Shortening The Distance

Recently, I paid a first (of many) visit to Foragers City Grocer. I found out about it when I asked a good friend of mine–and fellow conscious eater–where to buy fish around  the city. The farmer’s markets weren’t happening for me that day since rain was in the air, but I did go to one of her recommendations: Foragers City Market. There are two locations actually. One in DUMBO and the other in Chelsea. I went to the Chelsea location, which is apparently smaller (note to self: check out other location when I find myself in Brooklyn). Despite the small size, I found what I was looking for.

The mushrooms were a sight to behold.

I perused through their selection of artisanal and quality goods, quaint varyingly colored eggs, and their fish selection (my main reason for going there). This is a small location, but that didn’t bother me. Sometimes I love going to places that have a seemingly endless selection, but this felt more like a gallery than a museum. A selection of curated goods, and a place where quality makes the idea of quantity fade to the background. Being “new” to fish I didn’t feel overwhelmed with selection since it was quite small. I ended up taking the Alaskan Wild Coho salmon home with me, along with some other produce goodies.

Things like this encourage me to seek out produce from local family farms or my own garden because the organic produce from the big farms just isn’t as inspiring. With that in mind, what else can one expect when something is mass produced? But there are days when I “need” something, there’s little time, and perhaps the market isn’t even running–that’s when I make a quick run to one of the corner stores (luckily there’s one that has a good selection). Those quick runs can be exciting though, and I appreciate how convenient it is to live in this setting. Then there are times when I go to the market and see questionable items and prices that make me think, “seriously?” Oh boy, I’m a picky produce shopper aren’t I? Let me get back on track…

A Dinner Guest

Hey there good lookin’ (you get into the gallery through the passenger door).

Richmond’s First Friday Artwalk was last Friday, and I stopped by my professor’s opening–”Passenger Position”

The exhibition really made me think about his own experiences of things around him.
A new grain for breakfast.

I was trying to look up breakfast recipes using buckwheat groats, so I just put my own twist on this one found on the Pure2Raw blog. This was my first time actually going on the blog, and all of the recipes looked so tasty and fresh–just what I’ve been in the mood for lately. Not to mention, they seem like such an awesome duo living in harmony with each other and life’s journey.

Finally got around to using the corn kernels that have been sitting around for who knows how long.
Cooked in coconut oil, and seasoned with cinnamon and nutritional yeast.

This is such an economical and simple snack. If you’re use to buying popcorn that you heat up in a bag, I suggest just buying some corn kernels and they will last you longer + it’s not hard at all. Not to mention, you aren’t exposed to the harmful chemicals found in paper-wrapped convenience foods.

This past week, I had someone special over for a three-course dinner.
I spotted a beetroot and goat’s cheese salad in a cookbook I was browsing through at the bookstore.

We also tried the first cucumber from his garden!

I also made baked polenta with wild mushroom ragout...

And a secret ingredient–Idiazabal cheese–baked into the polenta.

The original recipe calls for pan-grilling, but since I was making the polenta in a cast-iron skillet I had the option of baking it as well. I love things roasted, baked, what have you.

After dinner we went to take Matilda out for a nice walk. Then when we got back it was time for the last course…

A raw vegan apple crisp for dessert.

 My favorite kind of desserts are the raw vegan kind because you can just really taste the flavors. The sweetness comes from a fruit usually, and I just love how simple the ingredients are–just using things that have been around for thousands of years.  It was a delicious dinner, if I may say so myself, and I got to share it with someone! I’ve been so use to making single-serving dishes, or ones with leftovers, but intentionally making a meal for more than just myself is such a nice feeling. I’ve been making meals for more than just myself a lot lately though. The weeks leading up to my move from Richmond, I just wanted to spend as much time with my close friends as possible, which included lots of meal sharing.

Speaking of my move. I’m down in Florida now, but I’ll be recapping my last few days up in Richmond. Hope everyone is doing well, and staying hydrated!

I’ve Got Questions; Have You Got Answers?

Wow, March definitely crept up on us… actually this whole year seems to be flying by so far. This just means spring is making its way here sooner! My weekend was spent re-working my sculpture, writing essays and proposals, and squeezing in some much needed hang out time. Also this weekend, some of my friends were playing at a Haiti Benefit house show–DIY style! My Monday actually started out on a strange note; when I awoke I was greeted to the sight of swollen face… well the right side anyhow. Since I wanted to get that checked out by a doctor right away I had to miss my make-up critique, but I’m not stressing out about it. Health comes before school!

Betty Lou’s Apricot Fruit Bar Pie = deliciously sweet and tangy, especially crumbled over yogurt, caramelized banana slices, and Sunland’s caramel peanut butter. I love how crumbling the bar makes it really resemble a pie of sorts. That morning’s breakfast’s  ”placemat” was an old magazine I was flipping through. While browsing, I stumbled across an interesting article that stressed the importance of eating throughout the day to keep energy levels up. I think most of food bloggers are into the habit of eating every few hours, but it seems that most people don’t. Lots of times I overhear people say that they haven’t eaten all day or since breakfast, and I wonder if they’re totally exaggerating or if they’re zombies. My body’s hunger cues chime in like clockwork, or sometimes even earlier. Lately, I find that my body is requiring even more than before. Am I turning into a boy? Hehe! Anyway, if my belly calls for something earlier than usual than I’ll have a snack to hold me over, and the hunger usually comes back around my usual mealtimes anyway. Works like a charm!

Actually, this brings me to a question I have for all of you: What are some savory snack ideas, and what are some of your favorite filling snacks?

Now that my schedule has gotten even busier, more on-the-go meals have been had.

Usually, I don’t care for leftovers, but now they are a blessing. I get to enjoy home-cooked food on the go! I packed a bunch of steamed kale, sweet potato with cinnamon, a cute little jar filled with coconut butter for the potato, and the butternut squash casserole. I also packed a Cranberry Apple Boomi Bar (reminded me of how delicious autumn tastes). I actually got in trouble for eating in class; is it my fault I came prepared?  Just kidding! Anywho, this new class is during one of my usual mealtimes and I don’t like to wait to the point where I’m starving. My hunger escalates pretty quickly so I’m hoping I won’t get in trouble for bringing a more snacky-looking meal. I’m thinking Greek yogurt, a dense bar, and some fruit/veggies. It presents to be an issue on Tuesdays because I literally have a class right after. I’m open to any ideas you all have!

MORE PIE!

This time around I tried the Betty Lou’s Blueberry Fruit Bar. I had this with yogurt, banana slices, and warmed up cashew butter. Holy yum! Now I’ve officially tried all their fruit bar flavors, and I must say that I was truly pleased with every single one of them. I don’t know how they managed to make them gluten-free and taste like a yummy slice of pie, but they did. If you look into their products you will see how many allergies they take into consideration; they take people into consideration. I’ve had the pleasure of speaking with one of Betty Lou’s sons and I can tell he has a genuine passion for life, family, health, and people; and yes, Betty Lou is a real person and also seems to have a zest for life from what I’ve heard. Companies like this are hard to find, but when I do, I definitely stand behind them!

And she went all out! Dare I say, I think this may be the best pizza I’ve ever had. The thick crust the focaccia gave it reminded me of Sicilian pizza–so good!

Melted over the last of my homemade focaccia, tomato sauce, tomato slices, caramelized onions and butternut squash, and cracked pepper.

I've been putting my hemp protein powder to good use!

I decided to try a recipe that was actually written on the bag: berries, banana (I opted for the fruits to be frozen), milk (whichever you prefer), and the hemp protein powder of course. I’ve already repeated this recipe, and feel free to change up the fruits if you wish (but I suggest keeping the banana). Anyone have any hemp protein powder recipes they’d like to share?

While browsing through Ayurvedic recipes I stumbled upon this little charm...

Date + ginger powder + almond. I’ve also tried this combo with cashew butter, and I highly suggest you try it! When I was reading on Ayurveda, I stumbled upon a very interesting article that I thought was worth sharing: “The Spirit of Cooking”. I agree with a lot of points Harish Johari brought up, and I was introduced to new information as well: “if it weren’t for spices, America might never have been discovered.”

I’ve got quite a few things to look forward to this month: the fashion show coming up on Saturday, my mom is flying into town on Friday. I’m also taking a road trip with one of my best friends down to Florida for spring break. Then at the end of the month I’m going to see Wicked! I hope March has been treating you all well so far!

Oh Happy Day

Before I say anything in this post I just want to give a warm welcome to some new readers! I am so glad that you all have found my blog and may it bring a smile to your face. Leftover pasta + manchego

Simply stated, I am a lover of cheese.

Now that we’re on the topic of chocolate, and I happen to be sitting on a throne made of decadent chocolate, it’s only natural to share!

3400 Phinney Hazelnut Crunch

Wow! Can’t quite recall when the last time was that I bit into a milk chocolate bar with such a great flavor. The crunchy hazelnut, the sweet milky chocolate, and the subtle salty twist won me over with the first bite.

Wonderfully complex. The curry flavor wasn’t just from the curry powder, but rather a blend of coriander, turmeric, mustard, cumin, fenugreek, paprika, red pepper, cardamom, nutmeg, cinnamon, and cloves. So you can imagine…

More leftovers!

It’s amazing what one can do with leftovers. I used the rest of the angel hair pasta for this dish. I sauteed some mushrooms with onions and then simmered them in a tomato sauce with balsamic vinegar. Using the rest of the sage and pumpkin seed crust mix I made awhile ago, I dredged some tofu in it and baked it till it was nice and crispy on the outside. I also tossed in some pine nuts and the very very last of the sage and pumpkin seed mix.

Delicious!

Now I ALWAYS pack snacks for on-the-go, because you never know when hunger may strike!

More spicy black bean burger goodness.

I only have one bean burger left! This one I had with roasted red pepper, onions, ketchup, cilantro, pepper jelly, and melted manchego.

I got home from my night class and I just wanted something comforting so I made a cup of hot cocoa with creamy, thick almond milk.

I made a sandwich on this delicious bread (has dried cranberries, sprouted grains, and various nuts and seeds). I filled it with melted manchego, pepper jelly, roasted red pepper, onions, and sweet basil. I also decided to sprinkle on some nutritional yeast on the kale.

Close up was in order.

Then it was time to take my dad to airport.

I came home, relaxed, and got ready for a date!

We went to his favorite place... a little Vietnamese restaurant.

I’m usually not a fan of brothy soups, I prefer thick purees. I tried his soup though and I would definitely order it for myself next time I go there. I thought it was really cool that the plate full of herbs, sprouts, and lime wedges were to rip apart and put in the soup; as much or as little as you’d like because not everyone’s tastes are the same.

I ordered fried tofu in a sweet and spicy lemongrass sauce with steamed rice.

The place may seem like a hole in a wall, but lots of times those restaurants have the best food! There’s a place down the street actually that serves Korean food and I swear the owner is a mother to everyone. If you’re sick she’ll give you extra helpings. These places seem so cozy that you could eat there alone and just hang out for hours. As for the date, it went well, but no romantic sparks. However, I’m going to keep hanging out with him because I think he’s a good friend and you never know what could happen!

Tiramisu for breakfast anyone?

I tried to recreate one of my favorite desserts in oatmeal form after seeing all of Katie’s creative recipes on her blog. Seriously, this little lady is endlessly creative and she has so much positive energy I can feel it through her words! I cooked my oatmeal in chocolate protein powder and instant coffee. Since I didn’t have mascarpone I subbed in some cream cheese, and added that while the oats were cooking. I topped it with coconut butter, more coffee granules, and a lady finger. Not quite like tiramisu but definitely reminiscent; delicious nonetheless!

On this sunny and re-energizing day I decided to tackle some recipes I had been eyeing for quite some time.

Those recipes, my dears, come straight from The Conscious Cook. I took a break from this book for awhile because I missed making up my own things.

Tomato bisque--another recipe of Chef Tal's that calls for cashew cream.

And focaccia with caramelized onions.

For the focaccia I opted to do 50/50 unbleached all-purpose flour and whole wheat. The dough ended up being enough for two large loaves. One for me and one for my roommate! Might I also add… I’m just going to say it flat out: this was my favorite meal all week and I don’t think anything can top it. Nope, can’t even try. The tomato soup was thick and full of flavors from the herbs and bay leaf it simmered with. I ripped off another piece of the bread to scoop up the very last drops of my soup. Foodgasm at it’s finest. And a pat on the back for me… on both sides! Seriously, I’ve forgotten how amazing and satisfying homemade bread is. As I was kneading it, I was reminded of how much fun the process is.

Her message really resonated with me and I felt it throughout the whole day as the sun was giving off it’s glorious and comforting rays. Wow, it’s not even Friday and I’m already celebrating! I hope you’re all in the same boat. Where should we sail?

Tarrant’s Cafe

So I had been eyeing this one restaurant for a couple of years now. It’s this cozy place with an old world feel. I used to pass it all the time since my ex lived in the apartments right above it. Recently I’ve read reviews saying how great Tarrant’s Cafe is! So I figured it’s about time I go there. I went there with a friend. Turns out that it was actually a date. I didn’t want it to be, but hey I got a free meal. A delicious free meal! There were actually choices for vegetarians, which is definitely a plus in my book. I went ahead and ordered the veggie calzone which consisted of mushrooms, broccoli, onion, zucchini, squash, ricotta, and I believe mozzarella. It was incredible! I definitely had leftovers since calzones are usually huge. This one wasn’t ridiculously proportioned though.

So here’s my leftover calzone with the marinara our waitress so nicely packed for me. Alongside my leftovers is a broiled sharon fruit with cinnamon sprinkled on top and some Marcona almonds. It was even better the next day.
