Ketchup

I have quite a few things to catch you all up on!

First off,

Our breakfast for her last day in town.

What was served? I made oatmeal with cinnamon and a bruleed banana + shredded coconut for my mom. She also wanted some of the bread we had gotten from the brasserie with sunflower seed butter. I opted for an end piece with marmalade and butter. I also tried a Heart Thrive. This time it was the raisin flavor and it was so good! It was delicious alone and crumbled over vanilla Greek yogurt + persimmon + cashew butter. We both had cups of warm pumpkin spice soymilk with pumpkin spice! We just dilly-dallied around the apartment and took Matilda on a walk.

Then lunch time rolled around…

After we got ready, we were off to the studio!

Wishing I didn't have to spend my last day with my mom at the studio.

But before I dropped her off at the airport we were able to meet up with one my bests for some coffee.

I was sad when I dropped my mom off at the airport but luckily I’ll be flying down to Florida tomorrow till Sunday!

Lazy Sundays

I had a Rudi’s Organic English Muffin – these are so good! One half with cashew butter and the other half with Creme of Almonds and Dates spread. I also had vanilla Greek yogurt with marmalade and some slices of bananas. I also saved some banana slices for my English Muffin. My sweet tooth was calling my name that morning and I had a Marzipan candy and I tried a Newman’s Own Organic dark chocolate peppermint cup. This one was so good! I did some things around the apartment and spent most of my day painting.

I had some of the baguette from the brasserie with basil pesto, and a mock tuna made with soybeans. I also had a sliced up a carrot and look at that beautiful persimmon! I’m glad I decided to cut it that way.

I tried someone's favorite nighttime snack.

Well not just someone, but I tried Jessica’s favorite! Warmed up applesauce with cinnamon, melted chocolate chips, a crumbled graham cracker, and since I didn’t have almond butter I just used cashew. Girl, now I know why this snack is at the top of your list.

Spreading the love on Monday.

What a great way to start a Monday – with heart-shaped goodies! I tried the date Heart Thrive that morning. The date flavor wasn’t as intense as some of the other flavors I’ve tried. Maybe it was just me, but it seemed off. I had it over vanilla Greek yogurt, a sliced banana, and cashew butter. Mixed in with everything else it was good, but alone I didn’t really like it.

This sandwich was composed of: a beer-brat Tofurky sausage, homemade tomato sauce, red onions, and relish. Yum! I love using a baguette as the bread for a sandwich.

I obviously couldn't get enough!

So later on I snacked on some more with a baked apple + cinnamon, goat cheese, and honey!

I also got an incredibly sweet package in the mail!

From one of the sweetest girls around, Mitri! Her package warmed my heart and kept a smile on my face for the rest of the day.

Thank you so much! Don’t you love acts of kindness? Especially through snailmail! Since Tuesday was around the corner, I spent most of my day kicking major booty in the studio. Tuesday = my final critique of the semester!

Breakfast on-the-go

This is why bars are perfect sometimes! I tried the last 18 rabbits granola bar – Haute Diggity Date. This was incredibly delicious and is right up there with the first one I tried. The one that made me think, “this is what a granola bar is suppose to taste like.” Thank you for sending me these bars to review! I am so glad that I did because I will definitely find myself getting these in the future.

So now I will share with you what my piece for this semester’s final critique looked like. Now keep in mind that being there in person is an entirely different experience – as is with most art. I also had a Nag Champa incense burning which definitely added to the piece itself. I had originally wanted to set it up in various open fields and document my interaction in the space. Then I realized how little time I had, and I was debating doing a performance piece with it instead. However, nothing specific came to mind and I never force myself into anything when it comes to my art. So I just let it be, but I will set it up outside and film that in my leisure time.

It’s a State of Mind

It’s been far too long since my vivacious mother has graced the pages of my blog! When I think of my mom I think of what someone who has a passion for life. She has this youthfulness about her and I believe it can be a state of mind. How you carry and perceive yourself really reflects a lot on how people see you. This brings me to my number one fashion tip: wear it with confidence! When you’ve finally decided what outfit you want to wear, or if you just threw something on, don’t forget to walk out your door with a good amount of self-esteem and work it!

First off I started my Thanksgiving day with some homemade granola!

After straightening the apartment up and running some errands, I picked up my mother at the airport and gave her a tour of the place. It didn’t take too long though since it’s quite small. She came bearing gifts from her recent trip to Germany!

I used Gardein scallopinis for the “chick’n”. I also baked some maple cornbread and mushroom gravy.

Afterwards we went on a walk with Matilda.

Then we watched Breakfast at Tiffany’s. I had never seen that movie, and now I see why so many people love it!

My mom had some of the gourmet cashew toffee Holly sent me, a Fig Newman, banana, toast with sunflower seed butter (her first time trying it), and an arepa con choclo. Her and I actually split the delicious arepa. For myself I tried the chocolate Heart Thrive over some vanilla Greek yogurt, cashew butter, some Newman’s Own Organic dark chocolate, and a sliced banana. I think the Heart Thrives are getting better and better with each new flavor I try. I heated this one up and I loved the melted chocolate. This one in particular tastes like a cookie. Can you guess which kind? Then we got ready for some shopping!

The cooking class that day was entirely based around chocolate. Katie, I thought of you!

We were done shopping and decided to head home for some lunch. Well the day before my mom flew in I had decided to bake something for us.

The ingredients!

I used French Meadow Bakery’s gluten-free pizza crust! Pizza 1: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted eggplant. Pizza 2: basil pesto pizza sauce, goat cheese, caramelized onions (in brown sugar), portobello, roasted red pepper and artichokes.

I must say that I was surprised at how normal the crust tasted. In fact, it didn’t occur to me till later that, “Oh yeah! This is gluten-free crust. Wow!” After lunch we were headed out again and I had forgotten something so I went back. Then I realized I had locked us out of the apartment and my roommate was out of town. Oops! Thank goodness through some guardian angels were watching out for me and my neighbors walked into the building at the right moment. They had a way of getting me into my apartment. Imagine poor Matilda waiting for us!

Dinnertime!

We each had Sunshine Burgers topped with diced tomato, seasoned avocado, and ketchup. I also sauteed some kale in balsamic vinegar and honey + grated parmesan. Lastly, we split a beautiful persimmon! I asked my mom what she thought of the Sunshine Burger. Her response: “DELICIOUS!” After dinner we got ready to go to the movies.

And I packed some movie snacks for us.

We went to go see Julie & Julia.

The movie made me smile so much because I totally feel the same way!

We went to this French brasserie called Can Can

My friend was working so she took some pictures of me and my mom.

They brought out the bread - They ended up giving us a free baguette and another loaf!

After a couple of hours of talking we headed home and laid our little heads to rest.

You are all so sweet and I’m incredibly thankful for each and every single one of you. I can’t remember exactly what sparked me to start a blog, but whatever that reason is – it doesn’t really matter. What matters is that it brought me here, with a bunch of wonderful friends. I hope you all had a wonderful Thanksgiving and are enjoying all the delicious leftovers. Cooking shouldn’t be a problem for the next few days!

Inspired Eats

Hello hello there! I am so happy to say that these past few days have been awesome. I think it’s the whole mentality I’m trying to maintain to get me through the winter.  It was actually the title for a recent post of mine, “life is what you make of it.” The winter doesn’t have to suck the life out of me (okay I’m being dramatic here), but instead I focus on what I’m doing now and all the positives of this holiday season. And all your answers really stuck with me and reminded me of so many things I have to smile about. Don’t we all?

Here are few of my reasons, inspired by some of you, in the past couple of days.

A different version of frozen yogurt

I took a container of So Delicious coconut milk yogurt and stuck it in the freezer.

Two cookies for good measure!

The night I received the package I had a couple of Holly’s homemade vegan pumpkin molasses cookies. Wow! These were so good, I’m glad she shared her recipe.

Inspired by two very special ladies.

The other day I saw that Maya and Eliza had each made a bowl of gingerbread-inspired oats. Do I need to explain? This is why I love breakfast. When I’ve had a delicious breakfast then I know it’s going to be a good day.

On my day off from classes I felt like dressing-up.

And a skirt I should wear more often.

Along with some dark grey tights and red Mary Janes flats.

I had recently gotten a ton of basil.

So I decided to make a pesto. Rather than using raw pine nuts I toasted them first and it really made a difference in the flavor.

Afternoon snack

These are the Apple Grahams that came in the package Holly sent me. I’ve tried them plain, with the medley jam she also sent me, pumpkin butter, dipped in Sugar Cookie tea, and pumpkin spice soymilk. I have yet to crumble them on a nice warm bowl of oatmeal.

Almost forgot about lunch!

For lunch I tried another Gardein product. This time it was the chick’n scallopini. I really liked how they lightly-seasoned these, and they were also a really nice size. There are some vegetarian products out there that give such small portions and that can be frustrating. I decided to cook up the rest of cauliflower and chick’n scallopini in a Sweet Pepper and Coconut cooking sauce. Served with Nishiki rice. So good that even my little Moofia toy wanted some.

I recently picked up a new item at the grocery store.

What could it be? A rutabaga! I’m pretty sure I’ve never tried one before. My darling darling, Brooke, said this was one veggie I needed to try. She recommended to try them with cranberries, so of course I listened! I roasted the rutabaga and an apple with sugar, salt, and pumpkin pie spice. I also had a Tofurky Kielbasa decorated with ketchup, beer-brewed mustard, and a bit of sweet relish. Yum! I definitely was looking up more rutabaga recipes after this.

This was a special bowl of oatmeal...

In Brooke’s survey one of the questions was, “bowl of hot cereal you have been wanting to try.” And I answered a banana rum cake-inspired oatmeal. Lynn thought it sounded good too, so I decided to make it! I made my way to the liquor store and got a miniature bottle of Captain Morgan’s spiced rum. I did not prepare my oatmeal as I usually do because I additionally cooked it with a couple spoonfuls of spiced rum and a bruleed banana. I topped it with a sliced banana, some pecans, New Morning Honey Grahams, and a ZenSoy banana pudding cup.

I even mixed spiced rum in the banana pudding!

I wanted to be drunk for my Taoism class! Kidding of course!

I hadn't worn this blazer in ages!

Lunch was surprisingly yummy.

I wanted to try out something different for the wee bit of kale I had left. It was just enough to help make this sandwich (I just boiled it). I assembled the sandwich with French Meadow Bakery’s gluten-free sandwich bread, cashew butter, kale, and pumpkin butter. This was a new combination I thought of and wanted to try out; I think some onion jam would’ve definitely sealed the deal, but this was delicious as well. I had some of the leftover hummus from Brittany’s sandwich recipe – perfect for the broccoli!

Bright and early on a Saturday!

Since I have to wake up really early on a Saturday morning (and I hadn’t gotten home on Friday till 4:30 am), I just want as much sleep as I can get. So when I woke up I quickly put my breakfast together. I tried another 18 Rabbits flavor that was sent to me; that morning I decided to try the “Nibble a Sultana” bar. I had it with a container of vanilla Greek yogurt, a diced apple, and cinnamon. I’ve seen sultanas baked with apples in little tarts. This bar didn’t have that same perfect granola-y flavor the other one had. It was okay, but I probably wouldn’t buy it for myself.

Carrots and rutabaga mash + sandwich

With the rest of my rutabaga I followed Brooke’s advice again and made a mash out of it! I stumbled upon this recipe and I knew it would be nothing short of delicious. However, I ended up sprinkling on some pumpkin pie spice and mixed some coconut oil in as well. This had me licking my bowl clean. The sandwich was inspired by a local coffee-shop item on their menu. It had my homemade basil pesto, Gardein chick’n scallopini, roasted red peppers, and goat cheese. Wow! Do any of you ever recreate restaurant recipes?

I just had to!

After going on a long walk excursion with a friend I came home to work on my project.

And I got kind of side-tracked...

Okay, really side-tracked!

Then I finally got back to work.

Then, next thing you know dinnertime rolled around! I had become so focused that I had totally lost track of time.

I made sweet and sour lentils and had it with leftover Nishiki rice and coconut oil.

Korean-Russian Carrot Salad

I’ve had this recipe saved for a really long time and totally forgot about it! This tasted very different from what I usually eat, sweet and spicy, but it was a very pleasant change.

Later that night I ended up going to some of my friends’ art exhibit and met up with another friend. Afterwards we went to a birthday celebration and eventually I came back home and I woke up with two thoughts on my mind. “I have on last night’s makeup” and “April’s pumpkin French toast sticks.”

April’s recipe also calls for a peanut butter frosting. I changed it around a bit and made it vegan by omitting the eggs, and used Pumpkin Spice soymilk (highly recommended!!!) and a thickening agent. I used two thick slices of Rudi’s 100% Whole Wheat bread. The toppings include: diced apple, more pumpkin pie spice, and some Apple & Maple syrup. This breakfast was such a great way to start a beautiful day.

Life is What You Make of It

Hi everyone! I hope your week has started off on a good note. I know mine has. Aside from my computer crashing, things have been looking up. After a week of no sun and dreary weather, the weather gods decided to give us the gift of sunshine and warmth. Thank goodness! I think this is just what I needed to reenergize myself for this busy week. Without my computer I will find myself with less distractions. But I’ll do my best to keep you all updated – hence I am sitting in the toasty Fine Arts building’s computer lab. So many computers buzzing!

I’ll start off with my Saturday night. I was going to go to some experimental sound art show, but I wasn’t really in the mood for that. Instead I called up one of my best friends to see what she was up to.

We ended up going to our friend's house for a house show.

The band seemed to be cooped up in this one room – I think they should’ve played in the middle. But a friend of mine came out of that room with a bloody nose but the biggest smile on her face!

I didn’t want to get back too late because I was planning on going hiking the next day.

So I ended up heading back around 3 in the morning.

Not a bowl of oats!

My tummy wasn’t feeling too well the next day so I wanted to take it easy. I had some leftover okara from when I made soymilk when I got home super late. Yeah, I made soymilk around 3 am… Anyway, I mixed it with pumpkin butter, stevia, and cinnamon. I topped it with a sliced apple, dates, some more pumpkin butter, and the last of the Artisana almond butter.

Some things I packed for my hiking trip!

I made myself a PB&J sandwich using Rudi’s Wheat & Oat bread. Oh my gosh this bread is so good by the way. It’s perfect for sandwiches – especially a classic PB&J. I love how thick the slices make it so much more satisfying to bite into. When I was making my sandwich I had trouble deciding which jam to use. I remembered that Boysenberry jam is one of my favorites, but I currently do not have it in stock.

Well guess what? My computer crashed  and I knew that I would have to take care of that before I went on any hiking trip. And the sun was shining so brightly on Sunday I knew I didn’t want to be indoors.

I headed over to my nearest Apple store and I ended up making an appointment for today (Monday). By the time I was done with that, my friends that were going to go with me either a) didn’t want to anymore or b) didn’t answer. But you know what? I still wanted to go hiking so I went. I called up a good friend of mine that is usually up for doing stuff. I didn’t get to go to the Shenandoah Valley like I had planned, but atleast I got to go exploring and get some easy hiking in.

I love letting Matilda off the leash so she can sniff around as she pleases. She’s so cute because she never strays too far. When she was walking ahead of us she kept stopping and looking back to make sure we were still there. What would she do if we decided to play hide-n-seek with her?

Dinner

This time I just sautéed the kale with white cooking wine and seasonings. I also had some of my leftover “meatloaf” I made with the okara. Last but not least I made a recipe inspired by Katie’s mashed cauliflower. I pureed mine with salt & pepper, nutritional yeast, and soymilk. Then I served it with some all-natural butter. Yum!

Then it was time for some homework!

Monday mornings

This breakfast was interesting. I wanted to use up the rest of my okara, so I mixed it with a ZenSoy banana pudding cup. By the way, I think the banana pudding flavor is my favorite. I heated that up till it liquified and then dumped on some Aztec Crunch Corn & Amaranth cereal. Excuse my half-eaten apple that I enjoyed with my favorite crunchy peanut butter.

I assembled my sandwich the night before because I knew I would be pressed for time today.

I also sautéed some kale with raisins and toasted pine nuts. I love toasted pine nuts!

Le Sandwich

I used two slices of French Meadow Bakery’s Woman’s Bread. What’s so special about Woman’s Bread? According to the site, “with 14 grams of protein and 2.6 mg of soy isoflavones per serving, Women’s Bread contains key nutrients for women’s health. Sprouted grains bursting with vital nutrients and vitamins are easy to digest. Dried cranberries provide an antioxidant boost.” I enjoyed the dried cranberries very much! Okay so what’s in between the bread? Portobello mushrooms, basil, red onion, cream cheese, fakin’ bacon bits, and tomato paste + honey.

After my readings in apocalyptic Literature class I wanted to go exploring around Belle Isle some more. Apparently I just couldn’t get enough and the weather was gorgeous! It was so much fun not knowing where I was going but taking random trails that would lead me to who knows where! Afterwards I came home and showered and did some pampering.

And dinner time rolled around.

I didn’t really feel like cooking tonight. Well, I guess I did cook the cauliflower mash with garlic and herb, but that barely counts! So I just baked some Gardein “chicken” tenders in the oven and seasoned with Old Bay blackened seasoning, and ketchup + curry. Curry ketchup is delicious. All you have to do is mix in some curry powder with ketchup – simple! It reminds me of buying pomme frites on the streets in Germany served with with curry ketchup. Please excuse me toasts for being shy. I promise they are delicious once you meet them. Tonight I wanted to try French Meadow Bakery’s Gluten-Free Multigrain bread. That’s a mouthful! Anyway, the bread was seriously delicious! I just spread on some butter on one slice, and butter and fruit spread on the other. I can’t explain really how tasty this bread was. Just biting into it was awesome and I can’t believe it has no wheat. Can you see the all the little flaxseeds? So good! I highly recommend this bread, even if you don’t have a gluten intolerance.

7. you are baking some homemade bread, what flavor combination of bread would you like to make? Oh my gosh! Some sort of spiced bread. How about a spiced bread with almonds and cranberries. However, I recently stumbled upon a garlic pull-apart bread recipe.

8. favorite autumn vegetables and ways to eat it? Winter squashes out the wazoo! Recently, I’ve been digging cauliflower and kale

9. hot chocolate, hot cider, coffee or tea? Hot chocolate made with coconut milk. And I love this one tea called Richmond Blend. It’s a black tea with cinnamon, orange peel, and cloves. It’s out of this world and actually has an intense flavor on it’s own. Not to mention the cinnamon helps keep me warm during the cold months.

10. favorite seasonal dessert? I think it’s a tie between double-layer pumpkin cheesecake and sweet potato pie.

Food, not the bad four letter F-word

Thank you all for your kind and honest words! It seems I’m not alone, but I didn’t think I was really. There’s a condition called “seasonal depression” – I think this feeling, however, is totally natural. All seasons have a purpose and I think our personalities go with the cycle. We rest, recuperate, and comfort our souls. Then when spring and summer come around we’re bursting at the seams with energy and vibrance!

Anyway, let’s eat, shall we?

Friday night dinner

I didn’t do much cooking for dinner, but it was so good nonetheless. I baked some kale chips and served them with Gardein “chicken” tenders, and Newman’s Own Organic pretzel sticks. To polish it off I had an Original Hermit topped with sunflower seed butter – yum! The Gardein “chicken” tenders were actually quite delicious and I do recommend them. They didn’t taste like those freaky mock meats that make me do a double take on the ingredient list. You can find them at Whole Foods, but I’d also check your local grocer as well just in case.

This is my sketchbook... or actually where I write down my ideas for projects.

I’m currently working on creating a peaceful environment for myself. Not necessarily something that’s sacred, but somewhere I just feel comfortable. I’ll be setting it up, documenting, and doing things with it in open fields around my area.

Crispy apples

For breakfast I prepared a bowl of Brown Rice Cream with raisins. After I was done cooking it, I topped it with a chopped apple, pumpkin pie spice, NuNaturals vanilla liquid, Artisana almond butter. It was missing something though. That’s when it hit me! Maple & Apple syrup! Personally, I wasn’t too keen on Artisana’s almond butter.

I decided to get a little fashionable for my Saturday morning class with a pair of cool tights!

My breakfasts never hold me over for the entire class which goes till 11:40. And I always forget to bring a snack! Today someone did a presentation on Japanese gore films, and I was still ravenous despite seeing all that gross stuff. Oh my gosh I can’t even explain how disgusting the clips the guy showed us were. I can usually handle things like that, but this was too much. Anyway! When I got home I knew just what I wanted to make. I put on a big band record on the turn table, and me and my roommate prepared our lunches side-by-side.

With all the bread I have now, I knew I'd be making a sandwich.

I cooked some portobello slices, red onion, garlic, and tomato in a balsamic vinegar reduction with black pepper. Then I spread on some goat cheese on one slice and toasted it all in the oven. I used two slices of French Meadow Bakery’s new Our Daily Bread – awesome sandwich bread! Once it was done toasting I snuck in some basil for the finish touch. For the kale I wanted to try something different. I sautéed it in olive oil with raisins, toasted pine nuts, sherry cooking wine, and seasoned it well. Afterwards I grated some parmesan on top. Delicious! Delicious! Yum yum yum.

I was actually browsing for awesome sandwich ideas and I stumbled upon this little gem I thought I’d share with all of you: Vegetarian Sandwiches to Take to Work .

And to finish my meal I savored a piece of chocolate.

I decided to try the Orange Dark Chocolate sample the people at Newman’s Own Organics sent me. This was delightful! I usually have a hard time letting things just melt away in my mouth – like hard candy. But chocolate has never been a problem, especially if it’s a good one!

Today I ran a lot of errands and got some things to start my latest sculpture project. Dinner time rolled around and I whipped out The Accidental Vegetarian once again.

This was, too put it lightly, absolutely delectable. I didn’t use regular red wine when making the ragu, since I only had sangria on hand. But it’s safe to say that the sangria did no harm. The hint of citrus might’ve amped the flavors a bit – but in a good way.

So this leads me to today’s truth…

Basil Green with Envy

I wrote to Maggie earlier that I took a break from looking at food blogs for a bit. It’s silly really, but it made me crave all those wonderful veggies and fruits you guys all put together… EVEN MORE! I’m not into the idea of chewing my arm off ; how would I write these posts?! Anyway, I was very interested by the feedback I got from you all in my last postEliza had made a very great point! She said, “but we all deserve to eat the way we enjoy.” This is so true. Although this past week and a half really made me realize that my situation wasn’t that bad, I know that when I can then why not? When I have money to get groceries I make a list, but if something interesting catches my eye then into the cart it goes! Thank goodness I do this because when I thought I had nothing, I had plenty! But in general, I do a really good job of saving money and not spending mindlessly.

A few nights ago, my friend invited me over to watch a crazy BBC documentary called “America’s Most Hated Family”. It was about the people of Westboro Baptist Church. They’re the ones that picket outside of soldier’s funerals with very distasteful slogans. It was mind-boggling and interesting to watch. Afterwards, we turned on Julie & Julia. We didn’t get to finish it, but I really want to!

Don’t you just love how hanging out with friends can make problems magically disappear? I never tried Sake before and I learned that heating it up is actually an insult to the artisan. Basically, heating Sake up is like adding salt to a dish that’s been served.

Breakfast!

For breakfast I had something different! I toasted a Rudi’s Organic English muffin, one of the samples sent to me by the company. My roommate’s boyfriend asked what I had made in the oven. It was just an English muffin! Well, not just an English muffin. This one happened to be incredibly yummy! Especially with cashew butter and some raspberry preserves. I also had a ZenSoy Vanilla Soy on the Go and a hemp brownie bite. A what?! Okay first let me say that these soy milk-to-go packets are genius and make me feel like a school kid again. Now back to the hemp brownie. I was sent some samples of French Meadow Bakery products and those were one of the goodies sent to me.

The hemp brownie bite was awesome! Brownies are something I’m picky about, but the texture of this one was just right. And the taste? As funky as a hemp brownie sounds, there was nothing off-putting about it!

I tried another slice of Rudi’s bread, but this time I chose the Cinnamon Raisin bread. I spread on some coconut oil. Well I do love the thick slices each load seems to have, but I think the cinnamon flavor could’ve been stronger.

I’ve also been sampling some sweets.

Since the incredible package of Newman’s Own Organics came in at the right time, I thought what better way to munch my way through the days with some cookies!

First up are the Champion Chip Cookies! The flavors I got were Double Chocolate Mint Chip, Chocolate Chocolate Chip, and Espresso Chocolate Chip. I’m not a big fan of the Chocolate Chocolate variation, but the rest are right up my alley! I was surprised at how much I enjoyed the Double Chocolate Mint Chip cookies!

Second batch? Hmm… let’s go with the Hermits. I tried the Original and Cinnamon flavor. Both are good, but I personally preferred the Original ones. Not sure why though. I bet the Ginger Hermits are delicious – I love ginger!

Now on to the Fig Newmans! The only difference between the two I got is that one is fat-free and the other is low-fat. There’s was no apparent difference to me as far as taste goes. So I guess it’s just what you prefer as far as fat-content goes.

Last but certainly not least are the Alphabet Cookies. Maybe I’m boring when it comes to cookies, but these were my favorite! They’re so simple but so good. I want to spell my full name out, including my middle name, and then eat it. Thank goodness I’ve got a really long name.

Breakfast this morning…

This time I tried a slice of Rudi’s 100% Whole Wheat bread. I love love love the thick slices. I usually buy artisan bread, but I really think Rudi’s makes great bread for morning toast. And we can’t ignore that indulgent looking cup in the back! That, my dears, is a ZenSoy Chocolate/Vanilla Swirl pudding cup. I’m turning into a kid again and if eating these pudding cups are a sign, then I don’t mind one bit. More please!

Aside from it being a glorious day because it’s Friday, I was able to get groceries today!

I chose the crunchiest and crispiest things to munch on as far as fresh foods go. I love carrots and apples with peanut butter. I also had a delicious Southwestern Sunshine Burger and munched on some Newman’s Own Organics pretzel sticks. Nom nom nom!

I sliced up 2 apples and crumbled on a Cinnamon Hermit, and into the microwave it went.

I try not to dwell on things, so I just went about my rainy days looking at fashion magazines and going to my classes (of course). Aside from the dreadful weather the tropical storm has caused over here, I’ve been trying to remain positive. This brings me to my truth of this post.

The weather deeply affects my mood. During the winter I embellish the idea of this season by reminding myself of all the cute clothes I get to wear and this is season of giving. I’ll snuggle with Matilda even more, but the truth is that deep down inside I just don’t feel the same. It’s like I allow some part of my spirit to escape me. I just can’t help but feel like it’s me against nature when I walk out the door – not a good feeling. What do you all do to keep a positive outlook during the bittercold months? Or does it even bother you at all?
