Feels Like Summertime in New York: Part 1

Later that day when I got back from the beach, I made it to New York.  I took the AirTran and met up with my friend at the station–finally someone to help me with my luggage! But before anything we gave each other bear hugs. I definitely missed her.

Finally we made it to her place and met her new baby.

Nice to meet you, Albus!

Freshly ground cinnamon

Apple and cinnamon oatmeal with cashews

My friend took Albus out in style with turquoise shoes.

I've also missed this backyard!

A backyard in Brooklyn is definitely a rare treasure.

Too bad he couldn't go to yoga with us!

After getting the morning things out of the way we went into the city to take an incredible class at Yoga to the People, a donation base studio.

Remember when I went last time?

After some shopping and walking around we came back and started making dinner.

And white sangria!

Yum! I love that she also loves Indian food.

She made a delicious lentil curry with veggies over basmati rice, and I added some cashews for good measure.

As Julia would say, "bon appetit!"

Puppy love!

Later that night we stopped by a friend’s place and to my surprise one of my best girl friends lived right across the street! Eventually we made our way back home–bike bound in Brooklyn!

The next day my friend's roommate got back in town!

We stopped by a cheese shop that also happened to have an incredible chocolate selection.

Thanks to this shop I have found a brand of chocolate that my friend believes is worth dying for. She highly recommended Mast Brothers‘ Dark Chocolate with Almonds and Sea Salt.

Then met up with two other friends!

Headed out to Artists and Fleas--a really neat market with all sort of vendors, like mini-pastry vendors!

Then we went into the city and stopped by a quirky pizza shop.

Who could this be?

Cookie monster!

We just shopped around and made our way through a few parks.

It was funny because as we were walking along some random guy blatantly snapped a picture of us with his fancy camera and just kept walking. My friend and I just looked at each other and started laughing.

Stopped by the dairy-free "fro-yo" shop Stogo and fell in love with their toasted coconut almond joy flavor.

A nice old man had us laughing when he took our picture.

And of course we were standing in front of my favorite store!!! It pretty much goes without saying but I’ll just refresh your minds in case you’ve forgotten–Anthropologie!

And here's to looking forward to a great week!

Next recap includes a classic childhood favorite with a twist! I promise you will love it. In fact, I forwarded the idea to my beloved Dean & Deluca in hopes of getting my foot in their door. Okay so I’m going to keep quiet now because the suspense of sharing it with you all is killing me!

I’ve Got Questions; Have You Got Answers?

Wow, March definitely crept up on us… actually this whole year seems to be flying by so far. This just means spring is making its way here sooner! My weekend was spent re-working my sculpture, writing essays and proposals, and squeezing in some much needed hang out time. Also this weekend, some of my friends were playing at a Haiti Benefit house show–DIY style! My Monday actually started out on a strange note; when I awoke I was greeted to the sight of swollen face… well the right side anyhow. Since I wanted to get that checked out by a doctor right away I had to miss my make-up critique, but I’m not stressing out about it. Health comes before school!

Nom nom--cheers to that!

Betty Lou’s Apricot Fruit Bar Pie = deliciously sweet and tangy, especially crumbled over yogurt, caramelized banana slices, and Sunland’s caramel peanut butter. I love how crumbling the bar makes it really resemble a pie of sorts. That morning’s breakfast’s  ”placemat” was an old magazine I was flipping through. While browsing, I stumbled across an interesting article that stressed the importance of eating throughout the day to keep energy levels up. I think most of food bloggers are into the habit of eating every few hours, but it seems that most people don’t. Lots of times I overhear people say that they haven’t eaten all day or since breakfast, and I wonder if they’re totally exaggerating or if they’re zombies. My body’s hunger cues chime in like clockwork, or sometimes even earlier. Lately, I find that my body is requiring even more than before. Am I turning into a boy? Hehe! Anyway, if my belly calls for something earlier than usual than I’ll have a snack to hold me over, and the hunger usually comes back around my usual mealtimes anyway. Works like a charm!

Actually, this brings me to a question I have for all of you: What are some savory snack ideas, and what are some of your favorite filling snacks?

Some dried fruits I've been enjoying: mangos, cranberries, and figs!

Now that my schedule has gotten even busier, more on-the-go meals have been had.

Usually, I don’t care for leftovers, but now they are a blessing. I get to enjoy home-cooked food on the go! I packed a bunch of steamed kale, sweet potato with cinnamon, a cute little jar filled with coconut butter for the potato, and the butternut squash casserole. I also packed a Cranberry Apple Boomi Bar (reminded me of how delicious autumn tastes). I actually got in trouble for eating in class; is it my fault I came prepared?  Just kidding! Anywho, this new class is during one of my usual mealtimes and I don’t like to wait to the point where I’m starving. My hunger escalates pretty quickly so I’m hoping I won’t get in trouble for bringing a more snacky-looking meal. I’m thinking Greek yogurt, a dense bar, and some fruit/veggies. It presents to be an issue on Tuesdays because I literally have a class right after. I’m open to any ideas you all have!

MORE PIE!

This time around I tried the Betty Lou’s Blueberry Fruit Bar. I had this with yogurt, banana slices, and warmed up cashew butter. Holy yum! Now I’ve officially tried all their fruit bar flavors, and I must say that I was truly pleased with every single one of them. I don’t know how they managed to make them gluten-free and taste like a yummy slice of pie, but they did. If you look into their products you will see how many allergies they take into consideration; they take people into consideration. I’ve had the pleasure of speaking with one of Betty Lou’s sons and I can tell he has a genuine passion for life, family, health, and people; and yes, Betty Lou is a real person and also seems to have a zest for life from what I’ve heard. Companies like this are hard to find, but when I do, I definitely stand behind them!

My new cheese mistress, Fontina, makes her debut.

And she went all out! Dare I say, I think this may be the best pizza I’ve ever had. The thick crust the focaccia gave it reminded me of Sicilian pizza–so good!

Melted over the last of my homemade focaccia, tomato sauce, tomato slices, caramelized onions and butternut squash, and cracked pepper.

I've been putting my hemp protein powder to good use!

I decided to try a recipe that was actually written on the bag: berries, banana (I opted for the fruits to be frozen), milk (whichever you prefer), and the hemp protein powder of course. I’ve already repeated this recipe, and feel free to change up the fruits if you wish (but I suggest keeping the banana). Anyone have any hemp protein powder recipes they’d like to share?

While browsing through Ayurvedic recipes I stumbled upon this little charm...

Date + ginger powder + almond. I’ve also tried this combo with cashew butter, and I highly suggest you try it! When I was reading on Ayurveda, I stumbled upon a very interesting article that I thought was worth sharing: “The Spirit of Cooking”. I agree with a lot of points Harish Johari brought up, and I was introduced to new information as well: “if it weren’t for spices, America might never have been discovered.”

I’ve got quite a few things to look forward to this month: the fashion show coming up on Saturday, my mom is flying into town on Friday. I’m also taking a road trip with one of my best friends down to Florida for spring break. Then at the end of the month I’m going to see Wicked! I hope March has been treating you all well so far!

It’s a State of Mind

It’s been far too long since my vivacious mother has graced the pages of my blog! When I think of my mom I think of what someone who has a passion for life. She has this youthfulness about her and I believe it can be a state of mind. How you carry and perceive yourself really reflects a lot on how people see you. This brings me to my number one fashion tip: wear it with confidence! When you’ve finally decided what outfit you want to wear, or if you just threw something on, don’t forget to walk out your door with a good amount of self-esteem and work it!

First off I started my Thanksgiving day with some homemade granola!

I used the soybean pulp, coconut oil, honey, shredded coconut, vanilla extract

I used the soybean pulp, coconut oil, honey, shredded coconut, and vanilla extract

Granola + vanilla Greek yogurt/pumpkin puree + raisins

After straightening the apartment up and running some errands, I picked up my mother at the airport and gave her a tour of the place. It didn’t take too long though since it’s quite small. She came bearing gifts from her recent trip to Germany!

German goodies!

Neela definitely understands that Germans have mastered the art of baking bread and Kuchen! Oh and making chocolate too!

Choco Gummibaerchen

Then we started cooking up a storm for our Thanksgiving dinner.

Mom also helped!

Then we set my coffee table and sat on pillows.

Looking cute!

Shall we eat?

This was on the menu:

First time trying Swiss chard!

Swiss chard with toasted pine nuts and raisins

Indian-spiced Kabocha mash

Stollen my mom brought back from her trip to Germany

Sage and pumpkin seed encrusted "chick'n" with cranberry cabernet sauce

I used Gardein scallopinis for the “chick’n”. I also baked some maple cornbread and mushroom gravy.

All together and what have you got?

Afterwards we went on a walk with Matilda.

Then we watched Breakfast at Tiffany’s. I had never seen that movie, and now I see why so many people love it!

Next morning, mom and daughter breakfast

My mom had some of the gourmet cashew toffee Holly sent me, a Fig Newman, banana, toast with sunflower seed butter (her first time trying it), and an arepa con choclo. Her and I actually split the delicious arepa. For myself I tried the chocolate Heart Thrive over some vanilla Greek yogurt, cashew butter, some Newman’s Own Organic dark chocolate, and a sliced banana. I think the Heart Thrives are getting better and better with each new flavor I try. I heated this one up and I loved the melted chocolate. This one in particular tastes like a cookie. Can you guess which kind? Then we got ready for some shopping!

Dressing room photoshoots - commence!

I tried on this incredible black dress!

So awesome!

Since I’m going to Art Basel this coming weekend, I need to come up with an extravagant outfit!

I'm thinking something along the lines of what I wore to my "End of the World" party.

Also tried on an incredible top.

A dress like in Breakfast at Tiffany's!

My mom likes playing with my camera!

Matilda went shopping with us too!

We were being goofy in the store!

On to the next store – my favorite!

Of course Anthropologie has adorable ceramic egg trays! (far right)

Now it's Mom's turn to model!

I think she wanted to go to the dog bakery!

She makes me smile

Now both of us!

Awesome overalls!

A shame they were too small.

A gypsy shawl!

Then we went to Sur la Table

The cooking class that day was entirely based around chocolate. Katie, I thought of you!

Minus my feet being cut-off, my mom took a cool picture!

We were done shopping and decided to head home for some lunch. Well the day before my mom flew in I had decided to bake something for us.

The ingredients!

I used French Meadow Bakery’s gluten-free pizza crust! Pizza 1: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted eggplant. Pizza 2: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted red pepper and artichokes.

The pizza I made!

Pizza No. 1

I must say that I was surprised at how normal the crust tasted. In fact, it didn’t occur to me till later that, “Oh yeah! This is gluten-free crust. Wow!” After lunch we were headed out again and I had forgotten something so I went back. Then I realized I had locked us out of the apartment and my roommate was out of town. Oops! Thank goodness through some guardian angels were watching out for me and my neighbors walked into the building at the right moment. They had a way of getting me into my apartment. Imagine poor Matilda waiting for us!

Dinnertime!

We each had Sunshine Burgers topped with diced tomato, seasoned avocado, and ketchup. I also sauteed some kale in balsamic vinegar and honey + grated parmesan. Lastly, we split a beautiful persimmon! I asked my mom what she thought of the Sunshine Burger. Her response: “DELICIOUS!” After dinner we got ready to go to the movies.

And I packed some movie snacks for us.

We went to go see Julie & Julia.

The movie made me smile so much because I totally feel the same way!

The movie theater itself is so beautiful!

After the movie we wanted to go get some drinks.

We went to this French brasserie called Can Can

My friend was working so she took some pictures of me and my mom.

They brought out the bread - They ended up giving us a free baguette and another loaf!

A toast to us!

With a blackberry Bellini for me and an Indian Summer for my mom.

We also ordered a dessert.

A sweet potato tart with cranberry ice cream and a ginger creme anglaise.

A sweet potato tart with ginger creme anglaise and cranberry ice cream.

After a couple of hours of talking we headed home and laid our little heads to rest.

You are all so sweet and I’m incredibly thankful for each and every single one of you. I can’t remember exactly what sparked me to start a blog, but whatever that reason is – it doesn’t really matter. What matters is that it brought me here, with a bunch of wonderful friends. I hope you all had a wonderful Thanksgiving and are enjoying all the delicious leftovers. Cooking shouldn’t be a problem for the next few days!

Happiness Often Sneaks in Through a Door You Didn’t Know You Left Open

Hi guys! I’ve been quite a busy girl lately – thanks to school. I’m learning so many things this semester that I want to share with other people! That’s always a good sign, don’t you think? I haven’t just been on the “learning” end of the deal either though. I’ve done some teaching as well! Not necessarily in a classroom setting, but instead I’ve been flourishing in my interests and sharing them with other people. For instance, now a lot of people know that I actually have a passion for cooking; I decided to make a cooking album on Facebook. I think a lot of people were surprised! I’ve also made a new friend that I met at a yoga class. It’s nice to meet people in a setting where you are doing something you truly enjoy, because you’ve got that in common. Then when you hang out and get to know each other, the friendship just grows into something incredible! And now that I’ve been kind of absent for a couple days, I think it’s only fair to share with you all what I’ve been up to. Can’t leave my friends in the dark now can I?

Banana ricotta soft-serve makes my day!

Banana ricotta soft-serve makes my day!

I topped the “soft-serve” with Zoe’s Cinnamon Raisin Granola, some more banana slices, and chocolate sprinkles. I’ve seen a lot of bloggers incorporate chocolate chips in their breakfasts, and this is me making due with what I’ve got! Actually, it’s very appropriate since underneath it all is an “ice cream” of sorts.

A parfait!

A parfait in honor of K!

I changed the ingredients just a smidge for the banana ricotta soft-serve. Rather than vanilla extract, I used coconut extract. Wow! This was also heavenly. I got the soft-serve to stay in it’splace by putting an apple slice underneath – improvising here folks! So what are the layers? Let me start from top to bottom: crunchy peanut butter, Erewhon’s Cocoa Crispy Brown Rice, banana ricotta soft-serve, apple slice, and some more of the cocoa crispies.

For this meal I wanted to do something out of the ordinary.

I used romaine as a sort of platter.

Then I decided to make rolls.. wraps.. not sure what to call this.

Then I decided to make rolls.. wraps.. not sure what to call this.

I love the freshness of this! I never cease to be amazed by the color palette nature offers us.

I also tried to make another interesting sandwich combo.

I also tried to make another interesting sandwich combo to go along with the romaine... boats?

This sandwich is on Cranberry Cinnamon Swirl bread and filled with eggplant, cheddar cheese, and mango chutney. I wasn’t sure if the eggplant would taste good with my favorite grilled cheese combo. How was it? Incredible!!! Definitely worth boasting about. I just remembered at a restaurant I went to they had breaded eggplant with an apricot coulis – so I thought I could try this. I’m glad I did!s

Now they look like dumplings!

Now they look like dumplings! And I'm apparently trying to mimic them?

A beautiful snack.

A beautiful snack.

Ak-mak crackers with cream cheese and edamame hummus, sprouts, grape tomatoes, and cucumber slices. Yum!

I made myself a pizza with polenta crust.

I made myself a pizza with polenta crust.

I roasted eggplant, parsnips (first time trying them!), and grape tomatoes; sautéed the onion. Then I just plopped some ricotta on and it all went into the toaster oven. After it was done baking I garnished it with some basil. I really like parsnips… a lot! Funny story with the basil. I got those leaves from a basil plant that’s growing out of a crack in a sidewalk. The plant is huge and full of delicious leaves! Nature’s way of breaking through despite what man builds on top.

Unfortunately, the crust didn't bake completely, so I ate this beautiful mess.

After happily eating my personal “pizza” I headed over to David Schultz’s CD release show. At the beginning they showed a brief documentary of their recording process, and their experience of life as musicians.

On Sunday I gave my baby, Matilda, a bath!

More sunshine!

More sunshine!

This salad consisted of a Falafel Sunshine burger, red onion, tomato, an apple, avocado, sprouts, romaine, and cilantro dressing. Oh! I also squirted some ketchup on the burger. The addition of the apple in the salad was awesome! On the side I had the rest of the apple with a glass of cold soymilk. Perfect for an unexpectedly hot day. Oh man, I feel really stupid. In my review of the Sunshine burgers I said that they had corn. Well, that’s what it looked like! Then I read the ingredients and I believe those are actually lentils. So sorry for the misinformation. My opinion on how great these are didn’t change though – so no worries about that.

My Sunday was filled with lots of studying! But I managed to squeeze in a dinner at the school cafeteria with a friend. Since I don’t have a meal plan, I rarely end up going. My friend, Jonathan, invited me to dinner and we got to catch up on things. I also gave him advice on finding a roommate and which rental companies to stay away from. This is his first year in college so he had a lot of questions, and I had a lot to say!

Hi Jonathan!

Hi Jonathan!

Shafer!

Shafer!

Everytime I go here, I feel like it’s my first time. There are just so many choices – they even have a vegan and gluten-free area.

Food! Food! Food!

Food! Food! Food!

I got a bowl filled with snap peas, mushrooms, water chestnuts, onions, cucumbers, chickpeas, and hummus. I love their hummus! I actually was planning on bringing a tupperware with me to hijack some, but I forgot it at home. My bad! I also got another plate filled with spiced carrots, veggie pizza, mock ribs in BBQ sauce and peppers, a slice of Italian bread, a vegetable medley pasta (completely tasteless). I also tried some gluten-free French toast sticks – they were awful! I can’t remember the last time I ate something that disgusting. I was actually contemplating spitting it out, but we were in a public place.

He left me a little surprise on my camera!

He left me a little surprise on my camera!

Let’s see… what other things can I share with you all? Oh yes! I’m not sure if you guys know Jenny but she has an awesome blog that will make you hungry just looking at it! Recently, she put together a “best of” oatmeal post. Check it out! You will be inspired by all the wonderful creations all the bloggers have concocted. And trust me, this is way better than any “Best of” VH1 ever aired.

As for me, I’ve got my critique I told you all about, tomorrow! I’m looking forward to it now. Things are finally starting to calm down a little with my schoolwork load. And in 2 weeks I will be going to my parents’ house down in Florida for my 4-day weekend!

p.s. I just want to say hi to any new readers! HI!!! Here’s to a wonderful week! For some reason I feel like I’m on cloud nine; anybody want to come along for the ride?

The Show Must Go On

I’ve been missing Florida since I drove back up to Richmond. Everytime I go there it’s like my bond grows a little stronger. I’ve had a love/hate relationship with Florida for a very long time, and I think I’m starting to finally come to terms with that crazy state. Luckily, I’ve been able to keep busy and not feel too broken-hearted. Packing has been on my priority list this past week.

Matilda made her self comfortable among the mess.

Get me out!
How do I get out of here?

I’ve been catching up with friends, and my days have also been filled with nice long walks in the city. Since my dad had been in town this past week, we would meet up in the early evening and just walk around aimlessly. I also had an unexpected event happen to me. I went to take Matilda out for a walk one morning and saw that my tire had been slashed. I also noticed that 3 other cars had their tires slashed too. AAA brought my car to a tire shop and I was told that 22 other cars had been hit in the area over the past couple of days. How can people do that? I was glad that everyone who helped me through the situation made it less stressful. I was proud that I didn’t freak out and I was able to carry on with my day. This experience made me realize that I can be thankful that the majority of people aren’t that coldhearted.

Anyway, on to happier things. Like celebrations! So far this week I’ve celebrated 3 birthdays and a few other things. I didn’t realize the end of July was a popular time to be born.

On my second night back I went to stay over at one of my closest friend’s house. Her family is like my second family and I use to live with her for most of my summers during high school. So obviously I can go through their fridge and pantry without a problem. She was in the middle of making some dinner when I got there. While she was finishing up I was looking to see what they had in store for me!

Cauliflower over pasta with sauce and feta. Toast with Almond Butter, peach slices, and cinnamon.

First time I went to Trader Joe’s was with her and she picked up a jar of almond butter. She didn’t love it, so it’s just always sitting pretty in her fridge waiting for me to take spoonfuls!

After dinner we celebrated our reunion/wedding vows!

Mudslides!

Look what this bear got her hands on.

Kelley told me about this kind of Jager she got that was honey flavored. I love honey, and she knows I love honey, so of course I had to try some. It seriously tasted like I was drinking straight up honey, but I could tell there was alcohol because it burned a little. What a yummy digestif though.

Then we had pina coladas and I made her take a shot of the honey Jager.
Then we had pina coladas and I made her take a shot of the honey Jager.

We just caught up on each other’s lives and passed out watching something on TV.

The next day I was celebrating a friend’s 21st birthday. I didn’t realize that she was younger than everyone we had graduated with! Anyway, the dinner was at this restaurant on the water in the neighborhood I use to live in.

I love how they preserved the nature and there are trails throughout.

Yummy pizza!

So the pizza I ordered had pears, gorgonzola, mozzarella, red onions, and pistachios. The sweetness with the contrast of the distinctive gorgonzola was delicious! And the addition of pistachios was definitely purposeful as well. The restaurant’s speciality is seafood, so there were very little vegetarian options. However, the choices they had were exciting and thoughtful. Obviously they didn’t leave my tastebuds hanging.

Aw, I've missed her!
Aw, I’ve missed her!

I met a lot of new people that night, and it was perfect outside. I headed home later, and I made a pact to see my old friends more often and build on new ones as well.

The next day I went to Trader Joe’s and I brought my list of recommendations with me. So far whatever I got that you guys passed on to me has been delicious. Everything is worth raving about!

Before I smooshed that hummus down.
Blobs of goodness.

The triple-layer hummus and corn salsa on their tortilla wraps. The PB&A mixed nuts bag is almost non-existent now. Such a great idea and so addicting!

I also went to another grocery store and found Jamfrakas bars on sale for…

Get out of town!

Later on I went to a friend’s house for a farewell get together. He’s done with school now and headed off to New York.

Bye Berto!

Lately my stomach has been feeling funky and I’m not quite sure why. I know that sometimes when you go to a new environment it can throw things off for you. But this usually never happens when I go back and forth between Virginia and Florida. So I’ve been trying to stick to comfort foods. Like breakfast for dinner!

10-Grain Cereal, chocolate protein powder, coconut oil, cinnamon, and mandarin oranges.

I’ve also tried some more Amazing Grass products. I think I really enjoy their chocolate flavored stuff more than the others. I’m just going to dip the regular WholeFoods bar in something chocolaty because the Chocolate WholeFoods bar was good! So good! It reminded me of chocolate covered raisins.

Hey Holly! You like my equation?

I’ll update you guys later with my weekend antics and other eats. I was reunited with one of my closest friends and she’s leaving today, but she’ll be back on Thursday! Some of my friends celebrated the beginning of a gallery they just started, and it was one of their birthdays as well. But the most exciting news is that me and Kim move into our new place on Saturday!  The kitchen in the apartment is awesome, and I can’t wait to go cray cray with the baking and cooking. I hope you all had enjoyable weekends. I for one, can’t believe it’s Sunday!

What piece of advice would’ve you given your past self?

Marching to the Beat of Your Own Drum

Matilda told me to send you all kisses!

Matilda told me to send you all kisses!

In my last post I wrote about doing things that suit you. I feel like this has been an interesting topic for discussion in the blogging world. People are trying out new ways of eating, and seeing what works for them. I think that’s wonderful that people are a) trying out something new, b) becoming more aware of what their bodies can or can’t handle, and c) listening to that internal cue. What I like to do is read about different takes on food, and add it to the filing cabinet in my brain – either it stays in a folder, or I apply it to my own little thang. Often times it’s hard to listen to ourselves because we’re bombarded with things telling us “this is the right way”,” what you’re doing is wrong!” Infomercials anyone? Anyway, I’ve been very curious about food for awhile now, but before I use to be very shy about trying new things. Of course part of the reason was that I didn’t cook. I just ate what was put in front of me. If I didn’t like it then I made a fuss. Okay, okay get to the point already! What I’ve learned works for me so far is… almost everything! The only dietary limit I put on myself is no meat, chicken, or fish. I wouldn’t really call my decision to be vegetarian a “limit” though, I see it as more of a personal choice. Vegetarianism has actually opened so many culinary doors for me, that’s partly why I’ve been able to stick with it for nearly 7 years. I haven’t gotten bored or frustrated! I also know that my tummy can’t handle eggs, or cow’s milk – unless it’s in yogurt form, and cheeses are kept to a minimum. However, I know that if I were to cut out dairy completely, the low level of tolerance I have for it already, would probably diminish to nothing. And I love cheese and yogurt too much! Another example for me is pasta. I use to have a horrible time digesting it. But I’ve learned that in smaller amounts, I can handle it just fine. My mom on the other hand can barely tolerate flour breads and pastas. For the most part, she is very adamant about not eating foods she knows will cause her trouble afterwards – but sometimes things just taste too good to pass up. My dad is lucky and was born with a stomach made of steel. He can handle anything! My uncle is a wonder to watch while he eats. I usually don’t watch people eat, but this is like a show I swear! For breakfast he will have a jug, yes a jug, filled to the brim with oatmeal and topped with fruits. Then he’ll have a massive plate entirely covered with rice, eggs, and fish. But his body needs that for fuel since he’s an athlete. He knows that if he were to eat less than he does, he can forget training because his body won’t run on anything less. So, as you can see, everyone is different. Food can spark curiosity in people, but sometimes it gets a bad rap. I hope for you all that food is not seen as the enemy, just remember to stay true to yourselves – and your tastebuds!

Okay, so enough of that! On to something visually digestible.

Check out those huge kernels! This corn hails from Bogota, Colombia.

Over the French green beans I made a quick sauce out of Dijon mustard, almond oil, some sugar, roasted garlic, rice wine vinegar, and s&p. It tasted wonderful with the green beans! Oh, some 411, (my dad wasn’t aware of this) remember to boil your green beans!

The other day I got a knock on the door just as I was about to leave to make my delivery. “UPS!”

I got some more goodies to review. So far I’ve tried one of their GREENSuperFood packets. At first I thought I wouldn’t enjoy it, and I was preparing my army of tastebuds for defeat. My army was surprised with another victory! I mixed the powder with orange juice, so I know that combination is a winner. However, I couldn’t imagine just mixing this with water. Blegh! They have flavored varieties as well, but I haven’t tried those yet. I, of course did my taste test in the convenient cup they sent me. Thanks guys! You can check out what they have here. I’m looking forward to trying out more things. I have a trip coming up this week, and I think these will come in handy since I’ll be kitchen-less and on the beach the whole day. I’ve got to balance off the piña coladas and Stoli cosmos with something!

Speaking of my trip, I’ll be leaving on Wednesday afternoon and staying here for some nights. I’m so excited. My family and I have gone on little weekend trips, but we haven’t been on a real vacation in a long time. Even though we’re only two hours away from our vacation spot, it’s still going to seem like we’re away from it all. I can’t wait to wake up, and the only thing I have to do is whatever I feel like doing. I’m definitely going to indulge! Indulge is such a seductive sounding word isn’t it?

Two nights ago dad juiced again, so I had some more leftover pulp to work with. What’d I decide to do this time?

I baked a loaf of carrot cornbread.

After seeing Gena’s Guacanara recipe, I couldn’t help but come to the realization that the pulp – being mostly carrots – would be a wonderful addition to a marinara sauce!

It gave so much body to the sauce.

The pulp is basically all fibre so it’s very filling! It ended up reminding me more of a bolognese sauce since it was so thick! I opted to serve these on top of some corn noodles and with some balsamic baked tofu. And on the side I came up with a little something that tasted so much like pizza! It was so easy and quick to put together it could be a perfect snack.

After dinner I decided to give myself some more nourishment and put on a French green clay mask.

Another trick I learned in beauty school is to brush masks on with a flat paint brush.

Yesterday I went on an adventure with my dad. We were on the prowl for kabocha, which I will now call the elusive kabocha! I was also on the look-out for some fresh figs. I really want to make a bowl of oatmeal inspired by Eliza and Maya with these little beauties! Alas, I found neither, but I did find some other wonderful things, which I’ll be sharing with you guys tomorrow. Much like Napoleon I don’t accept defeat easily, so the search is still on! Vive la recherche!

I hope you all enjoy this beautiful Saturday and the holiday!

Butternut Squash and Sage Pizza

I got this recipe from my Vegetarian Cookbook. I usually just get my recipes from places online, but sometimes I just like to browse through my books and see what they’ve got to offer. I found a recipe for butternut squash and sage pizza. I love butternut squash so much! I also had some leftover roti that I figured could be used as a pizza crust. I’m including the recipe for the pizza crust though in case you want to make your own.

Ingredients

  • 1/2 teaspoon active dried yeast
  • Pinch of granulated sugar
  • 4 cups strong white flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 2 shallots, finely chopped
  • 1 butternut squash, peeled, seeded and cubed, about 1 pound prepared weight
  • 16 sage leaves
  • 2, 14 ounces, cans fresh tomato sauce
  • 1 cup mozzarella cheese, sliced
  • 2 cups firm goat’s cheese
  • Salt and freshly ground black pepper
  • For the Dough
  • Put 1 1/4 cups warm water in a measuring jug. Add the yeast and sugar and leave for 6 to 10 minutes, until it is frothy. Sift the flour and salt into a large bowl and make a well in the centre. Gradually pour in the yeast mixture and the olive oil. Mix to make a smooth dough. Knead on a lightly floured surface for about 10 minutes until smooth, springy and elastic. Place the dough in a floured bowl, cover and leave to rise in a warm place for 1 1/2 hours.
  • Instructions
  • Preheat the oven to 400 degrees F. Oil four baking sheets. Put the butter and oil in a roasting tin and heat in the oven for a few minutes. Add the shallots, squash and half the sage leaves. Toss to coat. Roast for 15 to 20 minutes, until tender. Raise the oven temperature to 425 degrees F. Divide the dough into four equal pieces and roll out each piece on a floured surface to a 10 inch round. Transfer each round to a baking sheet and spread with tomato sauce, leaving a 1/2 inch border all around. Spoon the squash and shallot mixture over the top. Arrange the mozzarella over 6the squash mixture and crumble the goat’s cheese over. Scatter the remaining sage leaves over and season with plenty of salt and pepper. Bake for 15 to 20 minutes, until the cheese has melted and the crusts are golden.

And now presenting…

The pictures blurry, but you get the idea! The sage was definitely an interesting touch to this pizza. I feel like you could easily tweak this recipe to accommodate whatever  mood you’re in. Perhaps you feel like Rosemary is the lady of the day.

I don’t have any pictures of what I ate today, but I can tell you what I ate!

Breakfast

I brought it with me to my 9 AM class, and some people asked me what that was. I admit it did look weird, but it was good nonetheless. But I think I’ll add some maple syrup or some other sweetener to it next time

Lunch

Pita stuffed with:

  • homemade hummus + BBQ sauce
  • spinach and onions
  • sour cream

I also had some Trader Joe’s Spicy & Tangy almonds.

Dinner

  • Trader Joe’s vegetable gyoza + dipping sauce (mayo + BBQ sauce)
  • Kath’s recipe for coconut-crusted tofu

I came home to the most delicious smell! My roommate made a pizza, and of course I had to try some. So I had a slice of it. It was a mozzarella + caramelized onion + crust stuffed with ricotta pizza. Now that’s a mouth full!

Let’s see… before lunch I was getting hungry so I had some more cinnamon almonds that I keep in a container at my studio. After lunch and some errands I had this mint chocolate pudding (made out of tofu) that I made yesterday + some crumbled graham crackers. And just right now I had roasted chickpeas. My stomach had been feeling strange since last night. Which is why I didn’t have the pudding I made, yesterday. The doctor said to stay away from dairy products until I start to feel better. Well, I would’ve taken her advice if my roommate hadn’t made that pizza! It smelled way too good to pass up. Hopefully, I’ll be feeling better tomorrow though.
