A Way To Start The Day

I reminded Matilda of how lovable she is…

"What else did you expect?"

This is true.. I should also note that Matilda is no ordinary dog. No, I have to lure her with treats to go out for walks, and she doesn’t settle for just any kind of food, toy, or other dog. She can also eat an entire bar of dark chocolate without repercussions. Lucky her, but I don’t want to go through the experience of the latter again.

And definitely not with this pot of chocolate.

When I came across Ashley’s recipe for ‘Chocolate Coconut Fudge Sauce‘, I went to the store to fetch some coconut milk to make it later that day. The coconut milk was incredibly thick, so I knew this was going to be a yummy, decadent affair.

Chocolate-dipped strawberry?

Yes, please. I’m not exaggerating when I say that this jar was nearly empty by the end of the morning.

Since it’s Friday and the weekend is beginning, I thought I’d share some breakfast ideas with you.

Some people like their cookies crunchy all the way through, but I like to have a little bit of both worlds. Something that will melt in my mouth, but with a crunch my teeth I have to bite through first.

When It Actually Works Out

Ladies and gentlemen, yesterday I poached an egg. As far as I can recall, I don’t think I had ever eaten a poached egg before yesterday. I just heard that it was a great way to enjoy them. Yes, I am joining Melissa’s club for the egg obsessed.

At first I thought to myself,

“Oh, I will use a small saucepan so I can use it to heat up the cheese sauce I made the other night. That way I won’t have to do as many dishes.”

Then as I was creating a whirlpool for the egg, water kept spilling out and hissing on the burner. That’s when I thought I had messed up, but I already started and you know… I don’t want more dishes to do! So I continued. Then I was pouring the egg from the dish into the hot water. According to the “how-to’s” on how to poach an egg, it is directed to not dump the whole egg in at once. Well, I tried to follow directions, but the egg just canon balled into the pan. Plop! First, this magnificence happened.

If I didn’t mess up before, then I definitely failed my first egg poaching attempt at that moment. Or so I thought. I thought a lot of things during the whole process, didn’t I? Anyway, I carried on. I tried to keep the egg intact, and safely above the bottom of the pan. To my surprise and excitement it was turning out! First egg poaching attempt was a success.

Who knew what I would find inside? A prize. Yes, to me it was a prize. My stomach was growling while I was snapping photos, but I had to document these moments first. I’m not sure how long it took me to eat lunch yesterday, but I know I took my sweet time.

Reinvented

Hello everyone! In my last post I asked what you guys would like to see in my blog/would you be interested in seeing things from me beyond the realms of food. I used to cover more things on the blog, but somehow as life got busier I stopped frequently capturing life in front of me. I remember pausing at a detail in my outfit that I thought was beautiful and feeling the inclination to share. Or being down on the ground and looking up just to see what it looked like to see things from that perspective–and snapping a picture of it. I’m still curious in that sense, but don’t think to capture it as often. Sometimes I go back and forth between thinking: it’s silly to think those things are important enough to capture, it’s meaningful/meaningless, or why not just enjoy? C’est la vie. It’s true. For right now though, it’s important to me again.

What would I like to be in focus?

The plants, the deteriorated posts, or the other side of the Hudson River?

Whenever I go to the market I like to walk around and find things I’ve never heard/seen of before.

One day I stumbled across Siberian Kale.

Kale is a great winter vegetable, and the more it’s been kissed by a frost the sweeter it is.

Toasting the coconut shreds is so key for this recipe. It’s an extremely delicious that you may have to approach with willpower as to not to eat the entire batch!

Dandelion Salad with Sundried Tomatoes and Lentil Dressing

Dandelion greens are not something I usually pick up, but that was what drew me to this recipe. It was a new way to try various flavors together, and well… it had me had sun-dried tomatoes as well. I also found myself pouring the lentil dressing on to other things.

Indian Summer

Hey everyone! So I haven’t gone missing again. In my last post I asked you guys what your favorite combinations were. If you didn’t get a chance to check out some of the responses, click over here! I’m curious to try a few of them like Melissa’s pick of Radiohead and geometry, P.P.’s playlist with a cold beer in hand, and Jim’s affinity for cream, coffee, and hazelnuts. Some of you were wondering if the magazine app is available outside of an iPad. Because the app is specifically designed for iPads, unfortunately it is not. I’ve still got some things to share from when I was in Florida, so the last post and the upcoming posts will feel like I’m unpacking my suitcase, which in reality I will soon be able to do as well! It may seem like bit of a tease  looking at summer-centric foods, but here goes.

Subtleties of the Everyday are My Reality Check

Things like the feeling of thirst, blind spots when driving, or finding the beat in a song when it changes. In my last post I asked you all if you pay attention to how certain things affect you. I also said that lately I’ve been approaching my meals at home with no forethought. Take breakfasts for example. I would always say that I’m more of a “sweet breakfasts” person, but lately I’ve been waking up many mornings wanting different things. Or sometimes I’ve been waking up with nothing in mind. If I’m hungry I’ll walk to the fridge, open it, and stare up and down for five minutes. So here are some of my recent varying breakfasts.

I’ve been using different grains.

I made Ashley’s Chocolate Buckwheat Breakfast bake, but next time I don’t want to add so much cocoa powder.

Baking single-servings always feels special.
I think throwing in some dried fruit would make it slightly sweeter too.
Rise and shine!
This time around I used some leftover quinoa to make a parfait.
Quinoa, peaches, apples, Greek yogurt, almonds, and honey.
The idea of scrambled eggs is nauseating to me, but scrambled tofu is a different story.

I combined these two recipes: breakfast scramble and tofu taco, and then added some of my own dashes of flavor.

Bean burritos for breakfast are not a stranger to me now.
Crunchy Jicama and Mango Salad with Chile and Lime

I bought jicama for another recipe and had some leftover, so I found this delicious recipe to try out. So refreshing!

Beans cooked in… I can’t remember, tomato, lebni (Kefir cheese), cilantro, and onion in a brown rice tortilla.
Savoury sandwiches.
Yes, even tempeh rueben’s for breakfast.

Sauerkraut in the morning? I combined two recipes again: vegetarian reuben sandwich and tempeh reuben.

Another recipe from Ashley, a banana cornbread cake and if I remember correctly I just made the creature blob by simply mixing Greek yogurt, a bit of almond milk, and sunflower seed butter together to get this pudding like consistency.

And some maple syrup drizzled on top.
If you like grainy things then this recipe is for you!
Another breakfast using cornmeal, but it didn’t taste very earthy.

Kita’s cornmeal pancake recipe was so delicious!

Just maple syrup and butter.
I kind of wished the stack would’ve just reappeared in front of me.
These tasted like sweet cornbread, but not as dense and oily.
Savory breakfasts lookin’ fresh.
I made cheesy corncakes with a side of bean and sweet potato hash, and whipped up a tangy curry sauce to go with it.

I finally stumbled upon Coconut Bliss’sGinger Cookie Caramel” at the store one day, mind you I’ve been keeping an eye out for it since the flavor released a few months ago. I’m glad I picked it up because a) it was the last one, and b) I have yet to see it again.

I think you would too, if this was in your freezer.
I would eat this over cake any day. 
I also tried another new Coconut Bliss flavor: Mocha Maca Crunch.

This was also very tasty, and I loved the bitter crunch from the cacao nibs.

And another new-to-me ice cream!

La-Loo’s goat’s milk ice cream caught my eye, and I decided on vanilla. Whoa! This was so good that I don’t think I will ever buy another kind of vanilla ice cream. Ever. It was creamy, sweet ,and had an intense vanilla flavor like no other–no wonder it’s considered the “holy grail” of ice cream.

As a sculpture student and living in an urban area, I think the Energy Food and EnvironmentalX supplements will be very beneficial to me. And who doesn’t have moments of stress? That’s where Serenity comes in. I’ll let you all know what I think of these after I’ve had them for awhile.

In my eyes coconuts can do no wrong, especially when using their milk to make hot cocoa.

Lately, I've been feeling like I'm on cloud nine.

I cooked some onions and garlic with turmeric, then threw in some beans, tomatoes, and kale. Then when the heat was lowered was when the olive oil, shredded mango chutney, and tamarind chutney decided to join in on the party! Cilantro for garnish, but then I decided to eat it separately since it didn’t go well with this. The real stars of this though are those adorable tomatoes! I got a bowl of them at the market for $1.00.

Lately, I’ve been trying to make a more conscious decision about who my money is going to. This leads me to that realization that I may be spending a little more than usual. When I’m away at school, I feel like I’m on a financial… leash? But you know what? It’s one thing to be mindful of my purchases, but another to incessantly feel like I have to justify everything I get. While I was down in Florida, I didn’t feel this sort of pressure because my parents were there “okaying” everything. For instance, I bought organic things (dirty dozen, anyone?) and there was no second-guessing. This pressure I put on myself comes from me not having a job and being 100% financially dependent on my parents. A friend pointed out though that she’s in the same situation, but it’s not like she doesn’t work hard. She’s right, and I do work hard! Okay, so I’m going to stop rambling and leave it at that. Whatever. I am worth it. Not to mention, when I’m buying something straight from the farmer… well, it’s no longer just about me. It’s about community and helping one another in some shape or form.

Some of the vendors have been doing this for decades (one of them for more than a generation) and they can use their own hands as scales--and I'm pretty sure they're not gipping me.

But back to tomatoes; they are also good for liver health. Tomatoes have a detoxification effect in the body. Probably it is due to the presence of chlorine and sulfur in tomatoes. ”Actually, in the United States, more tomatoes are consumed than any other single fruit or vegetable. Tomatoes far outdistance oranges, potatoes, lettuce, peas, carrots, and bananas!“Although in ayurveda they are generally avoided because they are a nightshade food, meaning they have aggravating qualities. Afterall, tomatoes used to be known as “wolf peaches”. Maybe that’s why the Italian men howl at all of the pretty ladies who walk by! Anyway, I had tried to reduce my tomato consumption, but you know what? I’m not the kind of person who strictly follows one philosophy. These are ideas, some of them make sense, and some of them will just never float my boat. But I also read that not all people in ayurveda are sensitive to the nightshade foods. However, people suffering from these conditions are advised to avoid them: arthritis, eczema, acid reflux disease, cystitis, lupus, and psoriasis. I also wanted to share an interesting article I found written by Junji Takano, a Japanese health researcher: “Tomatoes and Its Medicinal Properties“.

I need more plantains in my life pronto!

It’s funny how much more you appreciate something you haven’t had in awhile. A serious revival and a delicious reunion! I fried some plantains with beans, sea salt, thyme, shredded mango chutney, and coconut oil. Then I served over some romaine, and other veggies. Really simple. I realized that I use onions in practically all of my cooking, and I found out that they reduce kidney and liver damage associated with uncontrolled blood sugar level. I just don’t advise taking a bite out a raw onion bulb.

Recently, I decided to use my secret oat bar recipe and make something fun like muffins instead!

Proof that we eat with our eyes first, because these just magically seem to taste better!

I’ve already made a couple batches so I can just grab-n-go-go-go. My classes finally start up tomorrow and I am so excited! I have a Human Spirituality class in the early morning and a Contact Improv dance class right after. Wish me luck!

Not Counting Down the Days

Hello everyone! As I mentioned in my last post, I am back up at school. Although my classes haven’t started yet, I’ve been getting ready for this coming semester. I’ve been having so much fun since being back here. Reconnecting with my friends, and making new ones everyday! Seriously, every day has brought me a new adventure. Anyway, I wanted to talk about how I’ve been doing on my journey to strengthen my liver. I haven’t been doing this for a month quite, but almost! I thought a month sounded like a good amount of time to let my body adjust and do a lot of healing. Does this mean I’m just going to stop after the month has gone by? No, I will continue this, but not so focused on certain foods. While browsing Foodbuzz I stumbled across an interesting article written by RD and writer of  the blog Practical NutritionNour. There was one sentence that really resonated with me: ”Enjoy them for the color, taste, aroma, and the whole meal experience, and think less of how they could physiologically affect your body from the inside” I know that recently I’ve been including little tidbits about the various foods I’ve been eating. Of course, there’s nothing wrong with that, but when I’m eating my meal I don’t actually think about those tidbits. When I eat I usually just think of how colorful the food is and the flavors! Everything I’ve been eating has tasted delicious, and that’s something that will never change. After all, isn’t that why people really love food? I’m a creature of introspection–constantly reflecting and observing the world around me and realizing that I’m in it… a part of it. So I choose to live my life as nobly and as compassionately as possible. I care about myself as much as I care about others–and that’s a lot. And isn’t it wonderful that one of the ways I can take care of myself is through food?

Moreover, I’ve got some exciting news to share with you all (more exciting news at the end of the post as well)! I’m sure some of you have heard of Foodbuzz’s Project Food Blog. Since I’m participating, I will be completing the various challenges the judges have come up with. This is going to be so much fun! I hope that you will support me and vote for the entries I submit! I’ll definitely keep you all updated on how it goes down. It would be a dream come true if I became the next food blog star.

The last meal I cooked in Florida.

Sounds dramatic! I decided to cook the red kale loosely using the same recipe that I like to use for other greens. I also made a delicious and aromatic batch of red lentil and date dhal inspired by this recipe, served it over a slighty spicy and spiced sweet potato and butternut squash purée. Once it was served I took a bit of ghee and just let it melt on top.

Rich in flavor and undeniably satisfying.

On my last day in Florida I got to hang out with a good friend of mine that was visiting from Virginia!

We soaked up the South Beach sun and time was of little importance to us. Living in the moment.

Even though most of us lead separate lives now, we never forget our friendship.

A feeble attempt at making coconut butter--just wasn't the same.

My meals have been consisting of a lot of green and yellow colors lately--also a failed attempt at molding the rice and lentils.

The yellowness comes from cooking the onions and garlic in turmeric. Remember the wonderful benefits of turmeric? “In both Ayurvedic and Traditional Chinese Medicine, it is considered a digestive bitter and a carminative. It can be incorporated into foods, including rice and bean dishes, to improve digestion and reduce gas and bloating. It is a cholagogue, stimulating bile production in the liver and encouraging excretion of bile via the gallbladder.” I’ve even heard that it’s good for alleviating arthritic conditions and menstrual cramps!

Garlic, onions, turmeric, artichoke hearts, kale beans, quinoa, shredded mango chutney and sweet mango pickle, flax oil, and cilantro. Ah yes, I cooked a grain besides rice! You know me, I like to keep things different or else I get bored. I’m a gemini, what can I say?

And can you believe that I found a 2 lb. tub of dates at the Indian store for $4.99?

Talk about a great deal! I’ve been loving them dipped in the “coconut butter” I attempted to make, with other nut butters, in cooking, and just plain! Actually, the other day when I had a friend over I asked if he had ever tried dates before. That night he was introduced to nature’s candy, and it brought a smile to my face when he asked if it was okay if he could have another one. Of course! Who am I to be a hog when I’ve got 2 pounds of dates?

Pinch Me, I Must Be Dreaming

First week of school and it’s been fun and hectic. My schedule is in a bit of a dilemma and I’m hoping to get that fixed! It’s frustrating to have my classes–or lack of classes–up in the air. I just want a set schedule, but I’m keeping my fingers crossed and doing what I can. On the bright side, I’ve been catching up with friends and having fun!

Vanilla cinnamon oatmeal + mango + pomegranate arils + coconut oil + cashew butter

Deliciously creamy yet refreshing. These past couple of days have been absolutely beautiful. I always feel at my best when the sun is shining and I can go out without piling on layers of clothes. I guess it’s soothing to my clutter-free ways.

I also sampled some dark chocolate.

When the generous folks over at Newman’s Own sent me an incredible package, they also included their various chocolates. That day I decided to try their 54% dark chocolate. This was really very yummy. One thing I’ve come to love about dark chocolate is how you can just let it melt in your mouth and savor it. Life is like a box of chocolates–lots of little moments to savor. What chocolates would be in your box?

After breakfast I did all my morning things like taking Matilda out on her walk and organizing some things around my place. Then I got ready to finally go to the new gym on my campus with my friend. I think she described it perfectly, “it’s like a mecca.” Here are some pictures I took from their site.

There’s also an indoor turf for soccer and other sports, flat screen TVs, different exercise studios, and crazy digital lockers (that you don’t have to pay for woo!). My friend and I went exploring and goofed off a bit on the machines. Then we went into one of the group exercise rooms and stretched. Next time we’re bringing some speakers though so we can dance… until they kick us out.

And get this... in the center of it all is a giant rock climbing wall!

I haven't had chickpeas in awhile!

I cooked these in coconut oil, cinnamon, and garam masala. I also had the rest of my delicious sweet potato mash from “The Conscious Cookbook” (the one made with cashew cream) and boiled rutabaga with cinnamon. I also drizzled the rutabaga and chickpeas with maple syrup.

Afterwards I met up with my friend and we were on the hunt for a big room I could dance in. I want to find a space bigger than my room and with mirrors. I’m still on the search! But when we went on our search for the room we explored one of the forgotten buildings on my campus. That picture above was the anatomy room.

We also snuck into the old pool which is now shutdown since my school completed the new gym.

After we explored that building we decided to walk down some streets and go into all the places we always passed but never stepped in. It was so  much fun! I came home and cracked open “The Conscious Cook”…

I got to try another Gardein product. Last time I had steak I could count my age without using all of my ten fingers. So I can’t honestly say if it tasted like steak. My roommate and our friend said that it smelled like it! I must say that it was very flavorful and didn’t have the chewy texture I remember steak having–which is better. Not to mention, I don’t think I’ve seen very many “steak” products around. I would recommend it if you’re an omnivore trying to make some vegetarian meals, or if you’re a veg-head that likes fake meat products. As for the recipe itself–wow! This had a kick but it was complimented by the mild sweetness of the red bell pepper, and savory “steak”. I couldn’t find a small loaf of focaccia so I just went to Panera and got a sourdough bread roll and seasoned it accordingly.

A great breakfast for the first day of a new semester!

My roommate’s boyfriend had a special wine that he let me have the rest of. Why was it special? Well, have any of you tried chocolate red wine? That’s right! Chocolate red wine. I made my usual bowl of oats with cinnamon and coconut oil. Then I topped it with peach slices, the last of Bekah’s scented almonds, and the last of the Chocovine. I admit, I felt slightly tipsy after this breakfast.

Since it was a warm, sunny day I decided to have a refreshing lunch.

I had my spiced chickpeas + more coconut oil + avocado + shallot + romaine + a most delicious homemade honey-lime dressing.

The weather wasn't the only thing out of the ordinary that day...

Recently, I received a sampler package from the people over at Popchips. So what was unusual here? Well, for some reason I felt compelled to try the sea salt & vinegar flavor first. Let me just note that I do not like salt & vinegar chips. I ate my own words with this bag. I actually liked these a lot! There was no overwhelming acidic aftertaste from the vinegar. I also really enjoyed the texture of these babies. They seemed to be a bit thicker than normal potato chips. Crunch crunch crunch. Yum yum yum.

I also had a couple of these amazing raw blonde macaroons.

I kid you not–these are now one of my favorite things. Thanks so much Liz for sending me these! Like I said, girl’s got incredible taste! I’d also like to congratulate her for making it on one of the Top Health Blog lists. You go girl!

Quinoa, Avocado, and Sweet Potato Timbale With Roasted Tomatillo Dressing

I am really enjoying attempting to make all the recipes from “The Conscious Cook”. I feel like Julie in the movie Julie & Julia! This was also my first time cooking quinoa. This was incredibly delicious and would make for a perfect summer dish. All the various textures and flavors worked so well with each other; the crunch from the tortilla bits, creaminess of the avocado, and the graininess of the quinoa were such a treat to my mouth. The tomatillo dressing added a wonderful zest to it all! Not to mention, I was proud of myself for making something so gourmet looking that tasted as equally delicious… if not more!

I wasn't the only one to enjoy this dish! Too good not to share, I say!

I also made butternut squash "fries" tossed in coconut oil and cinnamon + tamarind-date chutney for dipping.

What a great way to end the first day of the semester. We had a delicious meal that ended with dark chocolate and a refreshing walk with Matilda.

This is really random but I have a question for you all. Well first let me go off on a bit of a tangent. I have no problem expressing myself and showing who I am… except for when it comes to romance. It’s not that I still cover my eyes at the sight of people kissing. No, not like that. But it’s more so something I just struggle with personally. I really want to get over that and I think I have to start putting a conscious effort into taking down that wall. Brick by brick. So I was wondering if any of you have any advice on how to just be comfortable with expressing yourself romantically. Thanks!

What Makes You Smile?

I’m going to start this post off with something that made me smile about a second ago. I just had a most delicious cup of tea I got at a coffeeshop. I had green tea with jasmine & lemon.

So remember when I said that I always say I’m going to get a rain jacket and I don’t, and then it rains?

I finally got one!

When I got back from shopping I started to make my lunch.

I baked some sweet potato fries with Old Bay seasoning and cumin. I also baked some Gardein chick’n tenders as well. I squirted ketchup on both and sprinkled some curry powder on as well. I made something of Sophia’s but with a different texture. Rather than make her kabocha soup with bacon and goat cheese- I made it a mash with coconut oil. I also subbed out the bacon for fakin’ bits. And that cute little chocolate cup? This time I tried a Newman’s Own Organic Dark Chocolate Peanut Butter Cups. It tasted good, but I wasn’t too keen on the gooey peanut butter middle. I was hoping it would be a bit more solid.

I've also been working on my project.

I started carving some wood yesterday. And after about 6 hours of that I realized I want to keep my thumb – it was so sore!

Granola bar!

I tried another 18 Rabbit granola bar that was graciously sent to me. This time it was the Funky Figs & Cherries. First off, I love the names of the flavors – they’re so much fun! I just heated it up and crumbled it over some vanilla Greek yogurt, and dark sweet cherries. This one was also very granola-y, however the first flavor I tried (Cheeky Cherry Chocolate) is the best so far. I swore I also tasted some chocolate in this one. Silly me didn’t check the ingredients though! Oh well, what matters is that it tasted good, right?

I had a little mishap with my lunch.

I had been cooking some kale on the stove and I went away and completely forgot about cooking, until I smelled something burning! I quickly ran into the kitchen and took it off the burner. Although it shriveled up a lot, it still tasted very good. May I suggest sautéing kale in a mix of olive oil, balsamic vinegar, honey, and s&p? I also toasted a quick sandwich: goat cheese, basil pesto, and tomato with balsamic vinegar.

Yesterday, I got a bit of relaxing time in. I just did some beauty things and had dinner roasting and boiling away in the mean time.

My one person casserole dish.

I roasted some kabocha chunks, and boiled some edamame and quinoa pasta. I tossed it all in coconut oil, lime juice and s&p, then drizzled on some tamarind-date chutney. One word: yum. I haven’t had edamame in forever and I just found a great edamame succotash recipe I must try.

Now we're a little more caught up now.

This morning I decided to try the cranberry flavored Heart Thrive. I crumbled it over some vanilla Greek yogurt mixed with pumpkin puree. I also drizzled on some cashew butter and tossed in a handful of dried cranberries. To make the Heart Thrive less dry I heated it up in the microwave and spread on a bit of coconut oil. I must say I really enjoyed this flavor! It was perfectly tart and had a much stronger flavor than the others I tried.

I only had one class today, so that left me with plenty of time to run errands and prepare some things for when my mom arrives tomorrow. I’m so excited!

Quick lunch

I got home and I was so hungry so I had some hemp brownie bites while I quickly prepared my lunch. No, not special brownies! I followed a BBQ Shepard’s Pie recipe from the Sunshine Burgers website with the BBQ flavor. Basically, I roasted corn, some cubed potato bits, and mozzarella in the oven. Afterwards I just drizzled on some BBQ sauce. I also had it with some beautiful blanched kale. I love that green!

Tomorrow is Thanksgiving and I’m excited. Although I’m having a rather untraditional Thanksgiving (when is it not?), it’s going to be so nice to be with my mother. Since her flight comes in around 2, we’ll be having a Thanksgiving dinner. Which means she’ll be helping me in the kitchen! We make a great team. Anyway, I wanted to know what makes you all smile? I know for myself, it’s mostly the little things that cheer me up. For instance, when I take Matilda on walks I always notice the little quirks about Richmond. There are a lot of characters around here and they definitely make sure to leave their mark. Things like painted ice cream cones cut out of cardboard hanging on a string over a telephone line. I wish you all a wonderful Thanksgiving! Aside from having delicious food, I think the most important part is to enjoy being with people you care about. And being around those people can make a world seemingly filled with troubles, a much better place.
