Build Me Up Butternut

The other day I received a package with no return address and a secret admirer was the sender.

My heart leapt with joy because I knew it had finally arrived! My friend–whom I stayed with when I was in New York–had sent me a package awhile ago. I knew it was from her when I read that it was to her chickpea; she’s deathly allergic to them so it was a joke. Isn’t that unfortunate though? To be allergic to chickpeas… Oi!

There was a surprise beneath every layer.

I am seriously blessed to be surrounded by such wonderful people. Really and truly, every day I am given so many reasons to smile. From random bump-ins on the street, to constant messages from dear friends, and to comments I get from you all. Speaking of comments, my mom finally left her first reply in my last post! Whenever I’m in Florida we sit around the kitchen table and I’ll read my posts out loud to them. This blog makes them smile :)

It just so happened that before I opened the package I turned on the burner to heat some water for a cup of tea.

The chai tea was delicious and flavorful with all its spices. I had it with a warm lemon poppyseed Heart Thrive + coconut oil. After the picture was snapped I decided to spread on some cranberry preserves as well. This is the best way I’ve enjoyed this flavor of Heart Thrive. For some reason, it just tasted better this time around.

Dinner was something I was very much looking forward to... more so than usual.

Not too long ago while blogreading I checked up to see if the lovely Angharad was still alive and kickin’. Indeed she was because I saw a new recipe that I knew I had to recreate! Ladies and gentlemen, introducing the spicy black bean burger. This sounded like an amazing recipe to make on a Sunday night, since it’d be convenient to have these available on busy days. That night I had it in a handmade flour tortilla with bell peppers, homemade salsa verde, cilantro, and since I had no sour cream on hand I just used Greek yogurt. This was actually a surprisingly good substitute since the yogurt is thick and tart. As the patties were baking, my roommate and her boyfriend exclaimed how good it smelled. Well now I can say that they taste even better than they smell! Though the truth is, I don’t think Angharad could ever give us a bad recipe even if she tried.

A new twist on my favorite snack as of late.

Instead of using granola I nuked a crumbled lemon poppyseed Heart Thrive in the microwave with some soymilk till it got nice and soft. Then I added white chocolate chips and cashew butter. I am so glad I opened up this glorious bag of white chocolate chips!

Another surprise in the mail from a very dear friend of mine.

I’ve heard so many praises about this cookbook and now I know why!!! There are so many incredible sounding recipes, where’s a girl to start?! Thanks so much Liz! The ideal situation would be to invite every single one of you over and we’d all choose a bunch of recipes, then hunt and gather, and prepare and enjoy a most glorious feast. Imagine that? Being surrounded by that many awesome people and amazing food.

After having my critique (my piece was the only left to be critiqued) postponed three times–I was ready to get it over with! But I knew I had to start the day on a delicious note and the rest would fall into place. I had a bowl of yogurt, mango bits, pomegranate arils, a warm apricot Heart Thrive + coconut oil, and Sunland’s banana peanut butter.

Yeah, I think a yogurt mess was a great decision!

Oh and the crit went really well!!! It’s always nice to hear other perspectives and suggestions. The class actually answered one of my doubts of whether or not I should’ve made the video longer–they wished it was!

More randomness!

I had to have another  spicy black bean burgers! This time I filled the handmade tortilla with butternut squash, avocado, cilantro, manchego cheese, tomato sauce, and red pepper jelly. Can I get a witness?? This was so pleasing to every kind of taste; sweet, savoury, spicy, tangy, straight up delicious.

Couldn't get enough of the butternut!

When I was looking for falafel recipes I stumbled upon a few sweet potato ones. So this led me to making a falafel wrap with butternut squash, cucumber slices, tomato slices, avocado, cilantro, fresh tzatziki, onions, and lettuce. Yum yum yum and more yum!

One of them was a banana pancake and I chopped some dark chocolate on top. Coconut oil, cinnamon, and Apple & Maple syrup was spread on all the pancakes. The other two pancakes were topped with diced apples and confectioner’s sugar mixed with nutmeg. On the side I also made a dip for the apples; a mixture of Sunland’s banana peanut butter and yogurt. I’ve seen this done on some blogs so I thought I’d give it a try–and I shall try, try again. This was good!

Tried something totally new...

I have never had buffalo wings in my life so when I saw that I had one more Gardein freebie coupon left, I thought I’d give their vegan “buffalo wings” a chance. But I had no idea what they were usually served with. After “researching” it I decided to transform my tzatziki sauce into a ranch dressing by adding some extra ingredients. I also made some Old Bay season yam fries; and steamed some kale, seasoned it, massaged it in olive oil, and topped with avocado slices. Spicy!!! I can’t tell you if these were authentic tasting or not, but I can tell you that I liked them! The texture wasn’t too funky (+ no bones!) and you could taste the vinegar in the sauce, which I didn’t mind. Actually, after looking up some buffalo wings recipes, vinegar is a common ingredient.

Whenever I pull out my personal casserole dish I swear the stars instantly align!

In the dish: roasted butternut squash and yam (tossed in coconut oil and cinnamon) + avocado + kale + homemade falafel balls + tzatziki mixed with tamarind-date chutney + cilantro. Random and flavorful. I love the sweet and spicy combo of the tamarind-date chutney; it brought the tzatziki to whole other level.

After my last post, the rest of the week seemed to fly by. Something or someone out there is listening! It’s Friday and I have no idea what my weekend plans are. My choices are: go up to Charlottesville or stay snowed in the comfort of my own home. We’ll see, we’ll see. Now if only I could stock up on this no matter how my weekend pans out…

Two nights ago it was First Friday around here. I’ve mentioned it before on the blog, but it’s a night where all the galleries in the area show off their new exhibitions. The streets, venues, and restaurants are all busy with people dressed to impress.

I went with the pup and hung out with my roommate the gallery she works at for most of the time. Matilda was definitely the star of the night. Everyone just went up to her like she had some sort of magnetic powers. I’m almost certain that she possesses some unearthly gift that makes her so incredibly captivating.

Saturday mornings for me usually mean an effortless breakfast before my 9 am class. I just warmed up some soymilk with Nature’s Path vanilla almond granola and strawberries. Effortless but delicious! Some of you have mentioned that their Pumpkin and Peanut Butter flavor granolas are yummy. I think I know which two flavors I will be trying out next!

Another Accidental Vegetarian recipe!

The recipe was Moroccan Spaghetti, but I didn’t have any spaghetti on hand so I just used penne. I spiced the sauce and chickpeas with turmeric, cinnamon, and cumin.  I made sure not to use too many mint or cilantro leaves. The chopped almonds added a nice crunch to my lunch. I decided to go on a nice walk with Matilda to meet up with an old friend of mine for some serious catching up over some apple cider.

Did you guys know that Ina Garten absolutely hates cilantro? She refuses to use it in any of her recipes. So if you Googled the words cilantro and Ina Garten, you would come up with no recipe but rather information on how much she dislikes this herb. I use to not like cilantro either, but over time I guess you could say that it’s become an acquired taste.

Is there something any of you use to dislike, but have later come to appreciate?

My friend and I caught up on all our guy issues and reminisced over high school memories from 7 years ago. It’s crazy to think how time seems to be going by faster and faster. For time most part I just stay in the present, but sometimes I get overwhelmed with thoughts about my future and where I want to end up in life.

Riding Out the Common Cold

G’day to you! I am currently fighting a cold so I’ve just been trying to get my rest and taking it easy.

My mom’s friend never used the machine so she gave it to my mom – I think she knew there was a vegetarian in my mom’s household. I can make other milks with this machine as well. My next endeavor? Almond milk! I tried making oat milk once, but it was very watered down. Once it’s done working it’s magic, an electronic version of ‘Ode to Joy’ echoes around the apartment. The result is very “soybean-y” in flavor. I personally don’t mind it, but some friends of mine do.

The other day I was feeling quite lazy and I decided to finally bake the frozen Kashi pizza that’d been sitting in my freezer since I moved into my apartment.

It sounded good, but I wasn’t fond of this flavor. I’m always weary of the way frozen pizzas taste and I usually don’t get them because of this. However, I have heard many good things about Amy’s frozen pizza. One thing I do recommend from Kashi’s frozen food selection is the Mayan Harvest Bake. I did have leftovers so I tried to make the best of it by personalizing it.

This time I crumbled on some goat’s cheese, mushrooms, and threw on kernels of hominy.

In case you’re wondering, that’s the best BBQ sauce on the broccoli.

Here are some things I’ve been enjoying with my batch of homemade soymilk.

Breakfast was inspired by a pear strudel recipe I stumbled upon.

I used Nature’s Path vanilla almond granola with soymilk, and topped it with a pear, date, and goat cheese crumbles. Then it all went into the microwave, which is why the pear slices look brown.

Another special bowl I found the other day. I mixed in a packet of U.S. Mill’s cinnamon raisin oatmeal with soymilk. Then it was topped with a sliced banana and the last of my sample of Artisana coconut butter. And what’s in the teapot? A few cups worth of replenishing green tea.

What's this?

Well, I finally got around to opening up the box of Aztec Crunchy Corn & Amaranth cereal that the lovely folks over at U.S. Mills sent to me. I tried it alone first to give you guys an honest opinion. My honest opinion? I would prefer it mixed with another cereal. So that’s exactly what I did.

IMG_0090I mixed the cereal with Nature’s Path hemp plus granola, warm soymilk, and wild blueberries. I think corn and blueberries are very yummy together.

I also went on a bike ride today with my friend through Hollywood Cemetery. It’s such a beautiful place and overlooks the James River. Legend has it that a vampire is buried there. A strange coincidence happened while I was there…

I don’t believe there is a cure for the common cold, but I do believe there are things to aid in a speedy recovery. Some things I’ve been doing? Getting fresh air and rest, staying hydrated with water and tea, getting enough vitamin C, and eating miso soup. Anything that’s comforting. Another thing that helps is mind over matter and snuggling with this stuffed animal…

Happiness Often Sneaks in Through a Door You Didn’t Know You Left Open

Hi guys! I’ve been quite a busy girl lately – thanks to school. I’m learning so many things this semester that I want to share with other people! That’s always a good sign, don’t you think? I haven’t just been on the “learning” end of the deal either though. I’ve done some teaching as well! Not necessarily in a classroom setting, but instead I’ve been flourishing in my interests and sharing them with other people. For instance, now a lot of people know that I actually have a passion for cooking; I decided to make a cooking album on Facebook. I think a lot of people were surprised! I’ve also made a new friend that I met at a yoga class. It’s nice to meet people in a setting where you are doing something you truly enjoy, because you’ve got that in common. Then when you hang out and get to know each other, the friendship just grows into something incredible! And now that I’ve been kind of absent for a couple days, I think it’s only fair to share with you all what I’ve been up to. Can’t leave my friends in the dark now can I?

I topped the “soft-serve” with Zoe’s Cinnamon Raisin Granola, some more banana slices, and chocolate sprinkles. I’ve seen a lot of bloggers incorporate chocolate chips in their breakfasts, and this is me making due with what I’ve got! Actually, it’s very appropriate since underneath it all is an “ice cream” of sorts.

I changed the ingredients just a smidge for the banana ricotta soft-serve. Rather than vanilla extract, I used coconut extract. Wow! This was also heavenly. I got the soft-serve to stay in it’splace by putting an apple slice underneath – improvising here folks! So what are the layers? Let me start from top to bottom: crunchy peanut butter, Erewhon’s Cocoa Crispy Brown Rice, banana ricotta soft-serve, apple slice, and some more of the cocoa crispies.

For this meal I wanted to do something out of the ordinary.

I love the freshness of this! I never cease to be amazed by the color palette nature offers us.

This sandwich is on Cranberry Cinnamon Swirl bread and filled with eggplant, cheddar cheese, and mango chutney. I wasn’t sure if the eggplant would taste good with my favorite grilled cheese combo. How was it? Incredible!!! Definitely worth boasting about. I just remembered at a restaurant I went to they had breaded eggplant with an apricot coulis – so I thought I could try this. I’m glad I did!s

Ak-mak crackers with cream cheese and edamame hummus, sprouts, grape tomatoes, and cucumber slices. Yum!

I roasted eggplant, parsnips (first time trying them!), and grape tomatoes; sautéed the onion. Then I just plopped some ricotta on and it all went into the toaster oven. After it was done baking I garnished it with some basil. I really like parsnips… a lot! Funny story with the basil. I got those leaves from a basil plant that’s growing out of a crack in a sidewalk. The plant is huge and full of delicious leaves! Nature’s way of breaking through despite what man builds on top.

After happily eating my personal “pizza” I headed over to David Schultz’s CD release show. At the beginning they showed a brief documentary of their recording process, and their experience of life as musicians.

This salad consisted of a Falafel Sunshine burger, red onion, tomato, an apple, avocado, sprouts, romaine, and cilantro dressing. Oh! I also squirted some ketchup on the burger. The addition of the apple in the salad was awesome! On the side I had the rest of the apple with a glass of cold soymilk. Perfect for an unexpectedly hot day. Oh man, I feel really stupid. In my review of the Sunshine burgers I said that they had corn. Well, that’s what it looked like! Then I read the ingredients and I believe those are actually lentils. So sorry for the misinformation. My opinion on how great these are didn’t change though – so no worries about that.

My Sunday was filled with lots of studying! But I managed to squeeze in a dinner at the school cafeteria with a friend. Since I don’t have a meal plan, I rarely end up going. My friend, Jonathan, invited me to dinner and we got to catch up on things. I also gave him advice on finding a roommate and which rental companies to stay away from. This is his first year in college so he had a lot of questions, and I had a lot to say!

Everytime I go here, I feel like it’s my first time. There are just so many choices – they even have a vegan and gluten-free area.

I got a bowl filled with snap peas, mushrooms, water chestnuts, onions, cucumbers, chickpeas, and hummus. I love their hummus! I actually was planning on bringing a tupperware with me to hijack some, but I forgot it at home. My bad! I also got another plate filled with spiced carrots, veggie pizza, mock ribs in BBQ sauce and peppers, a slice of Italian bread, a vegetable medley pasta (completely tasteless). I also tried some gluten-free French toast sticks – they were awful! I can’t remember the last time I ate something that disgusting. I was actually contemplating spitting it out, but we were in a public place.

Let’s see… what other things can I share with you all? Oh yes! I’m not sure if you guys know Jenny but she has an awesome blog that will make you hungry just looking at it! Recently, she put together a “best of” oatmeal post. Check it out! You will be inspired by all the wonderful creations all the bloggers have concocted. And trust me, this is way better than any “Best of” VH1 ever aired.

As for me, I’ve got my critique I told you all about, tomorrow! I’m looking forward to it now. Things are finally starting to calm down a little with my schoolwork load. And in 2 weeks I will be going to my parents’ house down in Florida for my 4-day weekend!

We Eat What We Like

In this smoothie is a packet of Amazing Grass Chocolate Meal Shake with a frozen banana and some vanilla. It actually wasn’t too shabby. I definitely could taste the greenness of it, but the banana helped balance it out.

In the background you can see a little bag of Hazelnut Sweet Chips from Kay’s Naturals. These were so yummy! I mixed some in with my yogurt and blueberry puddle. I also enjoyed these with another treat that I’ll be sharing with you in another post. I also tried something new with my yogurt. The people at NuNaturals sent me some items to sample and review. Thanks guys!

I put a few drops of the vanilla stevia in my yogurt. It was a nice addition to my blueberries, and just the right amount of sweetness. There was no weird aftertaste either. Stevia is such an interesting sweetener. I went to a garden once and I picked off a stevia leaf and I could taste the familiar sweetness. My roommates parents actually have a stevia plant, but we’re not sure how to use that. Does anyone else know?

Okay, I’m not quite sure where to start with my eats… so let me just randomly choose! I hope you’re in the mood for something Mexican.

I wish I could eat cabbage raw without suffering the gaseous consequences. I would probably make so many different kinds of slaws.

In my old place when I first moved in, I would bake this bread and it was fun because I could shape it however I pleased. However, I just didn’t feel like baking it anymore. I think it might’ve been because I felt in some weird way… unappreciated. The only person who really showed any appreciation was Kim, and I thought it would seem strange to bake a loaf for only us two when three other people were living in the house. But I promised Kim that once we moved to the new place I would bake her loaf since she loved it.

A new cereal to try!

Have you guys heard of Erewhon? They’re a part of U.S. Mills (which has so many breakfast grains to choose from). This is the Strawberry Crisp cereal, and for anyone with gluten allergies this is a gluten-free cereal. Usually, I don’t eat cereal because it’s not very filling but sometimes I just want something refreshing. The only thing I have to say about this cereal is that it could be a tad bit sweeter. I am surprised at how many dried strawberries actually come in the box. I find that most cereal with dried fruits shouldn’t even claim to have them! If you like cornflakes, then I think you will enjoy this. I know that I’m enjoying my box!

I’ve also tried another U.S. Mills product from Uncle Sam. Instant oatmeal is perfect for a college student, and anyone else with a busy lifestyle. But when was the last time you guys saw one with soymilk? That’s right! This was so delicious! They also have a French Vanilla flavor. Yum! Moreover, I got to enjoy this in a most delicious jar of almond butter with crumbled graham crackers.

It doesn’t look too pretty, but don’t judge a book by its cover! I followed this recipe, but I didn’t have white balsamic vinegar on hand. I’m sure it made a difference, definitely in color!

I’ve also noticed a lot of you guys putting pretzels in your wonderful oat creations. I wish I had thought of that before I finished my Kay’s Naturals sample!

I also toasted some cinnamon raisin swirl bread. That slice on the left is topped with… Cacoa Bliss! I had graciously gotten these adorable samples of Artisana nut butters from Tristan awhile ago . I finally busted into some of them. Let me just say now that this is just as amazing as everyone has been exclaiming!

So far I’ve tried Cacao Bliss, Cashew Butter, Pecan Butter, and the Macadamia Butter. I really don’t think words can do these nut butters justice. You just have to try them! I’m so grateful to the people who sent me this generous package. Thank you for introducing me to something new and taking me on another food adventure. I think my mom would love the Macadamia Butter since they are her favorite nut.
