Life is What You Make of It

Hi everyone! I hope your week has started off on a good note. I know mine has. Aside from my computer crashing, things have been looking up. After a week of no sun and dreary weather, the weather gods decided to give us the gift of sunshine and warmth. Thank goodness! I think this is just what I needed to reenergize myself for this busy week. Without my computer I will find myself with less distractions. But I’ll do my best to keep you all updated – hence I am sitting in the toasty Fine Arts building’s computer lab. So many computers buzzing!

I’ll start off with my Saturday night. I was going to go to some experimental sound art show, but I wasn’t really in the mood for that. Instead I called up one of my best friends to see what she was up to.

Driving to meet up with them.

Strawberry Street Market's selection of beers. They even had a Honey Basil kind.

We ended up going to our friend's house for a house show.

The band seemed to be cooped up in this one room – I think they should’ve played in the middle. But a friend of mine came out of that room with a bloody nose but the biggest smile on her face!

I tried to capture the crowd surfing that was going on haha

I didn’t want to get back too late because I was planning on going hiking the next day.

So I ended up heading back around 3 in the morning.

Not a bowl of oats!

My tummy wasn’t feeling too well the next day so I wanted to take it easy. I had some leftover okara from when I made soymilk when I got home super late. Yeah, I made soymilk around 3 am… Anyway, I mixed it with pumpkin butter, stevia, and cinnamon. I topped it with a sliced apple, dates, some more pumpkin butter, and the last of the Artisana almond butter.

Matilda, down.

Aw!!! How can anyone resist?

Some things I packed for my hiking trip!

I made myself a PB&J sandwich using Rudi’s Wheat & Oat bread. Oh my gosh this bread is so good by the way. It’s perfect for sandwiches – especially a classic PB&J. I love how thick the slices make it so much more satisfying to bite into. When I was making my sandwich I had trouble deciding which jam to use. I remembered that Boysenberry jam is one of my favorites, but I currently do not have it in stock.

Well guess what? My computer crashed  and I knew that I would have to take care of that before I went on any hiking trip. And the sun was shining so brightly on Sunday I knew I didn’t want to be indoors.

This necklace spoke for my excitement about the weather!

I headed over to my nearest Apple store and I ended up making an appointment for today (Monday). By the time I was done with that, my friends that were going to go with me either a) didn’t want to anymore or b) didn’t answer. But you know what? I still wanted to go hiking so I went. I called up a good friend of mine that is usually up for doing stuff. I didn’t get to go to the Shenandoah Valley like I had planned, but atleast I got to go exploring and get some easy hiking in.

Crossing the bridge to Belle Isle.

The hiking begins!

My shoes along with the wet mud were not a good combination, but it was fun nonetheless. I love adventures!

I think Matilda does too.

I love letting Matilda off the leash so she can sniff around as she pleases. She’s so cute because she never strays too far. When she was walking ahead of us she kept stopping and looking back to make sure we were still there. What would she do if we decided to play hide-n-seek with her?

There's a pond on the isle.

I just thought these pods were beautiful.

The James River is really high right now from all the rain.

Admiring the sky.

I love being out in nature and being amazed by it. Nature is beautiful and it doesn’t have to try.

City skylines can be amazing too.

Dinner

This time I just sautéed the kale with white cooking wine and seasonings. I also had some of my leftover “meatloaf” I made with the okara. Last but not least I made a recipe inspired by Katie’s mashed cauliflower. I pureed mine with salt & pepper, nutritional yeast, and soymilk. Then I served it with some all-natural butter. Yum!

Then it was time for some homework!

This is a part of what I’m working on for my sculpture project.

I'm not much of a painter, but I think it's fun. I haven't done it in years!

Monday mornings

This breakfast was interesting. I wanted to use up the rest of my okara, so I mixed it with a ZenSoy banana pudding cup. By the way, I think the banana pudding flavor is my favorite. I heated that up till it liquified and then dumped on some Aztec Crunch Corn & Amaranth cereal. Excuse my half-eaten apple that I enjoyed with my favorite crunchy peanut butter.

I assembled my sandwich the night before because I knew I would be pressed for time today.

I also sautéed some kale with raisins and toasted pine nuts. I love toasted pine nuts!

Le Sandwich

I used two slices of French Meadow Bakery’s Woman’s Bread. What’s so special about Woman’s Bread? According to the site, “with 14 grams of protein and 2.6 mg of soy isoflavones per serving, Women’s Bread contains key nutrients for women’s health. Sprouted grains bursting with vital nutrients and vitamins are easy to digest. Dried cranberries provide an antioxidant boost.” I enjoyed the dried cranberries very much! Okay so what’s in between the bread? Portobello mushrooms, basil, red onion, cream cheese, fakin’ bacon bits, and tomato paste + honey.

After my readings in apocalyptic Literature class I wanted to go exploring around Belle Isle some more. Apparently I just couldn’t get enough and the weather was gorgeous! It was so much fun not knowing where I was going but taking random trails that would lead me to who knows where! Afterwards I came home and showered and did some pampering.

Tea tree and spearmint mask - ah so refreshing.

And dinner time rolled around.

I didn’t really feel like cooking tonight. Well, I guess I did cook the cauliflower mash with garlic and herb, but that barely counts! So I just baked some Gardein “chicken” tenders in the oven and seasoned with Old Bay blackened seasoning, and ketchup + curry. Curry ketchup is delicious. All you have to do is mix in some curry powder with ketchup – simple! It reminds me of buying pomme frites on the streets in Germany served with with curry ketchup. Please excuse me toasts for being shy. I promise they are delicious once you meet them. Tonight I wanted to try French Meadow Bakery’s Gluten-Free Multigrain bread. That’s a mouthful! Anyway, the bread was seriously delicious! I just spread on some butter on one slice, and butter and fruit spread on the other. I can’t explain really how tasty this bread was. Just biting into it was awesome and I can’t believe it has no wheat. Can you see the all the little flaxseeds? So good! I highly recommend this bread, even if you don’t have a gluten intolerance.

Lastly, the ever so lovely Brooke tagged me to fill out a little survey she made up! Here goes…

1. favorite variety of apple? Gala

2. apples dipped in? Peanut butter… or caramel! How about  both?

3. favorite way to enjoy pumpkin? Pumpkin oatmeal, pumpkin and ginger cookies, and pumpkin penne

4. favorite soup? with crackers or bread? My mom’s spinach soup with fresh crusty bread.

5. do you eat orange foods all year round? Not consciously, but the time of year doesn’t stop me from eating them that’s for sure.

6. most used spice in your autumn cooking: Cinnamon and tarragon

7. you are baking some homemade bread, what flavor combination of bread would you like to make? Oh my gosh! Some sort of spiced bread. How about a spiced bread with almonds and cranberries. However, I recently stumbled upon a garlic pull-apart bread recipe.

8. favorite autumn vegetables and ways to eat it? Winter squashes out the wazoo! Recently, I’ve been digging cauliflower and kale

9. hot chocolate, hot cider, coffee or tea? Hot chocolate made with coconut milk. And I love this one tea called Richmond Blend. It’s a black tea with cinnamon, orange peel, and cloves. It’s out of this world and actually has an intense flavor on it’s own. Not to mention the cinnamon helps keep me warm during the cold months.

10. favorite seasonal dessert? I think it’s a tie between double-layer pumpkin cheesecake and sweet potato pie.

11. lets make a fall stew! pick any 6 ingredients to create your one: Sweet potato, onions, carrots, kale, curry, and white truffle oil

12. pumpkin seeds, sunflower seeds, walnuts or almonds to snack on? Almonds!!!

13. popcorn flavor/seasoning? Cinnamon & sugar or nutritional yeast

14. bowl of hot cereal you have been wanting to try: A banana rum cake inspired one! I actually just came up with this.

15. post a link to a recipe that you recently bookmarked. April’s pumpkin French toast!

Anyway, I just wanted to fill you all in on how my weekend went and how my week started. I’m going to try to keep up with all you lovely people! I hope you all are doing well and keeping your chins up. Remember, as William James once said “…Be not afraid of life. Believe that life is worth living and your belief will help create the fact.”

Food, not the bad four letter F-word

Thank you all for your kind and honest words! It seems I’m not alone, but I didn’t think I was really. There’s a condition called “seasonal depression” – I think this feeling, however, is totally natural. All seasons have a purpose and I think our personalities go with the cycle. We rest, recuperate, and comfort our souls. Then when spring and summer come around we’re bursting at the seams with energy and vibrance!

Anyway, let’s eat, shall we?

Friday night dinner

I didn’t do much cooking for dinner, but it was so good nonetheless. I baked some kale chips and served them with Gardein “chicken” tenders, and Newman’s Own Organic pretzel sticks. To polish it off I had an Original Hermit topped with sunflower seed butter – yum! The Gardein “chicken” tenders were actually quite delicious and I do recommend them. They didn’t taste like those freaky mock meats that make me do a double take on the ingredient list. You can find them at Whole Foods, but I’d also check your local grocer as well just in case.

IMG_0560

This is my sketchbook... or actually where I write down my ideas for projects.

I’m currently working on creating a peaceful environment for myself. Not necessarily something that’s sacred, but somewhere I just feel comfortable. I’ll be setting it up, documenting, and doing things with it in open fields around my area.

IMG_0563

Up close and personal!

IMG_0567

Crispy apples

For breakfast I prepared a bowl of Brown Rice Cream with raisins. After I was done cooking it, I topped it with a chopped apple, pumpkin pie spice, NuNaturals vanilla liquid, Artisana almond butter. It was missing something though. That’s when it hit me! Maple & Apple syrup! Personally, I wasn’t too keen on Artisana’s almond butter.

IMG_0578

I decided to get a little fashionable for my Saturday morning class with a pair of cool tights!

My breakfasts never hold me over for the entire class which goes till 11:40. And I always forget to bring a snack! Today someone did a presentation on Japanese gore films, and I was still ravenous despite seeing all that gross stuff. Oh my gosh I can’t even explain how disgusting the clips the guy showed us were. I can usually handle things like that, but this was too much. Anyway! When I got home I knew just what I wanted to make. I put on a big band record on the turn table, and me and my roommate prepared our lunches side-by-side.

IMG_0580

With all the bread I have now, I knew I'd be making a sandwich.

I cooked some portobello slices, red onion, garlic, and tomato in a balsamic vinegar reduction with black pepper. Then I spread on some goat cheese on one slice and toasted it all in the oven. I used two slices of French Meadow Bakery’s new Our Daily Bread – awesome sandwich bread! Once it was done toasting I snuck in some basil for the finish touch. For the kale I wanted to try something different. I sautéed it in olive oil with raisins, toasted pine nuts, sherry cooking wine, and seasoned it well. Afterwards I grated some parmesan on top. Delicious! Delicious! Yum yum yum.

IMG_0582

So freaking good.

I was actually browsing for awesome sandwich ideas and I stumbled upon this little gem I thought I’d share with all of you: Vegetarian Sandwiches to Take to Work .

IMG_0587

And to finish my meal I savored a piece of chocolate.

I decided to try the Orange Dark Chocolate sample the people at Newman’s Own Organics sent me. This was delightful! I usually have a hard time letting things just melt away in my mouth – like hard candy. But chocolate has never been a problem, especially if it’s a good one!

Today I ran a lot of errands and got some things to start my latest sculpture project. Dinner time rolled around and I whipped out The Accidental Vegetarian once again.

IMG_0588

Gnocchi with wild mushroom and rosemary ragu

IMG_0591

Simon Rimmer be my best friend, please?

This was, too put it lightly, absolutely delectable. I didn’t use regular red wine when making the ragu, since I only had sangria on hand. But it’s safe to say that the sangria did no harm. The hint of citrus might’ve amped the flavors a bit – but in a good way.

So this leads me to today’s truth…

I love food!

Riding Out the Common Cold

G’day to you! I am currently fighting a cold so I’ve just been trying to get my rest and taking it easy.

IMG_0100
Being sick… not cool.

The other day I busted out this wonderful contraption I so often forget I have…

IMG_0067
Behold the soymilk maker!

My mom’s friend never used the machine so she gave it to my mom – I think she knew there was a vegetarian in my mom’s household. I can make other milks with this machine as well. My next endeavor? Almond milk! I tried making oat milk once, but it was very watered down. Once it’s done working it’s magic, an electronic version of ‘Ode to Joy’ echoes around the apartment. The result is very “soybean-y” in flavor. I personally don’t mind it, but some friends of mine do.

IMG_0071
Excuse me, I had just woken up and was still in my robe! But that’s a huge cup!
IMG_0080
Had to wait for it to cool down completely before putting it into the carafe.

IMG_0079
I also get this leftover stuff called okara.

Okara can be used to make tofu and an assortment of other things.

IMG_0065
M’mmm a bowl of chocolaty goodness.

I added in a packet of hot cocoa to my usual oatmeal mix and a drowning glob of cashew butter.

Speaking of chocolate, Katie, our favorite chocolate-covered friend is hosting a Page View Charity Drive. So hop on over to this site, Operation Chocolate-Covered Kindness, to find out more information and how to help out others in need. Afterall it’s the season of giving and reflecting on what we are thankful for.

The other day I was feeling quite lazy and I decided to finally bake the frozen Kashi pizza that’d been sitting in my freezer since I moved into my apartment.

IMG_0068
Sicilian Veggie

It sounded good, but I wasn’t fond of this flavor. I’m always weary of the way frozen pizzas taste and I usually don’t get them because of this. However, I have heard many good things about Amy’s frozen pizza. One thing I do recommend from Kashi’s frozen food selection is the Mayan Harvest Bake. I did have leftovers so I tried to make the best of it by personalizing it.

IMG_0084
Defeats the purpose of it being cheese-less, but it was calling for melted mozzarella, sliced tomato, and some mushrooms.
IMG_0086
This time I crumbled on some goat’s cheese, mushrooms, and threw on kernels of hominy.

In case you’re wondering, that’s the best BBQ sauce on the broccoli.

Here are some things I’ve been enjoying with my batch of homemade soymilk.

IMG_0085
Breakfast was inspired by a pear strudel recipe I stumbled upon.

I used Nature’s Path vanilla almond granola with soymilk, and topped it with a pear, date, and goat cheese crumbles. Then it all went into the microwave, which is why the pear slices look brown.

IMG_0115
I sweetened this steaming cup and sprinkled on some pumpkin pie spice.

IMG_0111
A new bowl!

Another special bowl I found the other day. I mixed in a packet of U.S. Mill’s cinnamon raisin oatmeal with soymilk. Then it was topped with a sliced banana and the last of my sample of Artisana coconut butter. And what’s in the teapot? A few cups worth of replenishing green tea.

IMG_0094
I also prepared a batch of miso soup with dulse flakes, mushrooms, onion, and tofu for a speedier recovery.

IMG_0087

What's this?

Well, I finally got around to opening up the box of Aztec Crunchy Corn & Amaranth cereal that the lovely folks over at U.S. Mills sent to me. I tried it alone first to give you guys an honest opinion. My honest opinion? I would prefer it mixed with another cereal. So that’s exactly what I did.

IMG_0090I mixed the cereal with Nature’s Path hemp plus granola, warm soymilk, and wild blueberries. I think corn and blueberries are very yummy together.

Ahem, I will let you all digest for a bit by sharing bits and pieces of my week so far.

IMG_0091

Last week's critique had to carry over to this week.

IMG_0096

Later followed by going to Richmond's Capitol Square to admire some masterpieces.

A friend of mine asked if I wanted to help him pick out some vegetables. Isn’t that funny? I agreed and we headed over to Trader Joe’s and Whole Foods. I got some new things for me to try out – I’ll be divulging those in another post!

IMG_0109

He says he's not good at baking so he relies on mixes.

IMG_0113

Feeling better already I decided to get ready and go to a coffeeshop.

I also went on a bike ride today with my friend through Hollywood Cemetery. It’s such a beautiful place and overlooks the James River. Legend has it that a vampire is buried there. A strange coincidence happened while I was there…

I was unknowingly lying under this!

I don’t believe there is a cure for the common cold, but I do believe there are things to aid in a speedy recovery. Some things I’ve been doing? Getting fresh air and rest, staying hydrated with water and tea, getting enough vitamin C, and eating miso soup. Anything that’s comforting. Another thing that helps is mind over matter and snuggling with this stuffed animal…

Matilda!

I hope you are all having a wonderful Wednesday. And don’t forget to checkout Averie’s amazing chia seed giveaway!

101 Dalmations!

This is why I believe the number 101 is better than 100! This is reason why I decided to have a giveaway to celebrate this special occassion. Definitely special enough!

Yeah that’s actually my contained version of my excitement! I know I’ve expressed it quite a few times what this blog and all you friends out there mean to me. So what’s my way of celebrating this special occassion? With a snip-it of what it’s like to live in my life for a couple days and a special surprise at the end from yours truly. I’ll be honest, these last couple of days have been rough. But I had a reminder of how much harder things can get when I learned some sad news relating to someone I know. It really helped me push through, and helped me to stay motivated to rise above the stress. Anyway, here’s a little glimpse starting from Saturday night…

IMG_9620

Scarves really help out when coming up with an impromptu costume!

Warm soymilk with Nature's Path Hemp Plus granola and a sliced banana.

Warm soy milk with Nature's Path Hemp Plus granola and sliced banana.

A nice way to start a grey chilly Sunday. I swear Nature’s Path makes some awesome granolas for something that comes out of a cereal box. Usually I find those granolas to really be lacking. The two flavors I’ve tried – Vanilla Almond Flax Plus and Hemp Plus are nothing short of delicious.

I decided to go out and check my mail, since I’m special and I get mail on Sundays. I really just forgot to check the day before, but let’s pretend.

From one of my favorite and most admirable people ever.

From one of my most favorite and admirable people ever!

I had forgotten my driver’s license and cash in her purse from the night we went clubbing in Miami. I got way more than that! One time someone complimented her on her sweater and she asked if they’d like to have it. This girl means what she says. I had mentioned that I liked her keychain cover, and she remembered that.

And Gio is an adorable 1 year-old.

Gio is one year old!

I did some things around the apartment and before I knew it my tummy was growling for lunch!

Spianch

Penne with Artichoke hearts, spinach, parmesan, ricotta, and pine nuts.

I stumbled upon this yummy site full of pasta recipes. I was feeling kind of down and out after some studio time and some “old/new” crush heartache (he decided to go MIA), so I called a good girlfriend of mine to do some retail therapy.

Note: wearing my hair up is a big deal for me.

Matilda welcomes all passengers!

We picked up some coffee and headed to the doggy store. I got Matilda some goodies!

Some pumpkin "pup"cakes, a spooky cookie, and a new harness (finally!)

A couple pumpkin "pup"cake cookies, a spooky cookie, and a new harness (finally!)

Then we headed to Anthropologie! And what did Matilda do the second we got there? Peed, of course! It was weird because she had never done that before.

Some things I tried on...

IMG_9708

Being sneaky taking pictures in the dressing room. I always feel like this is forbidden.

IMG_9711

Super cool shirt!

Here’s a new addition to my necklace collection

IMG_9775

Why hello there!

On the drive home my friend snapped some pictures of us crossing the James River.

Appreciating the fall season.

IMG_9731

Got home and cooked some dinner.

I vaguely followed the recipe for pasta with ricotta, basil, and tomato. On the side are some hot butter and garlic artichokes with grated parmesan. Later I prepared my meals for the next day so I could spend all day in the studio.

Ah, Monday Monday…

IMG_9735I had some European style plain yogurt with Crofter’s raspberry superfruit spread, cranberry cinnamon swirl toast with cream cheese, pumpkin butter, and some slices with Artisana tahini and agave nectar. Oh! And can’t forget the apple I had already started biting into. May I just add that tahini + honey or agave = the bomb.com?

IMG_9737

Then it was off to my morning Taoism class - first day of learning some exercises with sticks.

Then I stopped by my apartment real quick to get a snack and the rest of my goods.

IMG_9626

Graham-wiches!

U.S. Mills sent me these awhile ago and I finally got around to trying them. I got to try the Honey Graham & Vanilla Creme sandwich cookies and the Chocolate Graham & Peanut Butter Creme kind. Both were seriously so good.

IMG_9628

Sandwich cookie powers unite!

IMG_9741

Then it was time for my "Kick Ass in the Studio Day"

Then I took a break to go to my Literature class.

I came prepared!

I came prepared!

I made banana dahl + coconut oil with brown rice and vanilla butternut squash mash with cinnamon and ricotta.

All mixed together.

All mixed together.

IMG_9747

Some of the butt-kicking that went on.

IMG_9748

Energy bar break!

Have you guys ever tried the Prana Bars by Divine Foods? Well, I was lucky enough to be sent some to sample for a review, which I will be posting later. The sneak preview – this flavor was incredibly delicious and I could definitely taste and even see the coconut shreds. The sweetness mainly comes from the date paste and agave I believe.

After having a dance party while setting up my piece in one of the critique rooms, I finally got home around 9 pm and let Matilda out to take care of her business.

So Tuesday rolled around the corner and it was critique day. Dun dun dun.

IMG_9749

Random breakfast

I crushed up Trader Joe’s peanut butter filled pretzels, a fun-size Butterfingers, vanilla yogurt, and Crofter’s raspberry superfruit spread. I had an orange for a vitamin-c boost since I was feeling under-the-weather.

All that stuff on the table and in front of it on the floor fit into someone's Nissan Sentra.

IMG_9756

And my sculpture... it also had a sound piece to it.

I was so scared about this critique… nauseous scared.. I wanted to go against my perfectionist tendencies as an artist, and just experiment and go with the flow. That felt so uncomfortable, so a lot of insecurities rose up. However, much to my surprise, the critique did not make me cry, nor did I actually throw up.

So now here’s the surprise! I decided to have a giveaway in celebration of this blog’s 101st post. The prize?

IMG_9769

Lots of goodies!

A Sunshine Burger baseball cap so you can rep the best veggieburgers in town. A Nature’s Path Optimum Blueberry Flax and Soy bar (yummy icing). All the Prana Bars which are vegan, high-raw, and delicious. There are also some coupons and a vitamin case. Last but not least, I’ll also be sneaking in some other goodies but that’s a secret.

So what do you have to do?

1. Tell me your favorite recipe! It can be a sandwich, yogurt-mess, bowl of oatmeal bliss, dessert, whatever your hearts desire! I will recreate the winner’s favorite  - and no worries if it’s not vegetarian. Where there’s a will there’s a way!

2. Link back to this contest.

3. Add me to your blogroll.

And please let me know if you do numbers 2 & 3. The contest will end on Saturday noon time EST. Thanks and good luck!

p.s. All you folks that have been treating yourself to Pumpkin ice cream, try it with walnuts!!! Speaking of sweets, I will be updating my recipe page so you can see the recipe for the scones! Enjoy your Wednesday everybody; we’re in the middle of the wave and it’s smooth riding from here.

Joy of Baking

I forgot to mention that Mitri’s mom’s baked ziti recipe, the one I feared would send my tummy ailments over the top, actually left me feeling 100% better the next day. This would be my cure; Who would’ve thought?

Ah my tummy finally started to not act all funky on me.

Ah my tummy finally started to not act all funky on me.

I tried some Artisana Walnut Butter on cranberry cinnamon swirl toast. I don’t thing there’s a single Artisana nut butter that I’ve tried that I haven’t absolutely loved. And I love cinnamon-anything toast for breakfast; especially the smell when it’s toasting! I also smeared on some of my favorite pumpkin butter and cream cheese on two slices. Oh! That’s also a bowl of European style yogurt with Crofter’s superfruit spread.

Thank goodness for leftovers! I enjoyed Mitri’s mother’s baked ziti recipe for lunch, and I gave my dad the other half to have at work the next day. SO GOOD!

I visited the islands the other day... kind of!

I visited the Caribbean the other day... kind of!

I followed this recipe for a taste of Haiti: Polenta, Beans, and Coconut or Maya Moulen Kole Ak Pwa Ak Kokoye, or Polenta aux Haricots Rouges et a la Noix de Coco. The above picture has the addition of tamarind-date chutney, but my favorite way to eat this was with melted cheese!

Let’s take a break from the food for a New York minute. The other day I went on a bike ride with my friend and Matilda on an unusually beautiful day.

We stumbled upon one of the many secrets parts spread out among the old Victorian neighborhood.

Might I also add that I bumped into my ex on this street. I was just trying to send brainwaves to my friend hoping he would hurry up!

I had a bowl of Farina creamy hot wheat cereal. I mixed in one of sample packs of rice protein powder, NuNaturals vanilla liquid, and cinnamon. On top I sliced a banana and finished the rest of my Artisana walnut butter sampler. I tried to make something inspired by banana-walnut bread. Eating the Farina was so comforting as I felt the chilly morning through the window pane.

I spread on a dollop of ricotta + pumpkin butter on one scone, and the other I tried with coconut oil. I don’t think I could ever go wrong with coconut oil. Afterwards, since it was my free day I decided to walk over to my friend’s place of work. She works downtown in the heart of the medical campus of my school. I had a special delivery to make, so that meant dressing up! This is part of the work criteria when you work for Katharina’s version of FedEx.

Now here’s something for you all to chew on. The other day as I was browsing for recipes I stumbled upon an Ayurvedic recipe site, and I noticed they use the word pacify when it came to eating. Why not pacify ourselves? Afterall, we deserve it.

p.s. Next post is super special! This is my 100th post, but 101 is so much better. So don’t miss it, okay???

What Does Your Dream Need to Grow?

Right now I’m relaxing on my bed and Matilda is resting on my belly. How am I typing you ask? Well, it’s kind of awkward, but the pup is just so comfortable where she is right now. Not to mention, I can feel the chill outside and she’s helping me stay warm. Transitions between seasons are always funky. Lately, I’ve been feeling like a celebrity doing multiple outfit changes in one day! Anyway, I’m going to try to post more frequently because I just have so much to share with you all. There is something new everyday in my life – I’m really trying to take an active role in how my day pans out. I was starting to get in a rut of becoming a school-a-holic and not really taking time out to hang out with my friends. But I know that the colder months with less sunlight tend to make me a bit melancholy, so I’m going to work around that this year. I love all the fall foods and such, but less sunlight and the cold aren’t exactly my best friends. It’s strange though because when I was growing up in Germany, and the last time I lived there – I was okay. Maybe it also has to do with my surroundings. Life in Germany still went on despite the cold weather, but here it seems nobody really goes outside. For example, when I would take Matilda for a walk around here last winter, I would be the only person outdoors.

A new cereal...
A new cereal…

I finally opened up another box of cereal the folks over at U.S. Mills generously sent me. This particular one is the Kamut Flakes kind by Erewohn. I just looked at the ingredients and the list is incredibly short! I’ve had puffed kamut before, but not flakes. My opinion on this? Well, I get the feeling that this is supposed to be a no-frills cereal based on the short ingredient list. It was very plain and had a very strong grain flavor. However, I was impressed with the fiber content. To make this not such a bland breakfast I ate it with a container of Pineapple Chobani. Oh and the apple and peanut butter are a bit camera shy!

Okay, so I’ve been keeping a secret from you all, but it’s been so hard! I’ve been dying to share the goodness of this surprise. The wonderful people at Bountiful Vegan definitely gave me the hook up when they sent me their Intention Cookies. What are Intention Cookies? It’s a cookie packaged with an intention; “You must state your intention accompanied by a good feeling to attract what you want. Each delicious cookie has a powerful written statement of intent inside the package.” You’ll get a better idea in second.

I'll let the cookie do the talking.
I’ll let the cookie do the talking.

Each cookie is packaged like this; with an explanation for each intention.

First up was the Love Cookie
First up was the Love Cookie

I didn’t know which one to choose first, but then I decided on the chocolate chip orange Love Cookie. First off, these cookies are BIG! The size reminded me of the Alternative Baking cookies. Anyway, how did this cookie taste? It was incredible! I heated it up in the microwave for a couple seconds to get the chocolate chips to soften up a bit. My first bite was exciting because of the mix of orange and chocolate. It took restraint to save some of this cookie for a treat I had in mind for breakfast the next morning. I highly recommend this flavor.

I crumbled the rest of this cookie on some vanilla stove-top oats and sliced banana.

The Prosperity Cookie
Prosperity Cookie

This intention was choco choco-chip flavored. Sounds decadent doesn’t it? What’s up with me liking chocolate on chocolate things now? Maybe my taste buds are maturing and next thing you know I’m going to be eating 99% dark chocolate. This was also a winner! We could all use a little prosperity, no?

Well-Being Cookie
Well-Being Cookie

I actually saved this one for last thinking it would be my favorite since I love coconut and pineapple. I tried it naked and it wasn’t that great. It was significantly drier than the other cookies which were chewier (except for the next and last one). Since I wasn’t really digging the flavor I tried to salvage it with some sunflower seed butter and vanilla fro-yo. It tasted better, but I think if this cookie were chewier and had a stronger coconut flavor, it would be a hit!

Last but definitely not least

I actually tried this cookie second.
This was actually the second cookie I tried.

The Harmony Cookie… I purposely saved this one for last because it was my favorite. I’ve never tried a snickerdoodle cookie before so I had no idea what a lemon one would be like. Would it be a brilliant addition to a snickerdoodle? Well, the verdict – HECK YES! Oh my gosh, I kept making “m’mmm good” noises as I was happily chewing this cookie. Then it hit me, right before it was too late and the entire cookie was devoured. I should make an ice cream cookie sandwich!!!

Definitely not trying to make a poker face.
Definitely not trying to make a poker face.

I have to pat myself on the back for this impromptu decision because that was the best cookie and the best way to eat the best cookie I’ve had in a long time!

So yes, that was my secret, and every post I was so tempted to share with you all, but I thought a review of them all at once would be better. The concept is definitely new-age but I dig it. The lovely Eliza had mentioned the idea of putting good energy into your food while you cook it. I’ve heard about this idea before and I found it fascinating… and why not? Even if it may sound silly, it’s not doing any harm that’s for sure. I think the idea behind these cookies is a really great one and it’s just something little that can cheer you up a bit, even if you’re laughing at it. What? Laugh at a cookie? Just enjoy.

On Monday I had to pay my rent, and I decided to go to the office in person because it’s just so cool looking in there. I took Matilda with me and on the way back I was passing up one of the downtown areas I love, but don’t frequent.

Cobblestone roads
Cobblestone roads

This part of down town is lined with local stores, great restaurants, bars, and a fancy hotel. The farmer’s market also takes place around here during the weekends. I love it during the Christmas time because a lot of the stores will have such charming window displays, and I feel like I’m being transported into the old world.

Just imagine frosted windows and a cup of hot cocoa in your hand.

Now I’m getting myself excited for gift-shopping. Ahh the season of giving… I stopped in this one neat store where I once bought the best apple cider mix ever. It was perfect when my family went up to the mountains and stayed in a bed & breakfast cabin.

After walking around for a bit I thought it was a good time to head back. As I said earlier I will try to post more frequently because there are a lot of things I want to share. So expect to hear from me soon! In other news, don’t forget to stop by Janetha’s blog and participate in her exciting giveaway.

Moreover, because it’s pumpkin season and they’re popping up everywhere around blogs, I thought I’d let you all know about this particular blog I stumbled upon this morning. My Daily Pumpkin Recipe is the name and here’s one of my favorite participants in the game: Pumpkin Spice Bread With Perry Cider Cream Cheese Frosting. That’s right! Perry cider cream cheese frosting is what really caught my eye. I have a feeling this year’s Thanksgiving will be stellar.

Until next time! Bis später!

Off to a Good Start

I’ll start this post off the same way I start my day – with breakfast!

I baked some lemon poppyseed mini-muffins.
I baked some lemon poppyseed mini-muffins.

I tried some samples of the Artisana nut butters. I’m going to make a bold statement right now, but I’m just gonna go right ahead and put it out there. I haven’t tried all of the samples, but I feel that I can officially say that these nut butters are the bomb! If you’re a nut butter person, you will love these no questions asked. The nuts are all ground to perfection and have such a great consistency. I can actually taste each nuts’ unique flavor! I’m using the word “nuts” too much! So let’s move on, shall we?

Next up is a recipe I got from a website called Culinary Competitor: Vegetarian Black Bean Chili with Bulgur.

The chili with a dollop of sour cream and cilantro, and a side of buttered peas and…

I also got to try something new! A Vitalicious Golden Corn VitaTop. I’ve always wanted to try this flavor because I love cornbread and these VitaTops just look so dainty! This was really good, and went perfectly with my meal. Oh gosh, almost forgot to review the recipe for you guys. TRY IT! I loved the addition of bulgur, which made it heartier. Eat it with some cornbread, or if you’ve got one of these yummy Tops on hand. I’m getting bossy! But for real guys…

Since we’re on the topic of VitaTops, I’ve been able to try a couple more flavors out.

Double Chocolate Dream - those are white chocolate chips.
Double Chocolate Dream – those are white chocolate chips.

Doing it up photo collage style like Angharad! I admit that I was hestitant to try these because I read the words “double chocolate dream.” And for the most part, I’m not a big fan of double chocolate anything. However, I do love white chocolate and I think the addition of those chips really made it awesome. Not to mention this was warm, pillowy, moist, and gooey!

About to enjoy bite number two... after I put the camera down!

Decided to try another uber-chocolate flavor...
I decided to try another uber-chocolate flavor…

Deep Chocolate! I didn’t like this one as much as the one with white chocolate chips. But I did enjoy the melted chocolate! For some reason I look yellow in that picture (flash?). I’ve also tried the brownie, and I was happy that they were bigger than the VitaTops. The only complaint so far that I have about the VitaTops is that they’re just a few bites of goodness. I guess that’s the trade off? For myself, I enjoy these as part of a yummy snack, or an extra to my meal. If I were having these as part of a breakfast I would definitely have to have two. I’m not a calorie counter, but I do know that my breakfast carbs have to be over 100 calories… unless I want to be hungry again in an hour. I actually have a question regarding morning hunger, that I’ll get to on another post. Anywho, I’d imagine that these are wonderful for dieters because you don’t have to “splurge” to have a flavorful treat (they don’t skimp on flavor). You can have your cake, and eat it too! (Any cake really, whatever your little tastebuds desire!)

Let’s see… what else have I been eating lately? Oh! The other day I marinated some tempeh to make a “BLT”. If any of you guys have any awesome tempeh recipes, please, send them on over!

This meal just looks funky!

First Friday was awhile ago over here in my corner of the world. First Friday is when the galleries around here show off the new works they have up, and tons of people walk around and take it all in. Sometimes you see some real characters – the area’s eccentrics. Love it! Anyway, as you all know Matilda is practically attached to my hip so of course she went to this event with me! No one at any of the galleries has ever objected. I think it’s because she’s so freaking cute. But here are some pictures after the art and a show.

He calls her "little bean"... "get back in your can."
My friend calls her “little bean”… “get back in your can.”

Another pet!

Another furry friend!

Matilda would be so jealous if she saw this picture up. I think Sophia looks funny with her bat wings and squinty eyes. This was the night my entire zipcode experienced a blackout, so I went to my friend’s house. When the power came back we watched this murder mystery called Brick. This movie was so classical in the way it was shot… don’t really see mystery films made this way anymore.

Back to some more eats! The other day I was at the bookstore browsing through magazines that I didn’t want to pay for. I had my handy dandy Moleskin and copied down an interesting recipe I saw in a Vegetarian Times issue: ginger-miso yam wraps. This was my first time trying collard greens, and I tried them RAW!

Look how pretty!
Look how pretty!

This was so nice to look at and prepare. Collard greens remind me of the Cabbage Patch Kids. I made a slight change to the recipe, and poured in some coconut milk.

I decided to add some variety to my eats by getting a bag of tortilla chips. Yay! I wish I had a cheese grater so I could make nachos. Well, I kind of made some the other day by cutting squares to put on each chip haha. But I prefer a messy, melted, gooey explosiong when it comes to nachos.

Then I added some goat cheese after I started eating...

I happened to be reading Janetha’s blog while I was eating this, and saw that she made a tuna melt sandwich with goat cheese. Awesome idea, girl!

An apple, cheddar, "bacon", and roasted onion sandwich.

An apple, cheddar, "bacon", and onion sandwich.

I also spread some pumpkin butter on this great bread. This spelt bread tastes really good – perfect for sandwiches. On the side I sautéed some yellow squash in coconut oil and toasted some coconut shreds. To melt the cheese I put my sandwich in the toaster oven since I don’t have a griller. The crispness from the apple and onions, the crunch from the bread, and the smoky “bacon” with cheddar were awesome all together!

A chocolate banana pop.

A chocolate banana pop.

Oops! It looks like I didn’t really clean the mold that well… there’s some OJ at the tip. For these pops I just added some chocolate sprinkles to the warm, melted banana + coconut milk/shreds mush. Naturally, the sprinkles melted and spread their love throughout. I love the creaminess of these pops, and the texture the coconut shreds add to them as well.

A cup of hot cocoa made with coconut milk and some cinnamon.

A cup of hot cocoa made with coconut milk and some cinnamon.

Do you love the foam? I use the chocolate tablets that you have to put in the blender with boiling milk. Nothing beats my grandma’s hot chocolate though. She does it the old-fashioned way by boiling the milk on the stove. Then she pours it into her old tin pitcher and gets to crackin’ with her over-sized pestle to crush the chocolate. Then she whirls it around to make it foamy. My grandma has such strong arms: hot cocoa to strength train = lots of great hugs for the granddaughter.

So now the moment you’ve all been waiting for! It’s time to announce the winner of the U.S. Mills giveaway. First off, I loved reading everyone’s ideas – most of you enjoy it with yogurt and fruits. If you haven’t tried it yet, I suggest you make peanut butter balls by just coating a blob of peanut butter in cereal. Example, if you guys have a cereal that tastes corny you can also add in some coconut shreds to the peanut butter blobs. Anyway, I’m like an annoying commercial right now when all you want is to get back to the show! Okay, okay, and the winner is…

Aileen!

Congrats girl! I’m going to send you an e-mail to notify you. Thank you all for participating. I hope you all enjoyed it, and maybe some of you with a gluten intolerance now know there are cereals for everybody! Moreover, I was able to stumble on to some blogs I haven’t read before – maybe I should have more giveaways?

I hope you all enjoy the rest of your Sunday, and don’t forget to give yourself some TLC.

Fluorescent is the New Black

My week has been stressful, but Holly’s post about Ups and Downs reminded me that even when life gets tough, there’s always a bright side. A highlighter yellow bright side!

I made a little personal project for myself last week. Matilda and I go for walks around the city, and I always find myself looking down at her and smiling to myself. I wonder… what’s it like for her? Walking through grass must be like walking through a cornfield for us!

Matilda has mastered the art of being okay with doing "nothing".

So I bit the top off before I took a picture. I just poured some OJ into my ice pop molds. The next time I made these, I added some soy creamer to make them kind of like a Creamsicle. Which reminds me… Stoli Vanilla + Orange soda = THE BOMB!

Highlights of my week so far

I was looking through Craigslist the other day and read these words, “ANTHROPOLOGIE INTERNSHIP.” Click! Oh my gosh, guys… it’s screenshot time!

This was exactly what I want to do as a "practical" job after I graduate, but in New York.

This is exactly what I was planning to have as a “practical job” when I graduate, but in New York!!! Speaking of “displays”, my room is coming together. I still have some things to hang up and crafting projects I’ve been meaning to finish.

I don’t think you can see this – unless you have super sonic vision – but on the little chalkboard by the crazy mask I wrote “boys suck.” Well, they don’t really. I just think I must’ve been on another planet when girls learned how to flirt and stuff. Or maybe it’s just the fact that we’re from different planets anyway!

When I was grocery shopping the other day I saw that winter squashes were on sale for 69 cents a lb. What’d my eyes fall upon? The elusive kabocha and I met again! I’m thinking I should go back and get another one, and some other delicious winter squashes. Hello? Last time I paid $1.50 per lb. for the Japanese squash! I’d be crazy not to take advantage of this super deal.

So I went on a food adventure and tried lotus seeds for the first time! I made a lotus seed congee, and I changed it around everytime I ate my leftovers.

I also saw that avocados are on sale for $1.50 each.

Speaking of avocados, an old friend of mine said I have really nice, full hair and that it must be because I eat avocados and olive oil. It’s also all thanks to nuts, and coconut oil (eat and put on my hair). Then the other day he said my hair is like Fara Fawcett’s hahah! Lately, it’s been flipping out by itself. Then he said “girls would kill to have that.” Oh, please feed me more compliments hot friend!

So this “old friend” of mine is also an old crush of mine. When I was at his house the other night, he pulled out a jar of Sunflower Seed Butter from Trader Joe’s. Oh my goodness! I think my eyes popped out of my head because he asked, “what?!” The flavor was overwhelmingly good and totally unexpected. I urge you all to try this if you haven’t already. I know at least one thing that’s going in my cart next time I go to Trader Joe’s. Oh and we went on a nice bike ride together! This is where we met up:

Then we just rode around the Victorian neighborhood called “the Fan”. I’ll take a picture of that for you guys. It’s so nice! Then we went back and watched this musical called “Shock Treatment”. It’s by the same guy who did “Rocky Horror Picture Show.” Well, basically we got all cuddly during the movie and he had so many nice things to say about me. Garsh!

I thought I was over my friend… and I was. But I’ve started crushing again. Not sure if he’s good news though. He’s got this je ne sais quoi, and all the girls fall for it. Even girls that usually don’t go for his “type”.

Anyway,I tried out a new recipe from Happy Herbivore for “tuna” out of chickpeas. Holy moly! I’m making a recipe card for this one for sure!

I love it! I use to go to this bakery after school back in highschool, and I would have them build me a sandwich. They also make awesome cookies, and other breads. I can imagine this “tuna” recipe would taste awesome on their Honey Wheat loaf + sprouts!

There’s a grocery store that has bananas on sale for 29 cents a lb. on Tuesdays. Lots of bananas = banana pops! I am now addicted to making my own popsicles. Anybody have any recipes they’d like to share? Or ideas?

I’ve also seen that some of you guys add coconut milk to your oats. Well, I had an opened can sitting in my fridge… I think you guys can guess what I did next!

A bowl of their gluten-free cocoa crispies helped my late night studying not seem so bad.
A yummy bowl of their gluten-free Cocoa Crispy Brown Rice helped my late night studying not seem so bad

By the way, this brought me back to Cocoa Krispies and loving how the milk would turn into chocolate milk!

What’s that you say? You would like to try them too? Well, here’s your chance to receive a generous gift courtesy of U.S. Mills:

1. One product of each brand (Erewhon, Uncle Sam Cereal, New Morning, and Farina)

2. a Patagonia T-Shirt (available in Adult L, XL & Kids L)

3. and some coupons

How do you win?

In the comments section of this post, let me know the flavors of each brand you would like to try and your favorite way to eat cereal or use cereal. Maybe you simply enjoy it with milk, but I know some of you have some creative ideas up your sleeves!

Make a comment by this Saturday, September 12 at noon EDT, and I will randomly pick a winner (please only comment once). The winner will be announced over the weekend.

Thanks guys!

Stevia baking blend, vanilla stevia extract, and plain stevia.

I put a few drops of the vanilla stevia in my yogurt. It was a nice addition to my blueberries, and just the right amount of sweetness. There was no weird aftertaste either. Stevia is such an interesting sweetener. I went to a garden once and I picked off a stevia leaf and I could taste the familiar sweetness. My roommates parents actually have a stevia plant, but we’re not sure how to use that. Does anyone else know?

Okay, I’m not quite sure where to start with my eats… so let me just randomly choose! I hope you’re in the mood for something Mexican.

In my old place when I first moved in, I would bake this bread and it was fun because I could shape it however I pleased. However, I just didn’t feel like baking it anymore. I think it might’ve been because I felt in some weird way… unappreciated. The only person who really showed any appreciation was Kim, and I thought it would seem strange to bake a loaf for only us two when three other people were living in the house. But I promised Kim that once we moved to the new place I would bake her loaf since she loved it.

A new cereal to try!

Have you guys heard of Erewhon? They’re a part of U.S. Mills (which has so many breakfast grains to choose from). This is the Strawberry Crisp cereal, and for anyone with gluten allergies this is a gluten-free cereal. Usually, I don’t eat cereal because it’s not very filling but sometimes I just want something refreshing. The only thing I have to say about this cereal is that it could be a tad bit sweeter. I am surprised at how many dried strawberries actually come in the box. I find that most cereal with dried fruits shouldn’t even claim to have them! If you like cornflakes, then I think you will enjoy this. I know that I’m enjoying my box!

Instant oatmeal with soymilk!

I’ve also tried another U.S. Mills product from Uncle Sam. Instant oatmeal is perfect for a college student, and anyone else with a busy lifestyle. But when was the last time you guys saw one with soymilk? That’s right! This was so delicious! They also have a French Vanilla flavor. Yum! Moreover, I got to enjoy this in a most delicious jar of almond butter with crumbled graham crackers.

It doesn’t look too pretty, but don’t judge a book by its cover! I followed this recipe, but I didn’t have white balsamic vinegar on hand. I’m sure it made a difference, definitely in color!

So far I’ve tried Cacao Bliss, Cashew Butter, Pecan Butter, and the Macadamia Butter. I really don’t think words can do these nut butters justice. You just have to try them!
