar fashion whims. Who am I kidding? We still have those! The point is that she’s a true blue friend, and I’m so happy to be able to be right there with as she adds one more year to her repertoire as Soul Sista!

So It May or May Not Seem

It was so interesting to read all of your takes on energy, and letting yourselves free! I’d love to hear about things maybe some of you have noticed when you opened that bottle. Kelsey brought up something else I’d like to share with you all, “March is a wonderful month to really incorporate the practice of using our own energy to positively impact our lives and the lives of those we come in contact with…since after all, March is a month of birth and change and growth!” Spring is just around the corner so we can come out, come out wherever you are!

Tacos again!

I made Happy Herbivore’s Chickpea tacos topped with Trader Joe’s tomato-less salsa, romaine, cilantro, and scallions. I never thought of having chickpeas and tacos together. Crunch, crunch, munch!

I finally got around to making the falafel burgers that LB has featured several times. To go with the falafels I made  tzatziki. This tasted like a falafel pita sandwich that you’d get at one of those lunch-carts that always have cheap and tasty food. Sometimes better than anything you’d get at a sit-down restaurant.

These practically dissolved in mouth, and reminded me of those yummy Digestive biscuits.

The blue moon must’ve been out because I made the rounds at Whole Food’s hot bar.

I got a tiny bit of the things that interested me. Paying by weight adds up easily! My two favorite things were the a sweet potato dish (can’t remember what it was called) and the beet and goat cheese salad. I roasted some Gardein chipotle lime crispy fingers. They generously sent me some vouchers to try out their new products. These were similar to their seven grain crispy tenders, but had a spicy and tangy flavor. In case you’re interested here’s a $1.00 off coupon you can print off.

I also tried their mandarin orange crispy chick’n.

I served it over Chinese egg noodles and a side of cabbage crunch salad. I looked up the recipe for the salad after seeing it at the Whole Foods hot bar, and reading that I had all of the ingredients at home I decided to make it myself.

The sauce had a yummy flavor, and you could probably fool someone into thinking this was chicken.

Or maybe that’s because I haven’t had chicken in almost a decade. I usually don’t buy faux-meat products, but I like Gardein’s concept behind what they make. However, I did feel uneasy eating the mandarin orange chick’n because it had the texture and tasted a lot like, well, chicken. That could be a good thing depending on who’s eating it. I guess that’s the point of faux-meat products though, right? I remember once I tried a faux-chicken product, and I had to read the ingredients list over and over again because it was so similar to chicken.

Something else I thought had fooled me.

I got an orange, but when I saw pink…

I thought “Oh no! It’s a grapefruit.”

Grapefruits have never been up my alley. Then I found out that this was indeed an orange. A pink navel orange! Silly me.

Speaking of fashion, the other day I wore a shirt made out of two dish towels sewn together.
I also went to the shoe repair man to pick up my boots!

I fell in love with this place the first time I stepped in. Transporting me back to another time, I couldn’t help but snap a photo. This shoe repair store has been around for 100 years, so I’m not surprised! The man always greets me with the happiest smile and sweetest charm, which is hard to come by these days.

Awhile ago I was contacted by Kookie Karma to try some of their raw and holistic products. When I looked at what they had to offer I became very excited and couldn’t wait to try them!

Like the idea behind the company: sweet and simple, the way life should be.

I love how you can tell these cookies are handmade.

Inspires me to go and make some of my own! They strive to guarantee freshness and the best in their cookies so they actually make everything fresh each week. I don’t know why but something about using simple ingredients from this good earth always leaves me feeling happy. The feeling of being resourceful and partaking in the natural way of life makes me feel connected to my ancestors and everything around me. I get that especially with gardening. Do you guys get that feeling too?

Raw Cherry Cashew : The cashew flavor was prominent taste in this cookie, and the dried cherries added a nice burst of flavor and varied the texture as well. There was a certain satisfaction that I got from eating this cookie as well because of its denseness and chewiness. Not to mention, even with baked cookies ones with a chewy texture are always my favorite.

Raw Lemon Fig : I wasn’t a big fan of this flavor. It didn’t taste much like anything, but it still had that rich texture these cookies have. It mostly tasted like cashews, which isn’t odd since that is the first ingredient. But with the words lemon and fig I was expecting something tart and more reminiscent of these two foods.

Holistic Chocolate Chip : The holistic cookies are not raw, instead they are made using their very own “Holistic Dry Mix” (Almond Meal, Xylitol, Coconut*, Brown Rice*, Psyllium, Rice Protein, Sea Salt). The chocolate chips are non dairy, no soy, and no sugar. This tasted like a chocolate chip cookie, but with a hint of coconut. You all know how much I love coconut, so this just made it even better! I need a whole box of these cookies!

Holistic Choco Lot : I’d like a whole box of these as well! This was the first cookie I tried, and oh my gosh! Boy was it rich, decadent, and full of chocolate love. Imagine the richest brownie you could possibly have… that was this cookie.

Wonderfully chewy and dense

I love how Kookie Karma has taken cookie recipes and redefined what they could be made out of. I imagine lots of experiments going on in their kitchen, and coming up with something new and delicious! All of these cookies are vegan, gluten-free, and high in protein. So if any of those things interest you, or the fact that you may love cookies is enough, then I suggest you check them out. They even have sampler packs you can purchase here. I’d also like to point out that they are truly gluten-free, since no gluten gets processed in their kitchen. Looking at all of the other flavors of their kookies, and other products like granolas and krackers I’d certainly pick them up if I saw them at the store. Not to mention I’m a sucker for packaging and these would catch my eye in an instant. I would definitely get the Holistic Chocolate Chip and Choco Lot kookies to have again. They tasted so good I can’t imagine only eating them once in my life.

What a Breath of Fresh Air

Hello everyone! Let me tell you… last week was anything but ordinary! My mom came to visit me for a whole week, and my step-dad was in town on business as well. I know I’ve mentioned my stresses about being financially dependent on my parents on my blog before. Recently, I’ve been having to make conscious effort to stay away from bleak utilitarian ways. Whenever I’m around my mom I’m reminded that it’s nice to treat ourselves just because, so her visit couldn’t come at a better time.

I made Aggie’s Last Minute Sesame Noodles for me and my parents to enjoy during the week. I loved the sesame oil in this dish! It felt special when I packed this for me and my mom in my little lunchbox, since she went to my classes with me while she visited. I also packed some for my step-dad to take with him to work. He was also in town on business that week. It’s quite a rarity that my parents are in Richmond at the same time, so I wanted to treat them as much as I could!

Since my mom was in town, she whisked me away to Trader Joe's.

I usually make my own hummus, but since my mom was in town I wanted her to try the Triple Layer Hummus. There are no Trader Joe’s stores in Florida so this was a little special something something.

And she brought something special up from Florida... papaya from our tree!

Simple, delicious, and convenient "mush"

This is Joy’s recipe for gluten-free chickpea and apple slaw. I accidentally processed it in the food processor for too long, but it still tasted delicious! Tangy and sweet, like what the recipe says, with dried cranberries and a Granny smith apple in the mix.

Oh my goodness this is the kind of bread that is so good that you could finish the whole loaf without putting anything on it.

 

My version of a bento box--Rotkohl (German recipe for red cabbage), leftover red lentil burger tipped with vegan mayo, avocado slices, and coconut milk basmati.

Random, yes. Delicious, yes. YES!

While my mom visited she also made her classic recipe and one of my favorite desserts: tiramisu.

We went out to dinner at one of my favorite hang out spots, Balliceaux.

It has the neatest decor.

To start off we ordered tandoori fried cauliflower with a chickpea salad and pickled cucumbers.

I want to learn how to make cauliflower taste this good! The chickpea salad and cucumbers added a refreshing touch to the crispy battered cauliflower.

 

I also ordered a cup of roasted pumpkin-mushroom and barley soup.

This tasted so much like a soup my grandma use to make when I was little!

I couldn't put my finger on which recipe I'll have to ask my grandma for.

Aromatic steamed salmon with black bean paste, scallion-celery stir fry with house made bacon, and fragrant jasmine rice for the sir.

I’ve never heard of cooking celery. Curious, eh?

 

Southern fried Twin Oaks tofu with red beans and collard greens for the queen.

Twin Oaks makes the best tofu EVER! And the way that they prepared it here was reminiscent of a typical southern dish with fried fish. I thought it was adorable that my mom, queen of salmon, decided to get this vegetarian dish. I may have done some influencing though because I also wanted to try this, but I had something else in mind for myself…

A hearts of romaine salad with a creamy hazelnut dressins and crunchy ZUCCHINI BREAD CROUTONS!

As soon as I saw the words “zucchini bread croutons” I knew that would be my choice. Oh my goodness. If salads could be desserts this would be it. I kept gushing about how wonderful of an idea it was to do this! It was so delicious that I sat there thinking of all of the wonderful breads I could make into croutons. The waitress exclaimed, “you can make them out of any bread!” And right she is. Next time you have a sweet bread in your home, I advise you make them into croutons. Actually, I urge you!

After dinner we met up with some wonderful people.

My mom got a taste of Ipanema's homemade soy ice cream and their vegan apricot almond blondie.

We had a feeling that the dessert made us extra hyper.

The past week was a memorable one indeed. It was so much fun having my mom go to my classes, and she got to see what her daughter does in art school. I’m sure a lot of parents would like to have that experience. She got a better understanding of what my life is like for most of the year. Looking back on her visit I see that she’s become a more flexible person, or maybe she just really likes being around me? I think it’s both!

Feels Like Summertime in New York: Finale

Thank you all for your tips on flirting, although it seems a lot of us are in the same boat. One thing I though about is how using our eyes and radiant smiles can do a lot more than we maybe realize.

So here it is ladies and gentlemen… the last recap of my trip to New York.

We also spotted these creepy statues on top of some buildings.
They look like they might come to life one day and take over the city!
There goes my imagination.
Then we went to the Whole Foods in Union Square
And of course I had packed a PB & J!

My other friend met up with us and then we headed over to check out the Whitney Biennial.

It was pay-as-you-wish night at the Whitney
I don’t think a lot of the stuff there was really my taste, but there was a really riveting piece by Kerry Tribe

He lived anonymously in this condition for more than half a century until his death on December 2, 2008, in a Connecticut nursing home. His case is widely credited with revolutionizing our understanding of the organization of human memory.”

Next morning started out by taking Albus to the dog park.

Afterwards we went on another bike adventure around Brooklyn. My friend ended up trading her bike for a really awesome road bike–no more matching bikes though. All of a sudden the urge to go shopping hit us so we did what any normal person would do; head on over to where the clothes and shoes shops are!

We also stopped by a little well-known donut shop.

Tina Fey likes this place A LOT. These are her words, ”The best doughnut? That’s Peter Pan doughnuts in Brooklyn. It’s a Polish bakery. We shot nearby once for 30 Rock. It’s a white-cream-filled powdered doughnut. And I really believe, when I first tried it, if I had a penis, I would put it in this doughnut. I finally understand what you guys are thinking about and what motivates you guys.”

So this marks my last day in New York.

We walked over to Bedford and sat around at Ella Cafe for a bit.

This was before we ended up getting kind of lost and ended up just aimlessly wandering around.

It was so nice to not really have a plan, and just get lost without freaking out. Eventually we found our way back to some place familiar. But by then I had to quickly pick up my suitcases and take the train to the airport. I did start to freak out as some unexpected changes were made to the route since I was traveling on a Sunday. Luckily, I made it and with some time to spare! I was relieved once I was seated in the airplane with some A/C. I also snagged some cookies and plantain chips on the plane–score. Only a couple of hours till I would be reunited with my family. I couldn’t wait!

The reunion included Matilda, of course!

I can’t explain how good it felt to sleep in my own bed. I loved my week at the beach and my week in New York, but the charm of living out of a suitcase can only last so long. Not to mention, there are only a few things in life that are better than the love from your family along with home-cooked meals, and sun.

Giving Nature Credit

Hello everyone! So I survived the semester and I’m currently at the beach for the week with my ladies. First night was so much fun. I lost my Chat Roulette virginity. Let’s just say that we did our fair share if screaming in shock! I also may not be posting regularly since I’m at the beach and the day I get back is the day I fly to New York!

Anywho, there are a few beliefs I have and one of them is that I don’t think it should cost an arm and a leg to eat well. Especially when essentially most of the things I eat come straight from nature. I’d like to say that I eat well. When I say well I mean that I don’t sacrifice good taste just because something has nutritional value. Shots of wheat grass? No thank you. Maybe I’m a food snob, but I don’t care because I eat what I like and try new things as well. Sometimes I give things a second chance like my beloved brussels sprouts. And there are some things that I loved in my childhood that never get old. As a college student and a lover of food I’ve learned how to cook deliciously on a budget. I’ve learned that hummus is a cinch to make and usually ends up tasting better than what I get at the store–aside from Sabra’s miraculously creamy hummus. Some secrets are just too good to give out I guess. Oh well, I have a few of my own too!

I made my own creamy tomato sauce recipe!

And I am definitely sharing this one! Although I must warn you that the measurements aren’t precise because as usual when I cook, I just put in things by my taste. Mine turned out more like an arrabiata (spicy sauce) since I was generous with the black pepper. Oh! And it’s also vegan. Since I didn’t have any creamer on hand I opted to make a vegan alternative I’ve done many a time and have loved each time: cashew cream.

Vegan Creamy Tomato Sauce

Ingredients

Canola oil for cooking

3/4 cup onion, finely diced

1 bay leaf

1/8 teaspoon dried red pepper flakes

Sea salt

2 large cloves garlic, minced or pressed through a garlic press

1 grated carrot stick

1 8 oz can tomato sauce

Sliced sun-dried tomatoes

A little less than 1/4 cup balsamic vinegar

1 28 oz can diced tomatoes with juice

1/3 cup cashew cream

Fresh ground black pepper

Dried sweet basil and tarragon

1. Heat pan first then canola oil in medium saucepan over medium heat. Add onion, bay leaf, pepper flakes, and salt and cook, uncovered, stirring often, until onion is soft and beginning to turn golden.

2. Add garlic and cook until aromatic, about 1 minute. Increase heat to medium-high, add tomato sauce, grated carrot, dried basil, tarragon, and sun-dried tomatoes and cook, stirring constantly, until slightly darkened, about 2 to 3 minutes.

3. Add balsamic vinegar and cook, stirring often for about 2 minutes. Add can of crushed tomatoes and bring to the boil.

4. Reduce heat to low and simmer, partially covered, stirring often, until sauce reduces and is thickened, about 25 to 30 minutes.

5. When sauce has thickened, remove and discard bay leaf. Stir in the cashew cream, and cook until warmed through, about 1 minute. Adjust seasoning with salt and pepper to taste.

Voila!

I served the sauce with sautéed garlic, yellow squash, onion, mushrooms, and cannellini beans over penne pasta.

Honey Cranberry-Almond Granola

Ingredients

1 1/2 cups oatmeal

1/4 cup chopped almonds

1/3 cup honey

1 1/2 tbl canola oil

1 tbl almond extract

1/2 cup dried cranberries

Shredded coconut

White chocolate chips

1. Preheat the oven to 300 degrees.

2. In a large bowl, mix together all the ingredients except the dried cranberries, shredded coconut, and white chocolate chips.

3. Spread out the granola on a nonstick baking sheet.

4. Bake the granola for about 30 minutes, stirring every 8 minutes or so. Halfway through sprinkle on the shredded coconut when stirring. Remove from oven, allow to cool.

5. Once cool mix in the dried cranberries and white chocolate chips

It’s so easy! I love coming up with combinations, and they’re perfect as yummy gifts. Just think of the flavors a loved one enjoys and make their very own mix. You can put it in a mason jar with a delightful tag, and I’m sure the lucky recipient will name their first-born after you.

Almonds, dried cranberries, and white chocolate chips is one of my favorite combinations.

Homemade hummus too?!

Sun-dried Tomato Hummus

Ingredients

4 garlic cloves, minced and then mashed

2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed

1/4 cup avocado oil

Sun-dried tomatoes

1/3 cup freshly squeezed lemon juice

1/2 cup water

1/2 teaspoon of salt

1. In a food processor, combine the mashed garlic, garbanzo beans, sun-dried tomatoes, lemon juice, 1/2 cup water. Process until smooth.

2. Slowly add in the avocado oil. Add salt, starting at a half a teaspoon, to taste.

Serve with anything your heart desires.

Gosh it feels good to share my own recipes with you all again! During the semester it’s hard for me to actually sit down and think about that. Even though I’m an only child, I love to share. So being able to share these recipes is awesome–from my kitchen to yours!

The Savory and the Sweet

Thank you all for your two cents on my last post. So many of your inputs were so helpful and encouraging. Really, I think my confidence levels have gone up a lot since I started this blog. I just get a really awesome sense of community and genuine care in the blog-o-sphere. There are a lot of times where I imagine a giant meet-up would ensue and the world wouldn’t even know what hit it. Wabam! Anyway, I have to catch you all up on something that’s totally slipped my mind–chocolate! How did chocolate slip my mind? Maybe because it’s in my belly.

Oh yes, this indeed satisfied my sweet tooth. You could taste the various spices in this creamy chocolate bar. I actually let this melt in my mouth and just let the flavors unravel.

The much anticipated Bread & Chocolate dark chocolate!

I was so eager to try this one out since it sounded so interesting and very different from the other flavors. However, I think I built my expectations up a little too high. This wasn’t bad tasting, just sort of a letdown. It was a bit too acidic for my taste but I did appreciate the texture of the bread in the chocolate. Out of all the Theo 3400 Phinney flavors I tried the Hazelnut Crunch milk chocolate was by far my favorite. The saltiness from the toffee, crunchiness from the nuts, and the sweetness from everything else all embedded in a delicious milky chocolate, just spells out amazing!

Now the last of the Newman's Own chocolates!

I finally can say that I have tried everything that the more than generous folks over at Newman’s Own sent me awhile ago. Yes indeed. Let’s start out with the Espresso dark chocolate. Honestly, this bar was not for me. It didn’t really melt in my mouth and I was expecting there to be more of an espresso taste. The flavor did hit me… eventually, it was more like the aftertaste. Now on to the Mocha milk chocolate… that one was so yummy! It really did taste like a mocha but in chocolate bar form, which means it melts in your mouth! Yum! I think my favorite ones from the chocolates are the Mocha milk chocolate and the Orange dark chocolate.

The other day I used up the last of the bag of Udi's Au Naturel granola.

I had it with yogurt, diced apple, and cinnamon sprinkled on top. On the side I had one of my favorite combos: apple + peanut butter!

A Golden Smacker

This Betty Lou’s snack is appropriately named–the taste was golden! What is a Golden Smacker exactly? It’s a patty with peanut butter covered in dark chocolate. Now where can you go wrong with that? I absolutely loved the texture of the filling and I even spotted some raisins as well. This was so delicious and satisfying to munch on. I really savored this because it was just too good to just gobble up–even though that would be easy too! More please! Betty Lou’s also has a milk chocolate flavor if that’s more your taste.

I love lentils!

I cooked these lentils using my mom’s secret recipe and adding some twists of my own–bay leaves, coconut oil, sauteed onions and garlic. However, the rest will remain a secret mwahaha! Anyway, I cooked some rice with cinnamon sticks and cardamom pods to go along with the lentils. This hit the spot! Out of all the lentils, red is my favorite by far. And  I had plenty of leftovers; perfect for a busy week. To go along with the rice and lentil combo, I steamed a buttload of kale and had some dates + ginger + cashew butter.

I bought this jar of sweet mango pickle on sale for 99 cents awhile ago, but have yet to find something to serve it with.

With the lentils? Nay. Any ideas?

Dinner on-the-go I tried something else from Amy's kitchen!

I think it’s safe to say that whoever was around me in this class was jealous because it smelled really good, and it tasted even better! Not to mention, burritos are so convenient and not messy… unless you order a mondo one at Chipotle! Luckily, in this class I do not get in trouble for eating. Sidenote: later on in this post you’ll see my solution to packing something for the class I got in trouble in.

After running some errands with my dad (yay he's in town), I came home hungry but I didn't know what to have.

Then it occured to me that there is no wrong time to have a sweet potato. Plus, I just replenished my supply and this was the last one in the old bag. I just microwaved it and topped it with coconut butter, cinnamon, and I smeared a bit of Sunland’s banana peanut butter to be a taste-tester. Do any of you do this? Some times I’ll have something with half of it topped with one preserve and the other half with another flavor–this usually happens when I can’t decide or I’m just feeling curious. Oh, and for the record, the banana peanut butter with the sweet potato was awesome!

Inspired by chocolate-covered strawberries!

I know one chica that would love the sound of this! I cooked my oats in the rest of my almond milk and coconut oil. Then I topped this creamy bowl of goodness with April’s protein brownie batter recipe and threw in some beautiful strawberries. This all mixed together was so good. The other night I also tried a different variation of the protein batter recipe by using vanilla protein powder + cashew butter. I don’t think you can make a bad decision when it comes to this recipe. It’s so simple yet so delicious!

Leftovers + Whole Foods hot bar goodies!

When I was running errands with my dad the night before I spotted a dish that I’ve only seen and tried once at Whole Foods. I loved it when I tried it and I always checked to see if they had it. But that night, they finally did! It’s a spicy eggplant and tomato dish + I wanted to try the tofu korma. My dad brought up a lot of avocados from Florida = an avocado a day for me yay! I love avocados but they’re so expensive up here that I don’t buy them often unless I see them on sale. However, in Florida they are incredibly cheap–we’re talking 30 cents each at some places!

The tofu korma was the bomb diggity! It had me craving basmati rice and naan + some other delicious Indian food!

Savory snack time!

I topped a Seedlander Dr. Kracker cracker with cottage cheese, kale, avocado, s & p. This was simple, fresh, and I recommend it! I picked up some cottage cheese at the store the other day, and I’m glad I did. I’ve forgotten how practical and tasty it can be. By the way, if you haven’t tried Dr. Kracker’s crackers then you are missing out! These are so flavorful even on their own. They are a bit pricey, but I found them on sale at TJ Maxx so I figured “what the hey!”

Obviously, I did not follow that rule. It did, however, inspire some sneakiness and turned into “Operation This Isn’t a Meal It’s a ‘Snack’”. I also forgot to mention that while running errands with my dad, Whole Foods had a 33.5 oz tub of Greek yogurt that was promptly put in my basket! So yes, as of late I have been relishing in that tub of Greek goodness. I also bought a set of tupperware with a twist on lid to ensure no spills! When it’s on, this girl knows just what to do! So I filled the container with Greek yogurt, diced apple, and cinnamon. Then I brought this amazing bar to crumble into, what would evolve into a delicious yog-mess. I wish I could’ve snapped a picture of this bar! You could see the ingredients, and I even spied some dried apples! I was actually worried upon opening the wrapper that the aroma would waft on over to my professor and that he would catch me red-handed. Mouth full I would say, “I don’t know what you’re talking about.” Anyway, back to the bar. This is a very different product from all the Betty Lou’s reviews I’ve done so far. I think the packaging itself goes along with the fun and light-hearted attitude the company seems to have. And the flavor? It has everything a chewy granola bar should have! Oats, maple, cinnamon, fruits, nuts, and seeds! Now I know why it’s called a Harmony Bar! FYI: “Operation This Isn’t a Meal It’s a ‘Snack’” was a success!

Okay, so I fear this post has a lot of words and pictures and I don’t want to overwhelm anybody. Although I do have so much more to share! But no worries, there’s always a next post. Also, I have really taken your advice on making a to-do list to heart. It has made managing my time so much easier and tasks just seem less daunting. It also helps that I’m checking some things off steadily. Many weights being lifted off my shoulders = easier to breathe. That reminds me! We are over that mid-week hill and now we’re just rolling down to Friday! Actually before I end this post I’m going to sneak in one more picture because I can’t contain my excitement.

I brought my camera this time and I still almost forgot to take a picture. I cannot express how excited I am for this! It’s on Saturday–so close!!! We got our choreography down, did a lot of run throughs, scheduled our hair and makeup appointments, and overall just had fun.

Letting Things Happen and Trying New Things

I was inspired by this recipe. I caramelized the apples and walnuts, baked the brie and sesame Italian bread. For the kale I just steamed it till the green turned vibrant.

Greek yogurt + pumpkin + raisins + maple syrup + cranberry & walnut granola

I let the raisins soak in the Greek yogurt overnight–I actually forgot about doing that because when I saw it in the morning I thought my yogurt started to grow mold. You can imagine I was like, “how does this happen overnight?!” Then the “a-ha” moment was had and I remembered, “oh that’s right those are raisins.” So I happily enjoyed this for breakfast without worry of possibly contracting some sort of illness. Anyhow, I love the crunch of the granola and nuts mixed with creamy yogurt and chewy dried fruit. It’s a nice balance of textures.

I knew that can of vegetarian chili from Health Valley would come in handy some time in my semester! I added some of my own touches to it by melting in some dark chocolate and maple syrup. Then I threw in some peas and bulgur wheat and garnished it with cilantro and voila! On the side I steamed some kale and tossed it in olive oil and sprinkled on some salt and chopped almonds. Such an easy meal and tasty as well!

On the go snacking...

Lately, when I’m in the comfort of my own home I’ve been snacking on a mixture of granola, soymilk, and peanut butter put it in the microwave. If you like to eat delicious things then I highly recommend this! However, sometimes I’m not at home when snack attack hits me. This is when I rely on dense and full of flavor bars like Boomi Bars. I luckily still have some from when I was sent a box to review. I know I’ve raved about them before, but I really have to do it again. Personally, I think bars with less ingredients taste way better because the flavor doesn’t get lost among the list of unnecessary ingredients. Not to mention, these are more satisfying and filling–just what I need!

While I was on the go I stocked up on some goods...

I got some new things to try!

I got the Gardein “buffalo wings” with the freebie coupon they sent me, so I will let you guys know how the taste testing goes. I’ve never had buffalo wings before so we’ll see what I think! I also finally found two items I’ve been on the lookout for. I’m pretty sure I will love the Sunshine Burger breakfast flavor because which flavor have I not loved so far? Seriously my favorite store-bought veggie burger. Lastly, luck was on my side when I spotted the new caramel Oikos flavor that some bloggers out there have also stumbled upon. I can’t wait to try this out!!

I also made a Trader Joe's stop as well--Whole Foods and Trader Joe's are basically next to each other so it works out beautifully.

I finally got some of their frozen yogurt to see what the dealio is. Well now I know and I must say that I really enjoy the tartness. Let’s see… I spy various fruits and veggies (some frozen) and some handmade flour tortillas. I also got manchego cheese–I have a recipe in mind for this.

Soon after I got home I set out to make some falafels.

I loosely followed this recipe.

I decided to bake them instead since I'm always afraid of burning myself when frying.

Then I made a random dinner.

I sauteed some mushrooms, red onions, and garlic and reduced it all in balsamic vinegar. Then I assembled the handmade tortilla like so: melted mozzarella, pesto, smoky chipotle and sun-dried red pepper hummus, sauteed veggies, and cilantro. I must say, this was quite the wrap. Randomly delicious.

Knowing it All too Well

I have some exciting things that I can’t wait to share with you all. Although this semester I’ve already experienced one of those weeks where it feels like it’s too much effort to even breathe, I’m doing and learning about things I enjoy. Not to mention, I’ve also been doing some things on the side and really immersing myself with new things and giving things a chance. I don’t think I can say it better than the lovely Neela herself, “sometimes in life you don’t know where things are going–right now it feels even better to NOT know where it’s going!” In a way that’s how I feel right now. I’m doing things to experience them mainly without expecting anything back, but I’m okay with that. Going out there and doing new things in itself, brings me fulfillment.

The Way to Someone’s Heart is Through Their Stomach

I saw some old friends that I had wondered what the heck happened to them. I was so glad to see them and just hang out. There were lots of beats made- it’s crazy what you can do with technology these days. And there were a couple of freestylers and anyone else who felt like taking the mic.

Remember how I told you guys about my date being moved to Monday? Well in the short span of a weekend, I almost completely forgot that I’m going on a date… TODAY! I’ll definitely report back. I’m still excited, but things between an old crush of mine have been rekindling. Is it it just me but when one person shows interest in you, then a whole line of them all of a sudden show up? Well, this is definitely happening. My friend who had the birthday on Friday also randomly texted me the next day saying that we should get breakfast some time. This is while I was hanging out with my “old” crush. Oi vey!

This was the last Chobani flavor I had left to try out. Honestly, I didn’t think it was really that good in terms of it tasting like honey. The texture was on point as usual, but where’s the honey??? I had gotten use to seeing chunks of fruits, that I expected there to be swirls of honey in here. Here’s what I ended up mixing it with…

I surprisingly liked another Bran VitaTop. It’s also a very versatile VitaTop because you don’t have to worry about any interfering flavors. It’s almost like a blank canvas, except it tastes good… so it’s not really blank!

Well my “old” crush ended up staying over and I made him a delicious bowl of oatmeal. I can’t even remember what I made for him, but he really liked it. He couldn’t finish it though! I think it’s hilarious that I can eat more for breakfast than he can. Actually, that’s how it is in most cases when I’m with friends, and there I am with a clean plate! My mom is also known for having a good appetite hehe. Guess it runs in the family! Anyway, so the “old” crush asked if I wanted to go to Trader Joe’s with him. YES! While I got ready he offered to take Matilda out for a walk. How sweet! He loves Matilda, but really… who doesn’t? We were heading over to Trader Joe’s, then I asked him about that store World Market. I’d always seen it but I never knew what their deal was. I’ve heard they sell furniture but then I also heard my friend say that she bought a crate of mangoes there once. As you can see, I was very confused. He asked me if I wanted to go, “yes,” then he managed to switch over 3 lanes to the right and pull into the parking lot! Whoa! I went to the imported food section and I bought something you will see later in this post. Trust me, you will appreciate it! Next stop was Trader Joe’s and I got some more new things to try out. Since Whole Foods is pretty much Trader Joe’s next door neighbor we went there as well.

So far the day was awesome! Our last stop was an Indian grocery store. He had never been. If you’re a friend of mine there is some point in time of our friendship that I will take you over to some specialty market.

After we got some more new things to spoil our tastebuds (aside from the incense *their prices are always way lower than anywhere else), we headed over to the new Indian pastry shop next door.

He asked me if he could buy me a veggie samosa. How cute! And did he even need to ask? Of course I’d be okay with that!

GINGER SYRUP! I had no idea that the folks at Ginger People also made a syrup. Where have I been? This is what I got at World Market. Oh my goodness! When I saw this I knew I had to have it no questions asked. I also got Tofurky’s Italian Sausage – a freebie thanks to the kind folks at Turtle Island Foods. The jar of Tamarind-Date Chutney isn’t new, just restocking an old favorite. But those are the famous peanut butter filled pretzels I’ve seen on a countless number of blogs! They were very yummy – and I dipped them in even more peanut butter; Jenny you’d be proud! I also got some other sauces to try at the Indian store, but I’ll leave those for another day.

After some hours apart (haha) my “old” crush came over to watch The Lost Boys. Yes, that old 80′s vampire flick! Anyway, because my apartment is too cozy to ever leave, he slept over again. This time I was able to snap a picture of what I made him for breakfast.

He commented on how beautiful it was! I’ve been joking around that I will seduce him through the powerful ways of Majesty Oatmeal. I just sliced an apple, threw in some almonds and poured on a bit of the Maple & Apple syrup. However, I used a new grain that I got to try out that morning too. Have you ever had Cream of Wheat? Well this was a brown rice version. Erewhon sent me a box of Brown Rice Cream; made from organic brown rice. How could I forget?! I also sprinkled a generous amount of pumpkin pie spice I picked up at Trader Joe’s.

I really enjoyed how creamy this was. I’ve never blended oats, but I’d imagine this is what they’d be like. Another wonderful and versatile breakfast grain!

Another Part of Me

Hello everyone! This is an exciting post for me because I get to introduce you all to a part of my life that is very important to me. As I’ve mentioned in my ‘About Me‘ page, art drives and shapes every aspect of my life. Which is why my plates look the way they do! I can’t help but consider color, placement, things like that. Obsessive? Not to me. I just enjoy making things that are aesthetically pleasing. Anyway, today was my sculpture class’s first critique of the semester. Unfortunately, we ran out of time before we could get to a couple of our pieces – including mine. So, I’ll report back to you all once that’s done.

Critique days are my crazy days. It becomes my one and only real priority, so that means no cooking for me!

The folks at ProBar gave me a nice little package not too long ago. What better time to bust out my first bar on a day where everything is just too cray-cray.

“Apple Cinnamon Crunch is a flavor reminiscent of Mom’s homemade apple pie with just the right combination of sweet apples, nuts, and a dash of cinnamon. This bar is so good it might compliment your next Thanksgiving dinner.”

I was a bit weary of this because I feel dessert-y bars are hard to pull off. So how was my first bite into this dense bar? Delicious! I believe their choices of nuts, dried fruits, and the most wonderful surprise – carob chips – were perfectly combined. This was even better with a pack of soymilk and a couple of peaches. I wish I took a picture of what the bar actually looked like! It had the texture that I love in bars – you could see every ingredient, like whole almonds and sesame seeds. However, I would call it Apple Cinnamon Chew, as it was very chewy. But maybe they thought “crunch” just sounded better. My overall review? If you are considering trying a ProBar, or aren’t sure which flavor to get – try this one!

I also got to try some other new things today. I went to Trader Joe’s and Whole Foods the other day with my dad, since he’s in town, and picked up some new items.

On Katie‘s blog I read that Clif nectar bars were going to be discontinued. I had never tried these bars, but I feel the need to know what these bars taste like. I also picked up 2 others that I’ve seen floating around blogland. I tried the MoJo sweet-n-salty bar as a snack today. Meh, it wasn’t horrible, but I don’t see myself buying it again. Isn’t there a PB&J flavor though? I do want to know how that one tastes.

I picked up some pine nuts because pesto recipes have been dancing around my head. Dried cranberries because summer is officially over (say it isn’t so!). I’m so excited to try these falafel patties – garlic sauce recipe hunt begins after this post. I highly recommend buying Lindemans Framboise beer in any flavor! I’m thinking… Mrs. Marshall’s Carytown Cafe for the best potato salad (no lie) + Kielbasa? Look at those sprouts! There are garbanzo, alfalfa, red lentil, and another sprout I can’t remember!

I love 365′s crunchy peanut butter. I should also mention that a jar of this is less than $2! I also bought myself a jar of Trader Joe’s Sunflower Seed Butter. After I tried it at my friend’s house I vowed that I would pick up a jar the next time I would venture out to TJ’s. It’s goodness is overwhelming, and my tastebuds are so happy whenever I eat it. This more than makes up for the other day when I accidentally burned my tongue – sorry tastebuds!

While I was at Whole Foods, me and my dad smelled some heavenly aroma wafting through the bulk bins. We knew it was coming from the bakery! After we checked out the hot-bar, we moseyed on over to the breads. My dad got straight to the point and said he smelled something spiced and wondered what it was. Well, they told us they just got done baking a loaf of pumpkin bread. They were testing out the recipe = we are the guinea pigs. They wanted us to let them know if it had too much salt, too much sugar, any input we had. Umm… I felt like a horrible critic because my vocabulary failed me while I chewed, smiled with my eyes, and gave them a thumbs up. I saved a portion of the generous slices they gave us…

Sometimes when he’s talking he closes his eyes, pauses for literally a good minute, gathers his thoughts, and then decides to say something.

Oh and afterwards we learned what the title of that particular piece was; “The Fucking Part of Life” haha!

I heated up a Chocolate Fig VitaTop and served it with some fresh figs, and a cup of almond milk. The almond milk is in that cute chickadee cup in the back. Back to the muffin tops. I didn’t think the flavor was bad, it was mostly very dry though. With each bite, I kept wishing I had ice cream – something to moisten it a bit. I’m on the fence on whether or not I should recommend this products. I have another one, and I’ll give you another review.

What’s that sitting on top? I whirled up a frozen banana, ricotta cheese, vanilla extract, and a bit of stevia. This is much like Gena’s soft-serve, but more volumunious and creamier. It was an incredible way to start the morning with a warm bowl of oats with coconut oil. I suggest crushing some candied walnuts if you really want to take this up a notch.

I followed this recipe, and it came out wonderfully. I love the color and the flavor the sesame oil adds to it as well. The first time I saw this was at Trader Joe’s, and I was thinking about how ridiculously simple this must be to make. It is!

It would probably be really yummy if I added something smokey to the sandwich, or maybe I’ll test the waters like Mitri and spread a nutbutter on – sunflower seed butter anyone?
