Living In a Daze, Part I

Hi everyone! As the title suggests, I’m going to break up the recent days in to more than one post. I still feel like my two feet have yet to hit the ground. Yes, I am feeling overwhelmed, but that isn’t always necessarily a bad thing. Why am I overwhelmed is the question. Over these past couple of days I’ve had many triumphs, adjustments, and realizations. I just feel like I’m about to start walking on new territory, but at the same time branching my roots out into familiar ones as well. It might sound confusing, and I admit it feels that way for me too! But whatever may be in store, I’m ready! And on that note, let’s jump in!

This chili smelled divine while cooking it. The thing I love about ayurvedic recipes is that they include an array of spices that awaken different tastebuds. I wanted to show you all what this Betty Lou’s bar looked like. Check it out! Every time I open the wrapper I can’t help but think that it smells homemade. You know when you’re baking muffins and the sweet smell just puts you at ease? M’mm good.

Anyone ready for Florida?

That morning I had the juiciest, sweetest mango ever! Oh my gosh, just thinking about it is making me want go back to this. I had it with Greek yogurt, Udi’s Hawaiian granola (ginger-toasted macadamias, dried pineapple, and coconut flakes), and drizzled with coconut butter. Okay, so the mango alone was delicious, but all of this together… where do I begin? Ah yes, sitting on a hammock basking in the sun. But before we continue, let me put my ice cold pina colada down.

Alas, I’m just stylin’ the pajamas my grandma gave me, and about to enjoy OIAJ!!! Now that doesn’t sound like prison to me. Sunland’s banana peanut butter… you were so good to me!

However, OIAJ wasn’t the only exciting thing happening that morning. No, I had to get ready to pick up my mom!

We came home and I quickly put together our lunches

For myself I had a Garden Herb Sunshine Burger on a bun + ketchup + pepper jelly + onion + tomato, with butternut squash and sliced pear with cinnamon and coconut butter as well.

And for my mom...

This almost looks like a face! She had Ezekiel toast with fried egg whites and green “stuff” on top. The green “stuff” is a quick thing I whipped up: 1 avocado + nutritional yeast + soy sauce + turmeric + a bit of water for consistency. She also had some butternut squash on the side.

My dad picked up some goodies from a nearby local Jordanian restaurant.

Everything is made fresh, and they even grind their own spices and herbs weekly. In fact, they also make a Lebanese pita bread which involves garbanzo, barley, and other flours. My dad got a vegetarian sampler for all of us, and a spiced chicken gyro for them. The sampler included hummus, baba ganoush, tabbouleh, and dolmades.

I also got to take my mom to her first First Friday Artwalk!

It was very cold for her, but she loved all the life going on. She also got to meet some friends I’ve made in college, which is really nice! Now she has a better idea of who I’m talking about when I tell her things that are going on in my life. Anyway, this is it for Part I! Stay tuned for Part II (THE FASHION SHOW!!!) Long Letters to My Dear Friends

Good day to you!

Dinner is served.

I tried out another Veganomicon recipe; one of Neela’s favorites from the book–the chickpea cutlets. I definitely understand why. They’re simple to make and are so versatile! I also steamed some Nishiki rice to go along with the mushroom mutter masala. I’ve missed Indian food and all of its wonderful spices!

All mixed together and voila! A tasty dish.

Banana PB&J OIAJ

Funny story: while making the OIAJ the container toppled over and spilled everywhere. Luckily the peanut butter was still in the bottom so that survived. But I told myself not to get upset, just clean it up, and that I could just make some more. No big.

Then lunchtime rolled around.

I’ve seen Holly put sweet potato in her sandwiches and I also remembered when I made a sweet potato and ricotta toasted sandwich as well. These things lead me to topping the Garden Herb Sunshine Burger with a sweet potato and ketchup. A very wise choice indeed!

This little bugger helped me through my philosophy exam.

This was a Betty Lou’s High Protein Almond Nut Butter ball. This was so delicious and the texture was awesome. I loved the creaminess of it and the bit of crunch as well. Almost looks like a classic Drumstick doesn’t it? Anyhow, this snack boasts a whopping 12g of protein! These babies are gluten-free and do not contain wheat, corn, soy, and are non-GMO. On the flip side, because they have whey protein they’re not vegan friendly. However, vegans don’t have to feel left out because they do have some treats for you all! Anyway, if you’re looking to up your protein intake with something yummy, definitely keep your eyes peeled.

Actually, the very kind folks at Betty Lou’s sent me some of their products to try out a while ago; remember that? Now since some of their snacks are gluten-free, I was given another opportunity to sample them out. Would they still have that same great taste?

I tried a new Jumbo Fruit Bar flavor: STRAWBERRY!

Check it. It’s gluten-free! Okay, as soon as I opened up the wrapper the sweet smell of strawberries was the first thing I noticed. It was soft and chewy, but not messy and sticky. The best part? It tasted like a delicious baked good!

This was the Cashew Pecan nut butter ball. First ingredient? Cashew butter! Um, yum? I love these because they’re like biting into those peanut butter balls you can make for kids. Chewy on the inside and crunchy on the outside. Well, they’re obviously not just for kids anymore! Another plus, I was able to take this snack with me while I was on-the-go.

Heck they even peanut butter balls! For some reason though I didn’t like the flavor as much as the other ones. I couldn’t really put my finger on it. Well, I still have some more to sample so I will keep you all updated! Don’t forget to check out their website to see what other products they have that may catch your eye. I feel like they’ve got something for everyone’s tastes.

Then I got ready to go to a modern dance performance with a friend.

The show was awesome! The costumes went well with each performance and just extended each movement further. I wish I could’ve taken pictures of the performances! All in all, I was left with a smile and the yearning to dance.

Afterwards, we went to an Ethiopian restaurant to meet up with a friend/her boyfriend. Aren’t they cute?!

For breakfast I wanted to try something new–yoatgurt!

I cooked my oats with a bit of cinnamon, stevia, and vanilla extract. The oatmeal and the yogurt had to share a bowl and I topped them with a sliced banana, coconut butter, and Sunland’s caramel peanut butter.

After breakfast I went to a contact improv dance class.

It was so much fun. I can already tell that my body will be bruised and sore tomorrow. But I needed to move, extend, and stretch my body like that. It’s been awhile since I moved my body like that without hesitation. Speaking of not hesitating, I was also able to tap into my acrobatics and gymnastics background and do a flip down someone’s back.  Great way to start my Saturday!

Vegan Caesar Salad from The Conscious Cook

This recipe was so simple to put together. It called for focaccia which would be used as croutons. I also added in a chickpea cutlet from the Veganomicon.

So that’s what I’ve been up to for the past couple of days + working on a sculpture project and completing my headache of a philosophy exam. I wish I could post more often because sometimes I think my posts are overflowing with things. I’m hoping school will settle down a bit and that spring break will make its way over here pronto! In the meantime, just see my posts as really long letters to catch you up on what goes on! I hope you all had a fabulous weekend and that the weather was gorgeous wherever you may have been. Good Intentions and Spreading Love

Hello hello everyone! I hope everyone had a wonderful weekend and got to spend it with someone they love one way or another. On Friday night I definitely danced the stress away and made a couple new friends while I was at it. Actually, one of them is a girl that just moved from Miami–we were representing the Miami hotness on the dance floor for sure.

A simple breakfast after a night of dancing: oatmeal cooked the usual way, cinnamon, diced apple, and Sunland's caramel peanut butter.

My dad and I went back to the Urban Farmhouse to grab some lunch.

This time we talked to the woman who opened Urban Farmhouse. You could tell she was passionate about what she was doing and just wants to offer the best. It was interesting to hear her plans for the place and we gave her some constructive criticism as well. That’s the great thing about places that just opened–they’re more than willing to hear what the customers have to say. I ordered the Candied Walnut Gorgonzola Salad and the Farmer’s Grilled Cheese with Black Winter Truffle Oil (Gruyere cheese). Both were delicious and I loved the candied walnuts in the salad. Biting into the sandwich and tasting the earthy black truffle oil was so satisfying. Who doesn’t love things that are full of flavor?! They also have a big jar of complimentary animal crackers that I happily helped myself to.

Candied Walnut Gorgonzola Salad and the Farmer’s Grilled Cheese with Black Winter Truffle Oil

My dad has been reading up a lot on spirituality, energy, levels of things we can’t see, guides, etc. Anyway, most of what he’s been reading has led him to the idea of putting good intentions out there and accepting the ways of the universe. I really think this is the most fulfilling way to live life. Oftentimes people forget that we are only in control of ourselves and nothing else. If things go our way then it’s something that was supposed to happen and falls under determinism—it wasn’t really up to us. We were just a part of the cause. Okay so before I go off on a tangent I want to share a few things that happened.

I took my dad to the store to get his phone fixed and on the way back someone one lane over all of a sudden started to drive in reverse very quickly. Then they rolled their window down and told me I had a complete flat. Oh great. Then on Broad someone else notified us. Side note to everyone: these potholes are killer so beware! Anyway we pulled over to a tire store around 4:17 and they closed at 4:00. The owner was incredibly helpful and offered a spare to get us over to someone who would take us in for service. Unfortunately no one could but he decided to take the job. Then my dad and I were debating on walking to Trader Joe’s from the tire shop. The owner pulled out a key and said, “go outside and this is for a Toyota Tundra. Trader Joe’s is a little ways up there to your right.” Wow. I believe that my dad’s good intentions and realignment of his guides is doing something greater for him than ever expected. I honestly don’t think this was a coincidence. The whole day I was riding on these incredibly positive vibes coming from everyone. Do you know what it’s like to have people throw genuine smiles at you everywhere you look? It was that kind of day!

While running some errands I picked up some very special things!

I spotted a jar of Artisana’s Coconut Butter and a pint of Almond Pecan “ice cream”. Both are incredibly delicious. I have been putting the coconut butter on almost everything!

The sandwich obviously left an impression on me because I also got some truffle oil; and I'm always on the lookout for a good pasta sauce.

Last time I got the Almond Breeze milk the machine printed out a coupon for a FREE half gallon of Silk's almond milk.

Free? You know I was on that. It was way creamier than Almond Breeze but that doesn’t have to be a bad thing. In fact this probably would work as a better creamer than thinner milk alternatives. The taste was still yummy too!

Something else new to my tastebuds.

Now I can officially say that I’ve tried all the Sunshine Burger flavors. This time I tried the Garden Herb veggie burger. This has the same ingredients as the Original veggie burger, but the Garden Herb is organic and probably has more herbs and carrots because it did taste different.

In a bun with ketchup, vegan mayo, red onions, and a last minute decision: red bell pepper slices.

Also tried the Vanilla 3400 Phinney milk chocolate bar.

Yummy but I didn't really taste the vanilla flavor.

Valentine’s Day doesn’t just have to be for those who have that someone special. It can be fun for everyone if you let it.

Started off Valentine's Day with a bowl of love.

I made a recipe sent Liz sent to me.

Here’s the recipe folks! This recipe has all the components of things I love–especially kale. I have been on such a kale kick lately. However, since I didn’t have ricotta on hand I just made the cashew ricotta recipe from the Veganomicon. This meal was such a cinch to make!

We decided to go to a restaurant that we'd both been curious about for years!

Bistro 27 features Italian and French cuisine.

I loved the high ceilings and open-air environment.

To start off my dad got the Capesante with Bacon--Jumbo scallops wrapped in smoked bacon and served over red lentils.

And I started off with the Twenty Seven Bistro Salad--Baby lettuces, candied walnuts, sliced Bosc pears, gorgonzola cheese, red onions, and tomatoes tossed in honey vinaigrette

The salad was delicious! Can you tell I’m loving gorgonzola and candied walnuts? A seriously delicious and classic salad.

My dad ordered one of their specials: the beef tenderloin topped with strawberries and a strawberry reduction + garlic mashed potatoes + veggies.

And I ordered Capellini con Vegetali e Pomodoro--Angel hair pasta with julienne vegetables and 27’s tomato sauce

And on the day of love I decided to give a lonely brussel sprout another chance.

I was in elementary school the last time I tried brussel sprouts and I just remembered thinking they tasted like a fart. Yes, a fart! But this time around I actually liked it, but I decided that I would like it better seasoned and roasted with balsamic vinegar. The pasta was okay, I did love the chunks of tomato though. But the salad definitely outshone the pasta. We skipped dessert because “someone special” said he had a treat for me. Well turns out that he wanted to postpone and frankly I was upset at that point. Why make plans with someone if you can’t actually follow through? After I said “no” he proceeded to tell me what he had gotten me. I’m sorry but I am not the kind of person to simply be won over by gifts. I’d much rather have my feelings and thoughts be considered, and know that someone actually wants to spend their time with me. Overall though my Valentine’s Day was great and spent with some of the people that I truly care about. It was also nice to just spread the positive energy on a beautiful day.

Making Up For Not Having a White Christmas

So my friends and I decided it would be safer not to drive out to Charlottesville for the weekend. I’m glad we didn’t go because they predicted 3 ft of snow for that area. I’m not sure how much they ended up getting though.

I have never tried any of the PB&Co flavors but I’d imagine it would taste similar to this. In the bowl I cooked some oatmeal with the last of my chocolate protein powder + cinnamon + coconut oil. Then I added in some diced apples, white chocolate chips, and crunchy peanut butter. So delicious!

I made a bowl of chocolate oats with a banana bruleed in + coconut oil + peanut butter + white chocolate chips. Obviously I loved the peanut butter and white chocolate chip combo from earlier that day.

Steamed kale later massaged in olive oil; To go with the brie I made a caramelized onion-cranberry compote + pine nuts for crunch and earthiness, then I baked some leftover Italian semolina bread. Even the kale with the brie and compote tasted delicious together.

When a friend of mine slept over, we opened up my box of Kashi GoLean Crunch that had been sitting in my pantry for ages--this became part of my snack pictured above.

This snack bowl consisted of Kashi GoLean Crunch + a crumbled Cinnamon Raisin gnufoods bars + almond milk + coconut oil (all warmed up).

Then it was crafting time for me!

I tried another flavor of the 3400 Phinney bars.

It had a delicious bold bitterness to it at the end and a nice crunch from the nibs.

Another new flavor I tried!

I tried the breakfast Sunshine burger. It was yummy but I don’t think I’ll be buying it again. It’s not horrible by any means, there are just other flavors I prefer; like the Southwest and Original (m’mm good). In the bowl is a recipe I got from a Mambo Sprouts newsletter: sweet and tangy mashed butternut squash. I just realized that I forgot the chives! Oh well.

While I was snowed in I took a detox bath and quenched my thirst with something I spotted at the store--mango flavored coconut water!

A recipe I wrote down ages ago and found the other day--smudges and all.

This was suppose to be a Jamaican inspired oatmeal recipe actually, but since I ran out of oats the day before (GASP) I did the next best thing–granola! I opted for Udi’s Au Naturel flavor over yogurt. They were topped with pineapple bits, a sliced banana, coconut shreds, almonds, and maple syrup (the one my friend got for me on her trip to Canada–peeking in on the left side). I loved every tropical bite of this; especially because I am ready for warm weather!

On that same page I wrote down some other recipes and decided to make another one for lunch.

Chickpeas in coconut milk + steamed kale + coconut & cinnamon rice (with coconut oil)

Chickpeas in Coconut Milk: serves 4

Ingredients

1 cup water

10 oz potato, cubed

14 oz cooked chickpeas

1 generous cup coconut milk

1 tsp salt

2 tbl sunflower oil

4 garlic cloves, crushed

2 tsp coriander

1/2 tsp turmeric

1/2-1 tsp chili

lemon juice

Suggestions for serving: naan or rice

1. Pour water into a medium saucepan and bring to a boil. Add cubed potatoes, reduce the heat to low and cook covered for 6-7 minutes. Add chickpeas and cook uncovered for 3-4 minutes. Add coconut milk and salt and slow simmer.

2. Heat oil, low heat. Add garlic and cook, stirring frequently. Add coriander, turmeric, chili, and cook 25-30 seconds.

3. Mix into chickpea mixture. Stir in lemon juice.

Quick dinner after a long day of errands.

After spending the afternoon with my roommate stocking up on goods at Target, Trader Joe’s and Whole Foods I was ready for dinner despite my snacks and yummy sampling! I bought some buns so I could enjoy Angharad’s spicy black bean burgers in burger form. These keep getting better and better! I topped it with vegan mayo, pepper jelly, melted manchego, yellow onions, cilantro, and ketchup. Holy delcious. I also had some steamed kale massaged in olive oil + cashews for crunch. I highly recommend making these burgers. Not only are they delicious, but they are so convenient for when you’re in a time crunch or don’t have the energy to prepare something. Actually, they’re wonderful for any occassion!

Comfort food with a twist...

This was such a great nighttime snack! Now what exactly was this snack? Well I cooked some cream of wheat in almond milk (I used Almond Breeze Original), and topped it with chopped dates, Artisana’s Cacao Bliss, and my favorite peanut butter. All of this melted together. So soothing and perfect for a Sunday night and some reading.

If all Mondays started like this... well then no one would be complaining!

Liz sent me a recipe that I knew I had to make ASAP! I had some leftover coconut milk from the soup I made the day before; Purrrfect for Indian spiced oats with coconut milk. Early classes on Monday = quick breakfasts so I used a packet of Uncle Sam Cinnamon Raisin Oatmeal + Soymilk. I threw in a handful more of oats in there + extra spices. For the finishing touches I swirled in some coconut oil + raisins + sliced almonds + coconut milk.

Can't get enough of the spicy black bean burgers!

I prepped it the same way as Sunday night only this time I had it with barbeque Popchips (better the second time around), and a Bugs Bunny carrot + my favorite peanut butter. Once again, this was quick enough for me to put together without eating my own arm off. For some reason I didn’t realize that my Seminar on Hinduism class ended at 6:40–not 5:40. It didn’t help that my afternoon snack sadly only held me over about an hour and I hadn’t anticipated being hungry that quickly. Apparently today was one of those bottomless pit days and the only thing I had packed was the 3400 Phinney Nib Brittle bar and that didn’t do much except please my tastebuds. Note to self: always keep something substantial packed. I’m usually good about this is if I know I’m going to be on the go, but today I had the leisure of snacking at home. Oh well, lesson learned.

Letting Things Happen and Trying New Things

I was inspired by this recipe. I caramelized the apples and walnuts, baked the brie and sesame Italian bread. For the kale I just steamed it till the green turned vibrant.

So delicious... the bread was crusty on the outside and chewy on the inside

Greek yogurt + pumpkin + raisins + maple syrup + cranberry & walnut granola

I let the raisins soak in the Greek yogurt overnight–I actually forgot about doing that because when I saw it in the morning I thought my yogurt started to grow mold. You can imagine I was like, “how does this happen overnight?!” Then the “a-ha” moment was had and I remembered, “oh that’s right those are raisins.” So I happily enjoyed this for breakfast without worry of possibly contracting some sort of illness. Anyhow, I love the crunch of the granola and nuts mixed with creamy yogurt and chewy dried fruit. It’s a nice balance of textures.

When you're in a hurry, readymade food is a blessing!

I knew that can of vegetarian chili from Health Valley would come in handy some time in my semester! I added some of my own touches to it by melting in some dark chocolate and maple syrup. Then I threw in some peas and bulgur wheat and garnished it with cilantro and voila! On the side I steamed some kale and tossed it in olive oil and sprinkled on some salt and chopped almonds. Such an easy meal and tasty as well!

On the go snacking...

Lately, when I’m in the comfort of my own home I’ve been snacking on a mixture of granola, soymilk, and peanut butter put it in the microwave. If you like to eat delicious things then I highly recommend this! However, sometimes I’m not at home when snack attack hits me. This is when I rely on dense and full of flavor bars like Boomi Bars. I luckily still have some from when I was sent a box to review. I know I’ve raved about them before, but I really have to do it again. Personally, I think bars with less ingredients taste way better because the flavor doesn’t get lost among the list of unnecessary ingredients. Not to mention, these are more satisfying and filling–just what I need!

While I was on the go I stocked up on some goods...

I got some new things to try!

I got the Gardein “buffalo wings” with the freebie coupon they sent me, so I will let you guys know how the taste testing goes. I’ve never had buffalo wings before so we’ll see what I think! I also finally found two items I’ve been on the lookout for. I’m pretty sure I will love the Sunshine Burger breakfast flavor because which flavor have I not loved so far? Seriously my favorite store-bought veggie burger. Lastly, luck was on my side when I spotted the new caramel Oikos flavor that some bloggers out there have also stumbled upon. I can’t wait to try this out!!

I also made a Trader Joe's stop as well--Whole Foods and Trader Joe's are basically next to each other so it works out beautifully.

I finally got some of their frozen yogurt to see what the dealio is. Well now I know and I must say that I really enjoy the tartness. Let’s see… I spy various fruits and veggies (some frozen) and some handmade flour tortillas. I also got manchego cheese–I have a recipe in mind for this.

Soon after I got home I set out to make some falafels.

I loosely followed this recipe.

I decided to bake them instead since I'm always afraid of burning myself when frying.

Then I made a random dinner.

I sauteed some mushrooms, red onions, and garlic and reduced it all in balsamic vinegar. Then I assembled the handmade tortilla like so: melted mozzarella, pesto, smoky chipotle and sun-dried red pepper hummus, sauteed veggies, and cilantro. I must say, this was quite the wrap. Randomly delicious.

Knowing it All too Well

I have some exciting things that I can’t wait to share with you all. Although this semester I’ve already experienced one of those weeks where it feels like it’s too much effort to even breathe, I’m doing and learning about things I enjoy. Not to mention, I’ve also been doing some things on the side and really immersing myself with new things and giving things a chance. I don’t think I can say it better than the lovely Neela herself, “sometimes in life you don’t know where things are going–right now it feels even better to NOT know where it’s going!” In a way that’s how I feel right now. I’m doing things to experience them mainly without expecting anything back, but I’m okay with that. Going out there and doing new things in itself, brings me fulfillment.

Creative Sweets

First off, I’d like to thank everyone for giving me their input. You’re all right! I also talked about it with some more friends and I’m feeling more confident already. Afterall, people can’t read our minds so it’s up to us to put it out there.

The papaya was extra vibrant because I had frozen it–whoa mama!

I had Oikos plain Greek yogurt, one of my favorite granolas (Hawaiian flavor by Udi’s), and Sunland’s banana peanut butter. This was a creamy yet refreshing breakfast with some tartness from the yogurt and sweetness from all of the above.

I love making things to put in my casserole dish. In this I just mixed some things together I thought would taste very yummy together. I boiled some kale and rinsed it off then massaged it in olive oil and sea salt. I roasted a sweet potato and butternut squash and tossed it in olive oil, sea salt, and black pepper. Tucked away and nearly forgotten in my lazy Susan was a bag of Bob’s Red Mill 10-grain cereal–love this stuff for savoury things. I finished off the bag since there was a little over a serving left in it. Then I mixed it all in my casserole dish and topped it off with Tofurky’s Kielbasa, sunflower seeds for crunch, and some tamarind-date chutney. This was, to be blunt, amazingly delicious and so satisfying to every square inch of my taste buds. I actually thought of Maya and Eliza when I was eating this because I know they make such wonderful medley dishes!

This breakfast smelled like heaven and tasted like a piece of it too!

I cooked some cream of wheat with a vanilla protein powder I kidnapped from my parents–hey it’s not like they’re using it! I cooked it with half an apple and cinnamon as well. I topped it off with a lot of delicious granola, the rest of the diced apple, Sunland’s caramel peanut butter, and I drizzled it with Apple & Maple syrup. Gosh, I wish I could share the aroma that was wafting through the air from this bowl of comforting goodness. It was a dreary day so this made it a bit brighter and soothed my soul.

In case you don’t know what my favorite veggie burgers are they’re Sunshine burgers! I still haven’t gotten my hand on the breakfast flavor, but I’ve tried all the others and they all get two thumbs way up. What’s that green gunk?

I made this recipe in forever ago, but I knew this would be perfect for my very ripe avocados.

It’s an avocado-yogurt dip with cumin and it tastes so delicious even by itself… by the spoon full! I put used a little more cilantro than the recipe called for because that’s just how I roll. I love dips, especially if they’re creamy. The first time I made this was for a party we were having at my house and let me tell you–that dip was the first thing to disappear.

I love frozen fruits and I am constantly getting them from the freezer throughout the day when I just want something quenching and flavorful. You know what else I love?

Snacking while reading–One Lucky Duck’s Rosemary Quakers are intensely rich in flavor.

That book was actually recommended last semester to me by one of my sculpture professors. Well, I decided to take a class with him again this semester because I think he’s endlessly inspiring and has such a vast amount of knowledge I could just listen to him talk all day. He reminded me of the book and it was funny because I had just glanced at the old post-it note with the book recommendation. Since he didn’t have it on him at the time he said it would be available for me to pick up from his mailbox later in the day. Well I went back later and what’d I find when I cracked the book open? He had written me a note saying that he hopes I enjoy it as much as he did! The book is mine! This means so much to me because I feel like someone sees this potential in me and wants to help me find my direction. When a teacher has faith in you, it’s so encouraging.

Popopop

This time around I tried the original flavor of Popchips. Once again, loved the texture of these chips. They seem like they’re half-way between a crispy thin potato chip and a crunchy rice cracker. This is actually because they neither bake or fry their potatoes. Instead they put enough and heat and pressure to pop them–like popcorn!And these were definitely not too salty.

Corn Chowder

I got this recipe from “The Conscious Cook” and I had a feeling it would be delicious because it called for the cashew cream. I love how I can make the cashew cream beforehand and save it for various recipes in the book + my own recipes! Such a versatile thing to have and it gives things a delicious richness, and it’s such a great alternative for making things dairy-free. For instance, with this recipe the cashew cream was used instead of heavy cream. I’ve never had chowder before but I can vouch for this anyway–delectable. This was perfect for my mood because it had been a dreary day and all I wanted was something comforting. I even had barbeque Popchips on the side which actually went really well with the chowder. However, the barbeque Popchips themselves weren’t really that great in flavor. I just wish they were a bit smokier.

I also received a very very very exciting package from a dear friend–can’t thank her enough.

Liz just needs to be a professional surprise party planner or something! These are one of my favorite chocolates and I haven’t been able to try all the flavors out but now I can! Here are the 3400 Phinney flavors (prepare to wipe drool off your mouth in second):

Speaking of treats, do any of you have any raw vegan dessert cookbook recommendations? I’m looking at you Averie! Just sayin’ you should make a cookbook hehe. Anyway, I find that raw vegan cooking is very rich in flavor and creativity–I love that!  In my life journey I want just continue to expand my cooking knowledge, abilities, and eat delicious food while I’m at it.

I found a delicious yogurt...

I still have a few freebie coupons from Oikos left and I was on the hunt for the strawberry flavor. Much to my delight I finally found it! I couldn’t wait to try to it because the blueberry one was great. So what’d I think? This was so good! Sometimes those fruit at the bottom yogurts taste really artificial and have a strange texture. But this blended so well with the tart and creamy Greek yogurt.  Now I’m on the search for the caramel flavor!

Asian Tacos with Kinpira and Spinach-Sesame Salad

I didn’t follow this recipe exactly, but it still came out delicious. I didn’t shape the won tons like tacos because I didn’t feel like it, and I substituted rutabaga for burdock root. I also used kale instead of spinach for the side salad. The seitan was cooked with freshly grated ginger and garlic and other various flavor enhancing items. This was such a satisfying lunch. Partly because it felt like a mini-project since there were so many steps.

These had cottage cheese, parmesan, almond flour, sun-dried tomatoes, eggs, and basil. I surprisingly liked them because I usually don’t like eggy things. However, this did cause my stomach to act up. Eggs + Katharina = Indigestion.

Went with one of my favorite ladies to see a salsa band play at this eco-chic restaurant called Balliceaux.

That night, right before the last song, a man asked me if I wanted to dance. That was the first time I said yes. I’m glad I did because I danced salsa in a way I’ve never danced it before. The music and the setting had a great vibe and I felt on top of the world. Being up front and feeling the beat of the conga and the song being brought to life by the playful trumpet, I felt it in my soul and out through my feet. I noticed that I had been smiling so much that my mouth got dry… I could feel the sweat forming in the creases of my pants. He had me doing triple turns and then go right back to the swing of things at the very front. Then the final song ended with a dip but the thrill lasted and left me wide awake at 2:30 in the morning.

I came home to make some hot chocolate with the marshmallows Maya sent me--in my special cup!

Inspired cinnamon breakfast

When I saw Sam’s bowl of cream of wheat I knew I had to have a bowl for myself soon. It looks kind of funky because I used a vanilla protein powder that has spirulina. This was so delicious. I topped it with a diced apple, Sunland’s caramel peanut butter, granola, and homemade cinnamon-sugar wonton crisps.

I have been in the mood for salads!

I guess Florida left me craving fresh foods! I made a salad with romaine, corn, Southwest Sunshine burger topped with Sun-dried tomato mustard, and BBQ sauce. Yum!

To celebrate my dad’s birthday we were invited to a family friend’s home for dinner. How sweet of them to have us over!

The orange blob is the most delicious sweet potato mash. It’s the one I made before from “The Conscious Cook”. It has sweet potato, cashew cream, chipotle pepper, butter (Earth Balance if you’re vegan), and s&p. I think this is my favorite mash.

Last night I had two people offer to cook for me! What a treat!

This does not happen often so I happily agreed. Well, I made a compromise. I decided to have dinner with the girls and then later I would go to my other friend’s place for dessert.

When I arrived at my friend’s house I got a text from yet another friend asking if I wanted to go to this awesome Cuban restaurant a couple blocks down. Was there a blue moon or something? Three dinner invitations in one night? Sadly, I had to turn down the last one.

She made us a seasoned pasta dish with mushrooms, feta, parmesan, and caesar dressing.

I brought some seasoned seitan and sprinkled some dill weed on top + Sugar Cookie tea!

I have a love-hate relationship with Jack the cat.

Then she offered to make us dessert!

Banana bruleed in a brown sugar sauce + vanilla ice cream + chocolate chips (but the rum was missing) = BEST MOM EVER RECIPE!!!

Then I went to my other friend's house for dessert and wine.

Spiced pear compote with maple syrup. When I say spiced I don't just mean cinnamon, cloves, and nutmeg. There was also cayenne!

There was some leftoever and I had it with part of my breakfast. Guess what? My friend made me breakfast too! I had a bowl of cooked homemade grain mix with sunflower seed butter and the spiced pear compote + more maple syrup. I also had an orange and tried my first meyer lemon. It was actually really delicious and nice to have someone make me something for a change. Don’t get me wrong–I love to cook, but sometimes I like to be treated to. Who doesn’t?

Well this was my first week back in Richmond and I must say it’s been full of fun and has left me anticipating this upcoming semester. AHHHHHHH!!! I hope you all had a wonderful week. I’m going to have to catch up on all you lovely people’s lives now.

It’s a State of Mind

It’s been far too long since my vivacious mother has graced the pages of my blog! When I think of my mom I think of what someone who has a passion for life. She has this youthfulness about her and I believe it can be a state of mind. How you carry and perceive yourself really reflects a lot on how people see you. This brings me to my number one fashion tip: wear it with confidence! When you’ve finally decided what outfit you want to wear, or if you just threw something on, don’t forget to walk out your door with a good amount of self-esteem and work it!

First off I started my Thanksgiving day with some homemade granola!

Then we watched Breakfast at Tiffany’s. I had never seen that movie, and now I see why so many people love it!

My mom had some of the gourmet cashew toffee Holly sent me, a Fig Newman, banana, toast with sunflower seed butter (her first time trying it), and an arepa con choclo. Her and I actually split the delicious arepa. For myself I tried the chocolate Heart Thrive over some vanilla Greek yogurt, cashew butter, some Newman’s Own Organic dark chocolate, and a sliced banana. I think the Heart Thrives are getting better and better with each new flavor I try. I heated this one up and I loved the melted chocolate. This one in particular tastes like a cookie. Can you guess which kind? Then we got ready for some shopping!

The cooking class that day was entirely based around chocolate. Katie, I thought of you!

We were done shopping and decided to head home for some lunch. Well the day before my mom flew in I had decided to bake something for us.

The ingredients!

I used French Meadow Bakery’s gluten-free pizza crust! Pizza 1: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted eggplant. Pizza 2: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted red pepper and artichokes.

I must say that I was surprised at how normal the crust tasted. In fact, it didn’t occur to me till later that, “Oh yeah! This is gluten-free crust. Wow!” After lunch we were headed out again and I had forgotten something so I went back. Then I realized I had locked us out of the apartment and my roommate was out of town. Oops! Thank goodness through some guardian angels were watching out for me and my neighbors walked into the building at the right moment. They had a way of getting me into my apartment. Imagine poor Matilda waiting for us!

Dinnertime!

We each had Sunshine Burgers topped with diced tomato, seasoned avocado, and ketchup. I also sauteed some kale in balsamic vinegar and honey + grated parmesan. Lastly, we split a beautiful persimmon! I asked my mom what she thought of the Sunshine Burger. Her response: “DELICIOUS!” After dinner we got ready to go to the movies.

And I packed some movie snacks for us.

We went to go see Julie & Julia.

The movie made me smile so much because I totally feel the same way!

After a couple of hours of talking we headed home and laid our little heads to rest.

You are all so sweet and I’m incredibly thankful for each and every single one of you. I can’t remember exactly what sparked me to start a blog, but whatever that reason is – it doesn’t really matter. What matters is that it brought me here, with a bunch of wonderful friends. I hope you all had a wonderful Thanksgiving and are enjoying all the delicious leftovers. Cooking shouldn’t be a problem for the next few days!

What Makes You Smile?

I’m going to start this post off with something that made me smile about a second ago. I just had a most delicious cup of tea I got at a coffeeshop. I had green tea with jasmine & lemon.

So remember when I said that I always say I’m going to get a rain jacket and I don’t, and then it rains?

I finally got one!

When I got back from shopping I started to make my lunch.

I baked some sweet potato fries with Old Bay seasoning and cumin. I also baked some Gardein chick’n tenders as well. I squirted ketchup on both and sprinkled some curry powder on as well. I made something of Sophia’s but with a different texture. Rather than make her kabocha soup with bacon and goat cheese- I made it a mash with coconut oil. I also subbed out the bacon for fakin’ bits. And that cute little chocolate cup? This time I tried a Newman’s Own Organic Dark Chocolate Peanut Butter Cups. It tasted good, but I wasn’t too keen on the gooey peanut butter middle. I was hoping it would be a bit more solid.

I've also been working on my project.

I started carving some wood yesterday. And after about 6 hours of that I realized I want to keep my thumb – it was so sore!

Granola bar!

I tried another 18 Rabbit granola bar that was graciously sent to me. This time it was the Funky Figs & Cherries. First off, I love the names of the flavors – they’re so much fun! I just heated it up and crumbled it over some vanilla Greek yogurt, and dark sweet cherries. This one was also very granola-y, however the first flavor I tried (Cheeky Cherry Chocolate) is the best so far. I swore I also tasted some chocolate in this one. Silly me didn’t check the ingredients though! Oh well, what matters is that it tasted good, right?

I had a little mishap with my lunch.

I had been cooking some kale on the stove and I went away and completely forgot about cooking, until I smelled something burning! I quickly ran into the kitchen and took it off the burner. Although it shriveled up a lot, it still tasted very good. May I suggest sautéing kale in a mix of olive oil, balsamic vinegar, honey, and s&p? I also toasted a quick sandwich: goat cheese, basil pesto, and tomato with balsamic vinegar.

Yesterday, I got a bit of relaxing time in. I just did some beauty things and had dinner roasting and boiling away in the mean time.

I roasted some kabocha chunks, and boiled some edamame and quinoa pasta. I tossed it all in coconut oil, lime juice and s&p, then drizzled on some tamarind-date chutney. One word: yum. I haven’t had edamame in forever and I just found a great edamame succotash recipe I must try.

Now we're a little more caught up now.

This morning I decided to try the cranberry flavored Heart Thrive. I crumbled it over some vanilla Greek yogurt mixed with pumpkin puree. I also drizzled on some cashew butter and tossed in a handful of dried cranberries. To make the Heart Thrive less dry I heated it up in the microwave and spread on a bit of coconut oil. I must say I really enjoyed this flavor! It was perfectly tart and had a much stronger flavor than the others I tried.

I only had one class today, so that left me with plenty of time to run errands and prepare some things for when my mom arrives tomorrow. I’m so excited!

Quick lunch

I got home and I was so hungry so I had some hemp brownie bites while I quickly prepared my lunch. No, not special brownies! I followed a BBQ Shepard’s Pie recipe from the Sunshine Burgers website with the BBQ flavor. Basically, I roasted corn, some cubed potato bits, and mozzarella in the oven. Afterwards I just drizzled on some BBQ sauce. I also had it with some beautiful blanched kale. I love that green!

Tomorrow is Thanksgiving and I’m excited. Although I’m having a rather untraditional Thanksgiving (when is it not?), it’s going to be so nice to be with my mother. Since her flight comes in around 2, we’ll be having a Thanksgiving dinner. Which means she’ll be helping me in the kitchen! We make a great team. Anyway, I wanted to know what makes you all smile? I know for myself, it’s mostly the little things that cheer me up. For instance, when I take Matilda on walks I always notice the little quirks about Richmond. There are a lot of characters around here and they definitely make sure to leave their mark. Things like painted ice cream cones cut out of cardboard hanging on a string over a telephone line. I wish you all a wonderful Thanksgiving! Aside from having delicious food, I think the most important part is to enjoy being with people you care about. And being around those people can make a world seemingly filled with troubles, a much better place.

Ladies and gentlemen step right up! Wait a minute. This isn’t a circus! But you are more than welcome to come and read.

Hmm… where did we leave off? A-ha! After my breakfast fit for a king princess I got ready to venture over to the Farmer’s Market. I packed Matilda some treats since it was going to be a long walk.

I wore a skirt I found at a vintage punk store in St. Marks.

And some red shoes for a POP of color.

Then we were off!

Looking for the goods.

I had a couple things I was looking for: kale, persimmons, and winter squashes. They only had kale so I whipped out a quarter and paid. It was funny because the lady just held the bag in her hand and she mentally weighed it. Then I just went browsing around the other booths. On Sundays the Farmer’s Market has mostly artisan and vintage items.

I love those shopping bags that say "Thank You" all over them. Thank you thank you thank you!

On the way home I decided to walk a different way and I saw some pretty neat things.

Pumpkin kale soup + toast + cashew toffee

I mixed in some coconut oil and my leftover sweet & sour lentils in the soup to make it heartier. On the toast is the delicious medley jam Holly sent me, and I had some plain slices with butter. Sometimes I just want simplicity. Maybe I’m coo-coo but often times I’ll eat things plain because I don’t want to forget what it tastes like. I feel like if I forgot what something essentially tasted like then that would interfere with my knack for thinking of flavor combinations. Anyway, I also munched on the cashew toffee, and I realized that it’s read “Christine’s” and not “Christmas” (what I previously thought).

Afterwards lunch I felt like shopping. I got something so I can be a Russian snow-bunny. I got a lot of painting done as well, and went to the grocery store to get some more things.

Lazy Sundays call for lazy dinners.

I roasted some kabocha (finally found one again) and carrot slices. I put coconut oil on half of the kabocha chunks and sunflower seed butter on the other half, but I drizzled all of them with maple syrup. The roasted carrot slices were delicious and I just put sea salt on them! I also baked a Barbeque Sunshine burger. I really enjoyed the distinct flavor this one had! I definitely tasted the smoke flavoring, and it’s really interesting to see the combination of ingredients they use to get that barbeque flavor. I topped it with my favorite BBQ-sauce.

Well, right now it’s a rainy Monday morning and I’m about to head off to finally get a rain jacket! I always say I will, then don’t and then it rains. But before I go I’ll leave you all with this morning’s breakfast.

Woke up to a little love.

I tried the Apple Heart Thrive this time around. I had it with vanilla Greek yogurt (ridiculous sale price=me stocking up), apple sauce + cinnamon, Newman’s Own Organic dried apples, and crunchy peanut butter. So far the one quip about these Heart Thrive bars is that they are drier than I prefer. There’s  nothing wrong with the flavor, just the dryness factor. Atleast I’ve got things like coconut oil and nut butters to moisten them. I also have to make a note about Newman’s Own Organic dried fruit. They are awesome! They’re not overly dry how some dried fruits can be. There’s still a chewiness and plumpness to them.

Okay so I hope you all have a wonderful beginning to a fabulous week! I know everyone must be excited about Thanksgiving break and getting to enjoy all the seasonal eats. My mom is flying into town on Thursday and I can’t wait for some mother + daughter + Matilda time! Not to mention, it really helps turn away any winter blues when I hang out with someone (my mom) that thinks I’m the coolest girl on this side of the galaxy. My mom is like a ray of energy and can make anyone feel special and cared about. She also loves herself and what’s not to love? It’s only natural that as her daughter she’s given me plenty of her infectious injections of self-love and acceptance.
