Satisfaction Guaranteed

I just finished my dinner and that’s one thought that came to mind. During my semester I usually make things in batches, and I have my go-to recipes that I know are quick and tasty. However, cooking a special meal is something that I appreciate every time. I just got done having an incredibly flavorful meal that took a bit of time to make, but was still very simple. Eating good food makes me feel… content. I think that’s the perfect word because I feel happy yet calm. If only you could see the smile on my face hehe.

This was my dinner!

Remember how I use to think brussel sprouts tasted like farts… that is until I gave them a second chance. I finally prepared them the way I thought I would enjoy them most. Now this just opened up so many more doors. I followed this recipe to make shallot and balsamic roasted brussel sprouts. I want to try roasting them with honey, honey and lime, and maple syrup! I bet it would be nothing short of delicious. For the cannellini beans I cooked them with minced garlic, cumin, dried basil, salt and pepper, and a bit of balsamic vinegar. These were served on top of basmati rice and everything was topped off with pine nuts.

I’m proud of myself for giving this veggie a second chance and deciding to prepare it myself. And you know what? It was absolutely delicious! Do you ever feel proud after cooking or baking something?

Super easy snack!

I think I’m doing a good job of coming up with simple savory snacks! This is a Dr. Kracker seeded spelt flatbread. I really enjoy the size of these flatbreads because they’re not as small as the Wasa crackers. You can top them with more things! The flavor is also something to be noted. I could have these plain too! It was delicious and simple which lends to  its versatility. You can make these a part of a savory or sweet snack (topping with nut butter and jam perhaps).

These are the Sunflower Cheddar crisps. They’re perfect to use as croutons in a salad as well. If you go on their site you can read all of the great recommendations they have for each flavor. Back to these crisps! I love their nuttiness, crunch, and cheesiness! By the way, these are awesome with avocado!

A refreshing shake!

I tried a packet of Jay Robb’s Vanilla Rice Protein powder. I blended in a frozen banana and almond butter as well. Yummy creaminess!

Another savory snack idea!

A nice fluffy pita filled with chickpeas, tomatoes, and goat cheese. I wish I would’ve had a garlic sauce or something to go with this!

POM!

Not too long ago I was sent a package of POM Wonderful’s 100% pomegranate juice. Juice is such a refreshing thing during the warm months. Perfect timing, I say! Anyway, these alone are tasty and not as tart as the fruit itself. I know this has nothing to do with the juice, but I’ve always loved the packaging. The glass ones are my favorite because you can re-use them. Anyway, I have one more container left and I wanted to try it in a recipe. Anyone have any suggestions???

I finally got around to trying another recipe from the Veganomicon.

These are beanballs! They were so easy to make and were perfect for leftovers. I served them with penne pasta (I didn’t have spaghetti on hand), artichoke scarpetta (that translates to “damn good sauce”), goat cheese, and pine nuts. On the side you see frozen grapes. These are one of my favorite things to eat when the weather gets warm.

This was a bowl Udi’s granola, Greek yogurt, sliced banana and apple, and my favorite peanut butter. Granola and yogurt, especially Greek yogurt, is one of my favorite combinations.

Oh, and I re-stocked my supply of my favorite BBQ sauce.

Peek-a-boo

These past few days have been filled with so much excitement and inspiration. Art Basel really left me feeling like a changed person! Wow, I have never been around so much eye candy in my life. Not to mention, the people watching was incredible. I saw this couple waiting in the women’s line for the restroom fixing their outfits:

So many people were walking pieces of art themselves. I also had other moments which didn’t quite feel real. Sidenote: Val Kilmer looks totally different now!

I tried the Lemon Poppyseed Heart Thrive that morning. The last one of the bunch that was graciously sent to me. I saved it for last because many of you told me it’s your favorite. I really wasn’t too keen on the flavor of this one – it had an odd soapy after-taste. I had this with vanilla Greek yogurt, ginger syrup, pineapple tidbits, and cashew butter. Overall, I enjoyed these vegan suncakes. My favorites were: Cranberry, Chocolate Chip, and Raisin! And don’t forget, if you order them online you can mention my blog. They also have a section of the site that has serving suggestions. (Cream cheese + brown sugar over a warm Heart Thrive = yumm!)

I finally arrived in Florida close to 11 pm. It was nice to just relax and talk in the kitchen with my mom, while fulfilling my duty and finishing the pint of vanilla bean ice cream with amaretto. The next morning I woke up and I realized my window was open all night. I had to smile to myself that this can happen in December. I went into the most spacious room in the house and did some yoga. I love the Kashi GoLean Crunch! I haven’t tried the honey almond flax flavor (love it). I think bananas are the perfect fruit for this cereal. Along with some rose green tea and I’m set to go!

The first day I was overwhelmed and left with a high! So much incredible art, who can help but be left with a glorious dizzy spell.

I sprinkled on a medley of nuts: pistachios, pecans, cashews, and almonds. On the side I had a bowl of yogurt with kiwi and the most delicious papaya I’ve ever tasted. Organic and straight from the papaya tree my parents have been growing in the backyard!

I made myself a similar sandwich to my dad’s from the day before. Tomato slices, Vermont cheddar with cracked black pepper, horseradish sauce, and olive tapenade. I usually don’t like olives but this particular tapenade is the exception. I also made some rotkohl with chunky spiced apple sauce and coconut oil.

My mom boiled sweet potatoes; good thinking! I topped mine with coconut oil, cinnamon, and pineapple bits. I also had some more Vermont cheddar, tomato, avocado, and leftover rotkohl.

Soul sister!

I got home very late, but I woke up early and eager for my third day attending Art Basel. This time I was going with my parents and a family friend. It was nice to view all the artwork alone for the first couple of days, but I found myself wishing I had someone to discuss things with. So on Saturday I was blessed with the gift of gab! But before all that happened, breakfast had to be eaten.

It was funny because I saw they had peppermint bark when I looked at their ad outside. Right after that thought my mom’s friend announced they were giving out samples of it. I squealed with excitement!!!

We decided to go to Yuca, we had passed it many times and it always seemed to draw the crowd in. Come here on a Friday night and you get a night of salsa dancing!

Ravioli Yucalotti

“Homemade spinach and ricotta ravioli with a cream of black bean, and infused with goat cheese” This was so delicious! I just realized I forgot to take a picture of dessert. But I’ll tell you what it was. A Tres Leches de Turron: “‘A yuca original’ sponge cake with Spanish ‘Turrón de Jijona’,  served with our homemade guava cream cheese ice cream” So good! The sponge cake tasted like a meringue.

I decided to spend my last night in Florida just relaxing because I had to take up at 4 am to catch my flight back up to Richmond. I only have a few exams left and then I go back to Florida on Friday. The sunshine is waiting for me, and I’ll be sure to share it all with you. I have so many things to look forward to in these upcoming weeks.

First off,

Our breakfast for her last day in town.

What was served? I made oatmeal with cinnamon and a bruleed banana + shredded coconut for my mom. She also wanted some of the bread we had gotten from the brasserie with sunflower seed butter. I opted for an end piece with marmalade and butter. I also tried a Heart Thrive. This time it was the raisin flavor and it was so good! It was delicious alone and crumbled over vanilla Greek yogurt + persimmon + cashew butter. We both had cups of warm pumpkin spice soymilk with pumpkin spice! We just dilly-dallied around the apartment and took Matilda on a walk.

After we got ready, we were off to the studio!

Wishing I didn't have to spend my last day with my mom at the studio.

Lazy Sundays

I had a Rudi’s Organic English Muffin – these are so good! One half with cashew butter and the other half with Creme of Almonds and Dates spread. I also had vanilla Greek yogurt with marmalade and some slices of bananas. I also saved some banana slices for my English Muffin. My sweet tooth was calling my name that morning and I had a Marzipan candy and I tried a Newman’s Own Organic dark chocolate peppermint cup. This one was so good! I did some things around the apartment and spent most of my day painting.

I had some of the baguette from the brasserie with basil pesto, and a mock tuna made with soybeans. I also had a sliced up a carrot and look at that beautiful persimmon! I’m glad I decided to cut it that way.

I tried someone's favorite nighttime snack.

Well not just someone, but I tried Jessica’s favorite! Warmed up applesauce with cinnamon, melted chocolate chips, a crumbled graham cracker, and since I didn’t have almond butter I just used cashew. Girl, now I know why this snack is at the top of your list.

Spreading the love on Monday.

What a great way to start a Monday – with heart-shaped goodies! I tried the date Heart Thrive that morning. The date flavor wasn’t as intense as some of the other flavors I’ve tried. Maybe it was just me, but it seemed off. I had it over vanilla Greek yogurt, a sliced banana, and cashew butter. Mixed in with everything else it was good, but alone I didn’t really like it.

This sandwich was composed of: a beer-brat Tofurky sausage, homemade tomato sauce, red onions, and relish. Yum! I love using a baguette as the bread for a sandwich.

I obviously couldn't get enough!

So later on I snacked on some more with a baked apple + cinnamon, goat cheese, and honey!

I also got an incredibly sweet package in the mail!

From one of the sweetest girls around, Mitri! Her package warmed my heart and kept a smile on my face for the rest of the day.

Thank you so much! Don’t you love acts of kindness? Especially through snailmail! Since Tuesday was around the corner, I spent most of my day kicking major booty in the studio. Tuesday = my final critique of the semester!

Breakfast on-the-go

This is why bars are perfect sometimes! I tried the last 18 rabbits granola bar – Haute Diggity Date. This was incredibly delicious and is right up there with the first one I tried. The one that made me think, “this is what a granola bar is suppose to taste like.” Thank you for sending me these bars to review! I am so glad that I did because I will definitely find myself getting these in the future.

So now I will share with you what my piece for this semester’s final critique looked like. Now keep in mind that being there in person is an entirely different experience – as is with most art. I also had a Nag Champa incense burning which definitely added to the piece itself. I had originally wanted to set it up in various open fields and document my interaction in the space. Then I realized how little time I had, and I was debating doing a performance piece with it instead. However, nothing specific came to mind and I never force myself into anything when it comes to my art. So I just let it be, but I will set it up outside and film that in my leisure time.

It’s a State of Mind

It’s been far too long since my vivacious mother has graced the pages of my blog! When I think of my mom I think of what someone who has a passion for life. She has this youthfulness about her and I believe it can be a state of mind. How you carry and perceive yourself really reflects a lot on how people see you. This brings me to my number one fashion tip: wear it with confidence! When you’ve finally decided what outfit you want to wear, or if you just threw something on, don’t forget to walk out your door with a good amount of self-esteem and work it!

First off I started my Thanksgiving day with some homemade granola!

Then we watched Breakfast at Tiffany’s. I had never seen that movie, and now I see why so many people love it!

My mom had some of the gourmet cashew toffee Holly sent me, a Fig Newman, banana, toast with sunflower seed butter (her first time trying it), and an arepa con choclo. Her and I actually split the delicious arepa. For myself I tried the chocolate Heart Thrive over some vanilla Greek yogurt, cashew butter, some Newman’s Own Organic dark chocolate, and a sliced banana. I think the Heart Thrives are getting better and better with each new flavor I try. I heated this one up and I loved the melted chocolate. This one in particular tastes like a cookie. Can you guess which kind? Then we got ready for some shopping!

The cooking class that day was entirely based around chocolate. Katie, I thought of you!

We were done shopping and decided to head home for some lunch. Well the day before my mom flew in I had decided to bake something for us.

The ingredients!

I used French Meadow Bakery’s gluten-free pizza crust! Pizza 1: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted eggplant. Pizza 2: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted red pepper and artichokes.

I must say that I was surprised at how normal the crust tasted. In fact, it didn’t occur to me till later that, “Oh yeah! This is gluten-free crust. Wow!” After lunch we were headed out again and I had forgotten something so I went back. Then I realized I had locked us out of the apartment and my roommate was out of town. Oops! Thank goodness through some guardian angels were watching out for me and my neighbors walked into the building at the right moment. They had a way of getting me into my apartment. Imagine poor Matilda waiting for us!

Dinnertime!

We each had Sunshine Burgers topped with diced tomato, seasoned avocado, and ketchup. I also sauteed some kale in balsamic vinegar and honey + grated parmesan. Lastly, we split a beautiful persimmon! I asked my mom what she thought of the Sunshine Burger. Her response: “DELICIOUS!” After dinner we got ready to go to the movies.

And I packed some movie snacks for us.

The movie made me smile so much because I totally feel the same way!

After a couple of hours of talking we headed home and laid our little heads to rest.

You are all so sweet and I’m incredibly thankful for each and every single one of you. I can’t remember exactly what sparked me to start a blog, but whatever that reason is – it doesn’t really matter. What matters is that it brought me here, with a bunch of wonderful friends. I hope you all had a wonderful Thanksgiving and are enjoying all the delicious leftovers. Cooking shouldn’t be a problem for the next few days!

What Makes You Smile?

I’m going to start this post off with something that made me smile about a second ago. I just had a most delicious cup of tea I got at a coffeeshop. I had green tea with jasmine & lemon.

So remember when I said that I always say I’m going to get a rain jacket and I don’t, and then it rains?

I finally got one!

When I got back from shopping I started to make my lunch.

I baked some sweet potato fries with Old Bay seasoning and cumin. I also baked some Gardein chick’n tenders as well. I squirted ketchup on both and sprinkled some curry powder on as well. I made something of Sophia’s but with a different texture. Rather than make her kabocha soup with bacon and goat cheese- I made it a mash with coconut oil. I also subbed out the bacon for fakin’ bits. And that cute little chocolate cup? This time I tried a Newman’s Own Organic Dark Chocolate Peanut Butter Cups. It tasted good, but I wasn’t too keen on the gooey peanut butter middle. I was hoping it would be a bit more solid.

I've also been working on my project.

I started carving some wood yesterday. And after about 6 hours of that I realized I want to keep my thumb – it was so sore!

Granola bar!

I tried another 18 Rabbit granola bar that was graciously sent to me. This time it was the Funky Figs & Cherries. First off, I love the names of the flavors – they’re so much fun! I just heated it up and crumbled it over some vanilla Greek yogurt, and dark sweet cherries. This one was also very granola-y, however the first flavor I tried (Cheeky Cherry Chocolate) is the best so far. I swore I also tasted some chocolate in this one. Silly me didn’t check the ingredients though! Oh well, what matters is that it tasted good, right?

I had a little mishap with my lunch.

I had been cooking some kale on the stove and I went away and completely forgot about cooking, until I smelled something burning! I quickly ran into the kitchen and took it off the burner. Although it shriveled up a lot, it still tasted very good. May I suggest sautéing kale in a mix of olive oil, balsamic vinegar, honey, and s&p? I also toasted a quick sandwich: goat cheese, basil pesto, and tomato with balsamic vinegar.

Yesterday, I got a bit of relaxing time in. I just did some beauty things and had dinner roasting and boiling away in the mean time.

I roasted some kabocha chunks, and boiled some edamame and quinoa pasta. I tossed it all in coconut oil, lime juice and s&p, then drizzled on some tamarind-date chutney. One word: yum. I haven’t had edamame in forever and I just found a great edamame succotash recipe I must try.

Now we're a little more caught up now.

This morning I decided to try the cranberry flavored Heart Thrive. I crumbled it over some vanilla Greek yogurt mixed with pumpkin puree. I also drizzled on some cashew butter and tossed in a handful of dried cranberries. To make the Heart Thrive less dry I heated it up in the microwave and spread on a bit of coconut oil. I must say I really enjoyed this flavor! It was perfectly tart and had a much stronger flavor than the others I tried.

I only had one class today, so that left me with plenty of time to run errands and prepare some things for when my mom arrives tomorrow. I’m so excited!

Quick lunch

I got home and I was so hungry so I had some hemp brownie bites while I quickly prepared my lunch. No, not special brownies! I followed a BBQ Shepard’s Pie recipe from the Sunshine Burgers website with the BBQ flavor. Basically, I roasted corn, some cubed potato bits, and mozzarella in the oven. Afterwards I just drizzled on some BBQ sauce. I also had it with some beautiful blanched kale. I love that green!

Tomorrow is Thanksgiving and I’m excited. Although I’m having a rather untraditional Thanksgiving (when is it not?), it’s going to be so nice to be with my mother. Since her flight comes in around 2, we’ll be having a Thanksgiving dinner. Which means she’ll be helping me in the kitchen! We make a great team. Anyway, I wanted to know what makes you all smile? I know for myself, it’s mostly the little things that cheer me up. For instance, when I take Matilda on walks I always notice the little quirks about Richmond. There are a lot of characters around here and they definitely make sure to leave their mark. Things like painted ice cream cones cut out of cardboard hanging on a string over a telephone line. I wish you all a wonderful Thanksgiving! Aside from having delicious food, I think the most important part is to enjoy being with people you care about. And being around those people can make a world seemingly filled with troubles, a much better place.

Inspired Eats

Hello hello there! I am so happy to say that these past few days have been awesome. I think it’s the whole mentality I’m trying to maintain to get me through the winter.  It was actually the title for a recent post of mine, “life is what you make of it.” The winter doesn’t have to suck the life out of me (okay I’m being dramatic here), but instead I focus on what I’m doing now and all the positives of this holiday season. And all your answers really stuck with me and reminded me of so many things I have to smile about. Don’t we all?

Here are few of my reasons, inspired by some of you, in the past couple of days.

A different version of frozen yogurt

I took a container of So Delicious coconut milk yogurt and stuck it in the freezer.

Two cookies for good measure!

The night I received the package I had a couple of Holly’s homemade vegan pumpkin molasses cookies. Wow! These were so good, I’m glad she shared her recipe.

Inspired by two very special ladies.

The other day I saw that Maya and Eliza had each made a bowl of gingerbread-inspired oats. Do I need to explain? This is why I love breakfast. When I’ve had a delicious breakfast then I know it’s going to be a good day.

On my day off from classes I felt like dressing-up.

I had recently gotten a ton of basil.

So I decided to make a pesto. Rather than using raw pine nuts I toasted them first and it really made a difference in the flavor.

Afternoon snack

These are the Apple Grahams that came in the package Holly sent me. I’ve tried them plain, with the medley jam she also sent me, pumpkin butter, dipped in Sugar Cookie tea, and pumpkin spice soymilk. I have yet to crumble them on a nice warm bowl of oatmeal.

Almost forgot about lunch!

For lunch I tried another Gardein product. This time it was the chick’n scallopini. I really liked how they lightly-seasoned these, and they were also a really nice size. There are some vegetarian products out there that give such small portions and that can be frustrating. I decided to cook up the rest of cauliflower and chick’n scallopini in a Sweet Pepper and Coconut cooking sauce. Served with Nishiki rice. So good that even my little Moofia toy wanted some.

I recently picked up a new item at the grocery store.

What could it be? A rutabaga! I’m pretty sure I’ve never tried one before. My darling darling, Brooke, said this was one veggie I needed to try. She recommended to try them with cranberries, so of course I listened! I roasted the rutabaga and an apple with sugar, salt, and pumpkin pie spice. I also had a Tofurky Kielbasa decorated with ketchup, beer-brewed mustard, and a bit of sweet relish. Yum! I definitely was looking up more rutabaga recipes after this.

This was a special bowl of oatmeal...

In Brooke’s survey one of the questions was, “bowl of hot cereal you have been wanting to try.” And I answered a banana rum cake-inspired oatmeal. Lynn thought it sounded good too, so I decided to make it! I made my way to the liquor store and got a miniature bottle of Captain Morgan’s spiced rum. I did not prepare my oatmeal as I usually do because I additionally cooked it with a couple spoonfuls of spiced rum and a bruleed banana. I topped it with a sliced banana, some pecans, New Morning Honey Grahams, and a ZenSoy banana pudding cup.

I wanted to try out something different for the wee bit of kale I had left. It was just enough to help make this sandwich (I just boiled it). I assembled the sandwich with French Meadow Bakery’s gluten-free sandwich bread, cashew butter, kale, and pumpkin butter. This was a new combination I thought of and wanted to try out; I think some onion jam would’ve definitely sealed the deal, but this was delicious as well. I had some of the leftover hummus from Brittany’s sandwich recipe – perfect for the broccoli!

Bright and early on a Saturday!

Since I have to wake up really early on a Saturday morning (and I hadn’t gotten home on Friday till 4:30 am), I just want as much sleep as I can get. So when I woke up I quickly put my breakfast together. I tried another 18 Rabbits flavor that was sent to me; that morning I decided to try the “Nibble a Sultana” bar. I had it with a container of vanilla Greek yogurt, a diced apple, and cinnamon. I’ve seen sultanas baked with apples in little tarts. This bar didn’t have that same perfect granola-y flavor the other one had. It was okay, but I probably wouldn’t buy it for myself.

With the rest of my rutabaga I followed Brooke’s advice again and made a mash out of it! I stumbled upon this recipe and I knew it would be nothing short of delicious. However, I ended up sprinkling on some pumpkin pie spice and mixed some coconut oil in as well. This had me licking my bowl clean. The sandwich was inspired by a local coffee-shop item on their menu. It had my homemade basil pesto, Gardein chick’n scallopini, roasted red peppers, and goat cheese. Wow! Do any of you ever recreate restaurant recipes?

Then, next thing you know dinnertime rolled around! I had become so focused that I had totally lost track of time.

I’ve had this recipe saved for a really long time and totally forgot about it! This tasted very different from what I usually eat, sweet and spicy, but it was a very pleasant change.

Later that night I ended up going to some of my friends’ art exhibit and met up with another friend. Afterwards we went to a birthday celebration and eventually I came back home and I woke up with two thoughts on my mind. “I have on last night’s makeup” and “April’s pumpkin French toast sticks.”

April’s recipe also calls for a peanut butter frosting. I changed it around a bit and made it vegan by omitting the eggs, and used Pumpkin Spice soymilk (highly recommended!!!) and a thickening agent. I used two thick slices of Rudi’s 100% Whole Wheat bread. The toppings include: diced apple, more pumpkin pie spice, and some Apple & Maple syrup. This breakfast was such a great way to start a beautiful day.

The lovely people over at Kardea generously sent me 4 of their bars to sample. A lot of their products are known to aide in cholesterol management. I know Cheerio’s help with that too, but these my dear readers, are the bomb.com. I’ve already decided that I’m going to try the Banana Walnut bar last because I like to save the best for last. Although, I have a feeling it really wouldn’t matter because so far out of the ones I’ve tried, they’re awesome. A lot of bars taste good, but they don’t quite live up to the name of their flavors. However, these bars actually taste like what they’re named. The Lemon Ginger bar wasn’t overwhelming at all – it was just right.

I’m not sure if the strange look of it is because it was delivered to me when it was really hot out. Cranberry check. Almond check. These don’t even taste like nutritional bars (in a very good way)! Just delicious. I’ll give you guys some info on these bars:

Last Saturday my friend organized an eating contest at a park, and I was the judge/scooper. What’d they have to eat? Mashed potatoes! All participants had to bring in a bag. Kim also brought fake bacon bits, which was a good idea. And I kindly offered my assistance to anyone who felt they could no longer fulfill their “duties”.

I was browing through biscotti recipes and found one that I had the ingredients for. I wanted to make lemon ginger biscotti but, alas, I had no crystallized ginger and I’m sure this was something my neighbor wouldn’t have had either. The aroma of these wafting in the apartment as they were baking and I was studying… it made my life a little sweeter.

Like my girl, Janetha, I love cinnamon. I went a little crazy with it and this is why -ladies and gentlemen- my oats are brown. I put a big spoonful of peanut butter and a little one of my Date and Almond Creme spread. To add the finishing touch to this bowl of oats, I bruleed some bananas a la Katie! The cinnamon is hogging the spotlight though.

I tried to do this blob of peanut butter justice by making a bowl of PB&J oats. Holla at the peanut butter queen, Jenny! As I was saying goodbye to one jar of yummy goodness, I said hello to Crofter’s Blueberry Superfruit spread. Ah so good, and I could see the tiny blueberries in there. I don’t bother with jellies that don’t even have an inkling of a fruit, but Crofter’s spreads are jam packed with real fruits. Did ya catch that?

I’ve really been inspired by everyone’s blogs lately, and last week I was reading Sophia’s blog and she had posted a recipe that seemed way too good to just look at.

Unfortunately, the fake bacon bits that were brought the eating contest were finished off, so I couldn’t sprinkle them on! So I made the best of it and blended in some ketchup, smoke sauce, and Worcestershire. How do you say that word anyway?

Hey Sophia… this was awesome!!! I love this girl’s blog. Not only does she have a refined taste for things that taste delicious, but she also shares a piece of her mind and heart with her readers in every post.

There are so many bloggers to talk about in this post. I had the chance to actually meet a fellow blogger yesterday. If you guys don’t know her already, I met up with Brittany from Eating Bird Food. It’s always neat to see when you guys meet up with other bloggers. Some of you hit it off and became partners in crime like Brooke and Kailey! Holly and Angharad too! All the meet-ups just seemed like so much fun. Brittany and I agreed to meet up at Ipanema, a vegetarian and vegan restaurant. I was so excited when she suggested we go there – hell yeah girl! I love that place, and a couple of my friends work there as well.

This place reminds me of Germany because you walk down, like walking into a Ratskeller. A Ratskeller is basically a tavern below street level and it’s the city hall’s basement. When Brittany walked through the door I immediately though, “oh my gosh she’s so pretty and adorable!” We looked through the menu and when we decided on what we wanted, we made our way into one of the booths.

Service was rather fast that night! Oh gosh, I can’t remember exactly what this entailed, but I’ll give it a shot. I ordered an Indian pizza with a curry sauce, zucchini, cauliflower, red onions, and paneer. The sauce was strangely zesty and for some reason I was envisioning a red or orange curry sauce. It was good, but I probably wouldn’t order it again. The side salad’s dressing was yummy though! I tried some of what Brittany ordered as well. She got their Thai carrot soup, which resembled baby food haha! But it was very tasty. She also got a spinach salad with pears, gorgonzola, and pecans. That combination is always a winner in my book.

It was getting late and after talking it up, we asked for our checks. Brittany, it was so nice meeting you! You’re so kind and polite – can’t wait till our puppies meet! And next time, I’m taking more pictures!

It’s Wednesday everyone! Is it just me or did it feel like the end of the week on Monday and Tuesday? Well, now we’re finally getting there!

Off to a Good Start

I’ll start this post off the same way I start my day – with breakfast!

I tried some samples of the Artisana nut butters. I’m going to make a bold statement right now, but I’m just gonna go right ahead and put it out there. I haven’t tried all of the samples, but I feel that I can officially say that these nut butters are the bomb! If you’re a nut butter person, you will love these no questions asked. The nuts are all ground to perfection and have such a great consistency. I can actually taste each nuts’ unique flavor! I’m using the word “nuts” too much! So let’s move on, shall we?

I also got to try something new! A Vitalicious Golden Corn VitaTop. I’ve always wanted to try this flavor because I love cornbread and these VitaTops just look so dainty! This was really good, and went perfectly with my meal. Oh gosh, almost forgot to review the recipe for you guys. TRY IT! I loved the addition of bulgur, which made it heartier. Eat it with some cornbread, or if you’ve got one of these yummy Tops on hand. I’m getting bossy! But for real guys…

Since we’re on the topic of VitaTops, I’ve been able to try a couple more flavors out.

I admit that I was hestitant to try these because I read the words “double chocolate dream.” And for the most part, I’m not a big fan of double chocolate anything. However, I do love white chocolate and I think the addition of those chips really made it awesome. Not to mention this was warm, pillowy, moist, and gooey!

Deep Chocolate! I didn’t like this one as much as the one with white chocolate chips. But I did enjoy the melted chocolate! For some reason I look yellow in that picture (flash?). I’ve also tried the brownie, and I was happy that they were bigger than the VitaTops. The only complaint so far that I have about the VitaTops is that they’re just a few bites of goodness. I guess that’s the trade off? For myself, I enjoy these as part of a yummy snack, or an extra to my meal. If I were having these as part of a breakfast I would definitely have to have two. I’m not a calorie counter, but I do know that my breakfast carbs have to be over 100 calories… unless I want to be hungry again in an hour. I actually have a question regarding morning hunger, that I’ll get to on another post. Anywho, I’d imagine that these are wonderful for dieters because you don’t have to “splurge” to have a flavorful treat (they don’t skimp on flavor). You can have your cake, and eat it too! (Any cake really, whatever your little tastebuds desire!)

Let’s see… what else have I been eating lately? Oh! The other day I marinated some tempeh to make a “BLT”. If any of you guys have any awesome tempeh recipes, please, send them on over!

First Friday was awhile ago over here in my corner of the world. First Friday is when the galleries around here show off the new works they have up, and tons of people walk around and take it all in. Sometimes you see some real characters – the area’s eccentrics. Love it! Anyway, as you all know Matilda is practically attached to my hip so of course she went to this event with me! No one at any of the galleries has ever objected. I think it’s because she’s so freaking cute. But here are some pictures after the art and a show.

Matilda would be so jealous if she saw this picture up. I think Sophia looks funny with her bat wings and squinty eyes. This was the night my entire zipcode experienced a blackout, so I went to my friend’s house. When the power came back we watched this murder mystery called Brick. This movie was so classical in the way it was shot… don’t really see mystery films made this way anymore.

Back to some more eats! The other day I was at the bookstore browsing through magazines that I didn’t want to pay for. I had my handy dandy Moleskin and copied down an interesting recipe I saw in a Vegetarian Times issue: ginger-miso yam wraps. This was my first time trying collard greens, and I tried them RAW!

This was so nice to look at and prepare. Collard greens remind me of the Cabbage Patch Kids. I made a slight change to the recipe, and poured in some coconut milk.

I decided to add some variety to my eats by getting a bag of tortilla chips. Yay! I wish I had a cheese grater so I could make nachos. Well, I kind of made some the other day by cutting squares to put on each chip haha. But I prefer a messy, melted, gooey explosiong when it comes to nachos.

I happened to be reading Janetha’s blog while I was eating this, and saw that she made a tuna melt sandwich with goat cheese. Awesome idea, girl!

I also spread some pumpkin butter on this great bread. This spelt bread tastes really good – perfect for sandwiches. On the side I sautéed some yellow squash in coconut oil and toasted some coconut shreds. To melt the cheese I put my sandwich in the toaster oven since I don’t have a griller. The crispness from the apple and onions, the crunch from the bread, and the smoky “bacon” with cheddar were awesome all together!

Oops! It looks like I didn’t really clean the mold that well… there’s some OJ at the tip. For these pops I just added some chocolate sprinkles to the warm, melted banana + coconut milk/shreds mush. Naturally, the sprinkles melted and spread their love throughout. I love the creaminess of these pops, and the texture the coconut shreds add to them as well.

Do you love the foam? I use the chocolate tablets that you have to put in the blender with boiling milk. Nothing beats my grandma’s hot chocolate though. She does it the old-fashioned way by boiling the milk on the stove. Then she pours it into her old tin pitcher and gets to crackin’ with her over-sized pestle to crush the chocolate. Then she whirls it around to make it foamy. My grandma has such strong arms: hot cocoa to strength train = lots of great hugs for the granddaughter.

So now the moment you’ve all been waiting for! It’s time to announce the winner of the U.S. Mills giveaway. First off, I loved reading everyone’s ideas – most of you enjoy it with yogurt and fruits. If you haven’t tried it yet, I suggest you make peanut butter balls by just coating a blob of peanut butter in cereal. Example, if you guys have a cereal that tastes corny you can also add in some coconut shreds to the peanut butter blobs. Anyway, I’m like an annoying commercial right now when all you want is to get back to the show! Okay, okay, and the winner is…

The summer I was fifteen years old I decided to go to beauty school rather than the usual summer camp. My mom actually came up with this idea! She was like, “would you rather go to beauty school or summer camp… again?” So of course I wanted to be like Frenchie from Grease, minus the drop out part. I learned many divine secrets of the ya-ya sisterhood, and once in a blue moon I decide to share these tidbits. Well, readers, tonight is one of those nights! I know some people are concerned with the wrinkles emerging around their expressive eyes. Here’s a little secret that was passed on to me: when cleaning around your eyes, go outward for the upper lid area and inward (towards the nose) for underneath. Basically, in a counter clockwise motion. Also, it’s best to use your ring finger since it puts the least amount of pressure. Makes sense, huh?

These are some of my favorite beauty products that I use. I started using pond’s cold cream when I found out that is one of my grandma’s secrets. So many secrets in this post! I won’t divulge her other one though. The round thing you see is actually a solid shampoo by this company called LUSH. All of their products are handmade and they use fresh, organic fruit and vegetables. And whenever I’m down in Florida I use some of my mom’s stuff too, like her Kérastase products. Neela knows what’s up and also uses this brand!

Coconut oil can be used for so many things! Sometimes I even use it to remove my eye makeup. For the most part I leave it on my hair overnight and wash it out in the morning. It leaves my hair feeling and looking incredibly soft! Umm did I mention that it tastes delicious too?

However, I think the best beauty secret is a glass that’s half full… half full of what? Positivity! I find that looking at the bright side of things and keeping stress at bay is a big contributor to aging well. There’s this look of calm, grace, and innocence that I can see in people’s faces when they have this attitude. Being around people like this bring my heart level down, not out of boredom, but because they’re exuding all these good vibes. Less tension equals a less tense face!

All this talk of beauty led me to thinking about habits I want to change – have been changing. There are certain things that seem unimportant that I really want to develop. Like little things that involve me taking care of my outward appearance. Oh say… putting on lotion, plucking my eyebrows, pampering myself with hair masks. It’s these silly little things that I know will slowly help me regain my confidence and just feel better about myself overall. I think it’s more the idea behind these activities: self-love. I can’t help but feel good inside. Why don’t I deserve to take some time out of my day to indulge in a little princess treatment?

On the topic of self-love, there’s been a wonderful message going around the blog community. Caitlin’s Operation Beautiful has been spreading like wildfire! I love seeing everyone’s notes. The other day I left some of my own around town. They don’t necessarily have to do with loving yourself per se, but it’s the thought that counts!

Later on I went over to my best friend’s house to celebrate a special one year old’s birthday! I also found out one of my good friends is two months pregnant! I’m looking forward to going on our girl’s nights with the baby! Oh my gosh I should get back into crocheting and make something really cute. She doesn’t know if it’s a boy or a girl yet, so maybe I’ll wait.

For Saturday I wanted to make something special. I figured this would make up for not having been able to really celebrate Father’s Day. I decided to make French Toast with a couple of twists. Let’s just say I was inspired by Indian sweets and colonization gone semi-vegan! For the bread I decided to use Trader Joe’s crumpets and I followed a vegan recipe for the mixture.

Breakfast is served!

Yet again, Sun Warrior was a tasty addition to my morning smoothie topped with cinnamon clusters. I also had some blueberry green tea in my cheery yellow mug!

Man, this French toast has been dog piled! I sliced some strawberries, chopped some macadamias, sprinkled fresh ground cardamom seeds and sugar, and drizzled a bit of maple syrup on everything. Cinnamon sticks can make anything look fancy, but my favorite part is the gooseberry I’d like like to call a little edible beach ball.

Once I started eating it I thought of something else I could add to this! As if there isn’t enough?

My mom joined me mid way through my breakfast. She was running late because she had a session with her personal trainer. Mom is super fit, so don't mess!

After this delicious breakfast I got ready to go to my favorite yoga class. The instructor is incredible and I feel like every time I go to his classes I learn something new, even if he repeats the routine. By the time me and my mom got home we were hungry and ready for lunch! So we whipped up something as quick as we could. Her and I are a dream team in the kitchen. I took care of the veggies, while she handled the rest.

Bananas in stir-fries are so yummy! I also used the Key Lime Honey Ginger sauce for a bit more flavor and topped the veggies with paneer.

For dinner we used up the leftover mung beans to go along with some spinach, goat cheese, and balsamic vinaigrette.

I was feeling pretty simple so I opted for some slices of toast with butter, apple butter, and my forgotten favorite – honey!

I just updated my MacBook Pro and it is so cool! I almost feel like a got a new laptop. Insert holy music!!!

I’m so excited about my next post! I’ve tried so many things over this past weekend and I have a few special shout-outs to some of our beloved  bloggers. I hope you’re all relaxing on this sunday evening and wake up on the right side of bed tomorrow morning.

Stir-fry and Goat Cheese

This was my lunch awhile back but I just wanted to share the goods. I made a stir-fry with red cabbage, chickpeas, summer squash, and I forgot what sauce. I love red cabbage in my stir-fries. Actually, a really yummy addition to stir-fries are pomegranate seeds! My mom likes to do that, and it adds this delicious splash of flavor. Now! The toast was my favorite part of the meal. I had some goat cheese leftover from the pizza I made, so I thought, “hmm… why don’t I put this on top of some bread?” So I toasted some bread, spread on some goat cheese, and put on some of Trader Joe’s Rosemary Marcona almonds. I also sprinkled on some extra rosemary because I can! Have you guys ever had rosemary bread? If you haven’t, I highly highly recommend it! You can try baking it yourself and dipping it in a mix of olive oil and fresh ground black pepper. It’s seriously to die for.
