Still Soaking Up the Sun

Where has the time gone? It’s seeming to escape me! Anyway let me get down to business. Where was I? Ah yes, recapping my spring break in Florida!

Lots of overnight oats were had, and my friend even tried it (and liked it!)

She also started putting nut butters in her oats! There’s no looking back now hehe.

I made my overnight oats with something new my parents had in their fridge.

At first when I tried the Wild Wood Soyogurt itself I didn’t really like it. But it started to grow on me, and it definitely didn’t taste funky in my overnight oats. So the oats were soaked in this yogurt with raisins, rose water, and cinnamon. Topped in the morning with coconut milk, pistachios, and a sliced banana.

Packed sandwiches, nuts, and some veggies for the beach.

It was so windy that my sandwich became a real “sand”wich! After the beach we headed to the local discount healthfood store.

I got some new things to try...

I also snagged a can of organic pumpkin puree since it’s rare to find one nowadays. I also finally got myself some of my favorite candies… Ginger People’s crystallized ginger m’mmm. I love letting these soak in my tea. I also spotted the Luna protein bar and I got the flavor that appealed to me the most (cookie dough). It was okay, but I don’t think I’m really into the texture of those kinds of bars. I’m more of a whole ingredient bar lady. All of the other goodies are new to me except for the coconut water.

I also stocked my freezer up. Can you tell I'm a college girl?

My favorite sandwich bread for PB&Js!

My friend couldn't decide which chocolate to get so I made it easy for her and exclaimed at this one! SOOO DELICIOUS!

I just had to marvel at the colors!

I had the leftover curried tofu my mom made, a sweet potato with cinnamon and coconut oil, and a salad with a homemade blueberry vinaigrette. Delicious thrown together meal.

More overnight oats + aloe vera on the side

Toppings: coconut milk, Kashi GoLean Crunch, sliced banana, pistachios, and a strawberry compote with honey

Holy yum! I loved the various textures in this breakfast and the fresh flavors. Strawberries and bananas are a fruit combination that never fail.

I made us a nice lunch before we headed out to go shopping!

This turned out to be so flavorful!

I wanted to fix the tofu so it’d be like orange chicken. I found a recipe that sounded good, then added some veggies and cooked some egg noodles. Then we were out!

`

I took her to Paul, a french bakery franchise.

Rainforest Cafe can get a little crazy... especially if I'm there!

Let’s just say I had a lot of fun going around the store with the hand puppets they sell. What can I say? My imagination is still going strong.

Tried on an amazing Alexander Wang dress.

We had a very successful shopping trip, and left the mall elated with the "shopper's high".

Check it out!!!

We got home and had dinner.

Mom made rotkohl (red cabbage) with apples, pan-heated parathas, avocado, and I quickly fried some tofu with a Key Lime Ginger sauce.

And while I was in Florida I enjoyed dates (organic on sale for $1!) with the cashew-macadamia butter I made for my mom.

I have to admit, that date looks inappropriate, but I’ll just leave it at that haha. Anyway, I’m still not done recapping my break down in Florida. So hold on to your seats because there’s more to come. I just hope my next post is sooner than later! Next thing you know it’s going to be April already.

Remember That Time?

I’m doing something special with this post–inspired by others’ blasts from the past. Hold on tight ladies and gentlemen, it may be a bump ride!

I became a jet setter at four months old--flying from Germany to Colombia

In the mountains in the Bavarian region of Germany.

Being a coquette in the English Garden.

Princess Katharina? Simply too exhausted to walk any further I ended up being carried around the Pergamon Museum in Berlin. Mwahaha!

Glamor shots and missing front teeth go hand in hand don't you think?

Fondue!

Wow such a long time ago--this was when the London Eye was put up.

Friends since we were babies--standing in one of the neighborhoods of our hometown.

Thirteen years old, taking a cat nap before I venture out around Paris again.

Spinach soup all over my face--proof I always loved my veggies.

Who knew I’d grow up and cook my grandma’s delicious soups myself. Now let’s blast forward to the… near present!

Favorite snack as of late: granola + some soymilk + banana peanut butter + microwave = warm bowl of pure goodness.

Homemade falafel balls + homemade tzatziki over a salad, and a nice warm chunk of garlic buttered Italian bread.

Frozen caramel Oikos

I followed Katie’s advice and this lady definitely knows what she’s talking about!

Classes cancelled on Monday = Pancakes for breakfast!

I loosely followed Kath’s recipe for whole wheat yogurt pancakes. Some of them I made with bananas, chocolate chips, and even blackberries.

Pancakes themselves had coconut oil then the other toppings came: fro-yo, caramelized banana slices, cinnamon, sliced almonds, and maple syrup.

Monday was a day of killer eats!

I made mushroom-manchego quesadillas and I made my own salsa verde. I also made a salad with a sesame oil + honey + lime juice dressing. This lunch was incredibly delicious and I don’t think I’ve ever had a quesadilla quite like this.

I wish I could share these with you!

The manchego was aged six months so one would call it curado. In other words, cured, which gave it a nice nutty and tangy flavor that went well with the juicy cremini mushrooms and fresh salsa verde.

I de-seeded a pomegranate the old-fashioned way--a calming activity for me that takes patience.

My friend said she was craving Asian noodles the other day--which reminded me that I have some noodles just sitting in my pantry.

Maybe some of you remember when I use a freebie coupon to try out a Gardein product. I tried the beefless tips since a recipe I made a while ago called for them specifically. Hmm… how to use the rest? I made a sesame “beef” noodle stir-fry with mushrooms and bell peppers over egg noodles.

Chopstick action!

Yogurt + Cranberry and Walnut granola + caramelized blood orange

I tried Liz's favorite Phinney 3400 flavor.

This was curiously delicious! An interesting combination for sure, not just with flavor, but textures as well. This was so nice to have melt in my mouth and then I’d discover the bits of fennel throughout. Have you guys checked out Theo 3400 Phinney flavors? I told Liz that I carried this bar with me the whole day and would have wonderful little moments just savouring it and imagining that everyone else should be jealous!

Getting ready to face the snow with my Russian hat and walk to my classes.

Canton "beef" and pineapple

I followed this recipe that caught my eye. My roommate’s boyfriend said that whatever I was cooking smelled yummy, and I agreed! So that was the last of my bag of Gardein beefless tips and I’ll give you the review. The first time I tried them they didn’t really seem that strong in beef flavor, mind you I hadn’t had cow’s meat since I could count my age with both hands. However, with these last two recipes, that flavor came back to me. I was thrown off by this a little bit, but that’s the point of the product, right? Well, not to throw you off, but to recreate the flavor. They succeeded, but personally I like to stick to non-imitation products. However, this line caught my eye because they offered things I hadn’t seen available to vegetarians before and as everyone knows–I’m very very curious! Moreover, I think this product would be wonderful for meat-eaters trying to cut down on their consumption of red-meat without having to say good-bye to the flavor.

So there you have it folks! This post was all over the place and I feel like it should already be the end of the week. Is anyone else feeling the same way? Anyway, I hope you’re all enjoying it nonetheless!

p.s. for all those grilled cheese lovers out there (I’m looking at you Lauren) I found this inspirational story over here. I promise you won’t be disappointed. Perhaps you’ll be left with a rumbling tummy saying, “feed me.”

Getting My Groove Back

Pilar came over and we did some crafts and watched The Little Rascals.

Watching that movie made me realize how much we grow up as people and how perspectives change. When I was taking the Taoism class, the “ideal” state of mind was the one of a child – simple.

I think as a child I would've eaten this still!

I probably wouldn’t have sat there admiring all the colors, textures, but I definitely would’ve appreciated the taste. Reminded me a bit of a childhood favorite, peaches-n-cream.

For dinner we wanted to go out on my last night. I found this amazing sounding restaurant called Emunah. Let me tell you a little bit about it. It’s a kabbalistic cafe and teabar, “the intention of café emunah is to offer an experience for the senses, & an oasis for the mind, body and soul… a physical journey into your spiritual self.” With things on the menu like Artichoke Expansion, rolls with candied ginger and crisped plantains, Vegetarian Encounter, and Chai Tea Creme Brulee… I got excited to go! We headed out but when we got there we found out that they do respect the Sabbath day so they didn’t open their doors till an hour after sunset. Well not to worry because on the way there we spotted a cozy Italian bakery, so we checked it out.

The Italian bakery

The place was very authentic and they even had live television from Italy. I saw so many almond delights – hello marzipan! They also had colorful pressed paninis with cheeses, sun-dried tomatoes–the works! I even spotted lots of fresh panettones. Not to mention, we were the only ones there who weren’t Italian.

Can't forget the desserts!

A cup of coffee to go along with...

We got some cookies that sparked our curiosity.

My favorite was the one on the top left! That one was so soft with marzipan and dusted with confectioner’s sugar. Delicious.

A real cheesecake!

This was so good and so easy to savour. Rich in texture and subtly sweet.

I had to take a picture of this beautiful torte.

I love the use of crabapples as garnish!

Last night in Florida... until next time!

We came home and since my mom would be alone this coming week I wanted to make things a little easier for her.

So I made an Asian stir-fry

I think Mom was proud of me and I was not use to being photographed while cooking haha! I better get use to it, right?

I also made a ratatouille for her.

I also left some things diced and sliced so she won’t have to worry about food prep. Food prep is such a relaxing and quieting experience for me, but for some it can be a hassle. I think I may start buying pomegranates because I love deseeding them. Well that’s not the only reason hehe!

A Reese's ice cream bar... it barely had any peanut butter!!!

From the ice cream bar selection at gas stations the Strawberry Shortcakes ones are my favorite. What are yours?

Holy moly snack!

I am so glad this idea crossed my mind! I used Sunland’s caramel peanut butter as a dip for the apricot pumpkin Pranabar.

Now that I’m back in Richmond here’s what I’ve been up to…

Trader Joe's with my roommate!

She found some inspiration for a color palette for some jewelry all thanks to these beautiful pearl onions!

Yesterday was a crazy errand running day. I should just call it Crazy Errand Running Day! I was literally running errands from after lunch till around 9 pm. But it was fun though! I love busy days that have you feeling accomplished. After I was done with my errands it was time to meet up with some of my favorite ladies!

Camera shy Pantene Pro-V model?

Taking pictures of each other taking pictures!

My stomach is sore from laughing thanks to them haha.

It was half off sushi night!

Apparently everyone in town and their mother knows about this because we sucked it up for two hours to finally get a table. Atleast we had each other, a bar, and a super cute bartender to keep us company!

Then my opera singing lady showed up. She's going to be the feature of an upcoming recital! Oh and there's our cute bartender!

What's this? A miracle! We finally had a table!

We were finally seated around 12:30 so we had sushi as a midnight snack!

Since it was half off we ordered a bunch of things and shared. I ordered the Garden Balls – shiitake mushrooms, red peppers, green peppers, jalapeños, cilantro and spicy rice in an inari pocket then tempura fried. So good!!!

So now I’m just sorting things out, getting use to the weather (which hasn’t been too bad), and hanging out with friends before my semester starts back up again! I hope you all had a great start to your week yesterday. My dad’s birthday is coming up in two days and I haven’t got a clue as to what I should do! Hmm…

p.s. check out one of the most exciting giveaways I’ve encountered so far!!! Iowa Girl Eats + Amy’s = Amy’s Kitchen Giveaway!

The Summer of Salads

The other Saturday I got out of my class (yeah Saturday class!), and biked over to an outdoor market called Antiques on Broad. I was starving so I had Kim meet up with me and bring me some biscotti and Matilda (didn’t eat her though).

We just browsed around and found some inspiration for our apartment. A couple posts ago I was talking about summer coming to an end, and how that means less cold salads to enjoy.

A Mexican inspired salad

I just mixed in some rice, romaine, tomato slices, white beans, corn, cauliflower, red onion, cilantro, and sour cream. The only thing that was missing was avocado!

So this salad had romaine, tomatoes, corn, red onion, black beans, cilantro, sour cream, bulgur, and cilantro dressing! Yum yum yum. I love buying a big head of romaine lettuce from the fresh produce section rather than the bagged kind. It’s a lot cheaper too.

I haven't cooked tofu in ages.
I haven’t cooked tofu in ages.

For this tofu I just coated it with unsweetened coconut flakes and agave, then fried it on the pan with some chopped red onions. I laid out a nice bed of romaine and tomato chunks, and used a sesame ginger dressing. On the side I made my first tomato sandwich! I added a little something special: Old Bay Seasoning. This meal was so delicious and refreshing. What a summer meal should be, no?

Putting the rest of my tofu to use.
Putting the rest of my tofu to use.

This is the first time I made stir-fry with noodles – I used egg noodles. I’d say this was Thai inspired. I stir-fried some broccoli, corn, carrots, tofu, garlic and onions in sesame oil. Then I added some lime juice towards the end and garnished it all with cilantro and sesame seeds. My dad brought those chopsticks back when he was opening up an office over in Hong Kong. Jumbo is a floating restaurant that serves Dim Sum. I think it’s a major tourist attraction over there.

In recent news, my mom went to Colombia over the labor day weekend. I wanted to go with her but I have that darned Saturday class! I really miss her. She said that she would visit me this month, and all of my friends up here want to meet her so badly! My friends that already know her want to take her out for drinks. Then my guy friends all have a crush on her. She just radiates a lot of love I guess! It’s funny because when I was in Germany after high school my friends would still hang out with her even though I wasn’t there. I also have some more travel related news! My friend Sway and I are planning a trip to Europe over the winter. I haven’t gone back there in a couple of years, so I’m extremely excited about this!!!

Anyway, I’ll leave you all with a midnight snack.

Boast about your Toast

Go in this direction when cleaning your eyes.

Go in this direction when cleaning your eyes.

The summer I was fifteen years old I decided to go to beauty school rather than the usual summer camp. My mom actually came up with this idea! She was like, “would you rather go to beauty school or summer camp… again?” So of course I wanted to be like Frenchie from Grease, minus the drop out part. I learned many divine secrets of the ya-ya sisterhood, and once in a blue moon I decide to share these tidbits. Well, readers, tonight is one of those nights! I know some people are concerned with the wrinkles emerging around their expressive eyes. Here’s a little secret that was passed on to me: when cleaning around your eyes, go outward for the upper lid area and inward (towards the nose) for underneath. Basically, in a counter clockwise motion. Also, it’s best to use your ring finger since it puts the least amount of pressure. Makes sense, huh?

What are your beauty secrets?

A basket full of goodies.
A basket full of goodies.

These are some of my favorite beauty products that I use. I started using pond’s cold cream when I found out that is one of my grandma’s secrets. So many secrets in this post! I won’t divulge her other one though. The round thing you see is actually a solid shampoo by this company called LUSH. All of their products are handmade and they use fresh, organic fruit and vegetables. And whenever I’m down in Florida I use some of my mom’s stuff too, like her Kérastase products. Neela knows what’s up and also uses this brand!

The big kahuna!

The big kahuna!

Coconut oil can be used for so many things! Sometimes I even use it to remove my eye makeup. For the most part I leave it on my hair overnight and wash it out in the morning. It leaves my hair feeling and looking incredibly soft! Umm did I mention that it tastes delicious too?

However, I think the best beauty secret is a glass that’s half full… half full of what? Positivity! I find that looking at the bright side of things and keeping stress at bay is a big contributor to aging well. There’s this look of calm, grace, and innocence that I can see in people’s faces when they have this attitude. Being around people like this bring my heart level down, not out of boredom, but because they’re exuding all these good vibes. Less tension equals a less tense face!

What is beauty? Not the show
Of shapely limbs and features. No.
These are but flowers
That have their dated hours
To breathe their momentary sweets, then go.
‘Tis the stainless soul within
That outshines the fairest skin.

–Sir A. Hunt.

All this talk of beauty led me to thinking about habits I want to change – have been changing. There are certain things that seem unimportant that I really want to develop. Like little things that involve me taking care of my outward appearance. Oh say… putting on lotion, plucking my eyebrows, pampering myself with hair masks. It’s these silly little things that I know will slowly help me regain my confidence and just feel better about myself overall. I think it’s more the idea behind these activities: self-love. I can’t help but feel good inside. Why don’t I deserve to take some time out of my day to indulge in a little princess treatment?

On the topic of self-love, there’s been a wonderful message going around the blog community. Caitlin’s Operation Beautiful has been spreading like wildfire! I love seeing everyone’s notes. The other day I left some of my own around town. They don’t necessarily have to do with loving yourself per se, but it’s the thought that counts!

Later on I went over to my best friend’s house to celebrate a special one year old’s birthday! I also found out one of my good friends is two months pregnant! I’m looking forward to going on our girl’s nights with the baby! Oh my gosh I should get back into crocheting and make something really cute. She doesn’t know if it’s a boy or a girl yet, so maybe I’ll wait.

For Saturday I wanted to make something special. I figured this would make up for not having been able to really celebrate Father’s Day. I decided to make French Toast with a couple of twists. Let’s just say I was inspired by Indian sweets and colonization gone semi-vegan! For the bread I decided to use Trader Joe’s crumpets and I followed a vegan recipe for the mixture.

Man, this French toast has been dog piled! I sliced some strawberries, chopped some macadamias, sprinkled fresh ground cardamom seeds and sugar, and drizzled a bit of maple syrup on everything. Cinnamon sticks can make anything look fancy, but my favorite part is the gooseberry I’d like like to call a little edible beach ball.

Once I started eating it I thought of something else I could add to this! As if there isn’t enough?

I put a modest spoonful of fig preserves on top.

My mom joined me mid way through my breakfast. She was running late because she had a session with her personal trainer. Mom is super fit, so don't mess!

After this delicious breakfast I got ready to go to my favorite yoga class. The instructor is incredible and I feel like every time I go to his classes I learn something new, even if he repeats the routine. By the time me and my mom got home we were hungry and ready for lunch! So we whipped up something as quick as we could. Her and I are a dream team in the kitchen. I took care of the veggies, while she handled the rest.

I was feeling pretty simple so I opted for some slices of toast with butter, apple butter, and my forgotten favorite – honey!

I just updated my MacBook Pro and it is so cool! I almost feel like a got a new laptop. Insert holy music!!!

I’m so excited about my next post! I’ve tried so many things over this past weekend and I have a few special shout-outs to some of our beloved  bloggers. I hope you’re all relaxing on this sunday evening and wake up on the right side of bed tomorrow morning.

Stir-fry and Goat Cheese

IMG_3080

This was my lunch awhile back but I just wanted to share the goods. I made a stir-fry with red cabbage, chickpeas, summer squash, and I forgot what sauce. I love red cabbage in my stir-fries. Actually, a really yummy addition to stir-fries are pomegranate seeds! My mom likes to do that, and it adds this delicious splash of flavor. Now! The toast was my favorite part of the meal. I had some goat cheese leftover from the pizza I made, so I thought, “hmm… why don’t I put this on top of some bread?” So I toasted some bread, spread on some goat cheese, and put on some of Trader Joe’s Rosemary Marcona almonds. I also sprinkled on some extra rosemary because I can! Have you guys ever had rosemary bread? If you haven’t, I highly highly recommend it! You can try baking it yourself and dipping it in a mix of olive oil and fresh ground black pepper. It’s seriously to die for.
