Good morning everyone! I wanted to give you all a heads up that from now on I will be answering your questions in the comments section, so don’t forget to check back if you asked one! I use to do that, but somewhere along the line I stopped. It’s a lot easier to reply right on the post rather then sending out e-mail, especially because I want to get back to you guys. But if they are in-depth or personal questions, then of course an e-mail would be sent.

Sherried Winter Squash Bisque

As some of you may know, thick soups are my favorite! Especially ones involving butternut squash. This recipe caught my eye awhile ago and me oh my, my taste buds saw fireworks! Imagine your grandma’s most comforting specialty soup… times ten!

Serve with a dollop of Greek yogurt and some thyme (and coconut oil if you’re so inclined).

As part of Foodbuzz’s Tastemakers program I was generously sent a loaf of Nature’s Pride Hearty Wheat with Flax to try out.

The bread was great for sandwiches!
Especially ones filled with homemade hummus, Vegenaise, and veggies.
It can also be enjoyed with banana slices and chocolate hazelnut butter.

You can go sweet, savoury, or simple with this bread–say if you’re just in a toast and butter mood. I also think it’s neat that they thought of incorporating flax into the bread, a good way to get in some Omega-3′s!

In other news, I went to the Hispanic Gala that my friend helped organize.

I glamorously biked to the event in this gown… just this gown. It was quite a liberating and exhilarating experience, and that’s not counting actually being at the gala! I met a lot of wonderful people from all over the world, and I was so proud of my friend for playing such a vital role in making it all happen.

Another blue moon came around and I went to the hot bar at Whole Foods.

I love that hot bars let you get a little bit of this and a little bit of that. Now if only everything were as light as lettuce then I think blue moons would come around more often.

I finally got my hands on purples potatoes!

I’ve had a very peculiar ingredient sitting in my kitchen forever, but I hadn’t used it until recently. One day I decided to look up recipes that called for pomegranate molasses. That’s when I came across this recipe on one of my favorite sites for cooking: lentil hummus wrap with pomegranate molasses. I also made the red lentil hummus that went along with the recipe, and loved the idea! I have been cooking a lot with red lentils lately, but it was a nice change to what I usually make out of them.

This was a vegan version of one of my step-dad’s all time favorite candy bars: Almond Joy.

I don’t think he’s had one in awhile, so I thought it’d be interesting for him to try a vegan version. We both thought these were delicious, and had just the right amount of coconut with a bite int0 a crunchy almond to top it all off.

Speaking of coconut…

Remember I mentioned the new Super skincare line in my last post? Well, I’ve been trying out their products and seeing how they make me and my skin feel. First up. Lush Lips. Can you believe they got their inspiration for soft skin from coconut oil? Finally, a skincare line that catches on to that! This lip moisturizer has a subtle coconut smell, and doesn’t leave your lips feeling sticky. Last thing I want is to be eating my own hair because it gets stuck on my lips.

The Face + Eye Cleanser

In my last post Allison asked me what I thought about the cleanser, so I thought I’d share my thoughts. Since the product uses the famous superfood, açaí, it has a bit of a sweet smell, and it feels soft and milky on your skin as your washing it. The cleanser was gentle enough to use on the eyes to remove any makeup. Actually, the smell and texture made me want to indulge in the whole experience of washing my face. Yes, it actually felt like an experience! So how did my skin feel afterwards? It felt hydrated, fresh, and soft. A wonderful feeling to have at the beginning of the day and at the end don’t you think?

And the weekend will be spent celebrating this little lady’s birthday!

She’s been one of my best friends since the days of… peculiar fashion whims. Who am I kidding? We still have those! The point is that she’s a true blue friend, and I’m so happy to be able to be right there with as she adds one more year to her repertoire as Soul Sista!

Pass It On

Thank you for all the well wishes everyone! Taking it easy this weekend was a good idea, so I can feel and look well-rested for RVA Fashion Week’s casting today. They’ll be figuring out which models will work for each show. I’ve also got a photo shoot to go to later this day for my fashion photography class. Anyway, the other day I noticed that I haven’t posted any breakfasts lately, but that’s not to say that I haven’t been eating it. Afterall, it is my favorite meal of the day! Since I have class in the mornings Monday through Thursday, I usually just make OIAJ or something else convenient (i.e. bagels!) the night before and bring that to class with me.

However, it is nice that I get a few days in the week where I don’t have to have breakfast on the go.

Oatmeal topped with banana slices, my favorite pumpkin butter, and toasted & salted hemp seeds. Toasted hemp seeds can go with anything! I’ve been trying to use up my jars of fruit butters and jams by using them as a sweetener for my oatmeal.

Caramelized anything is fine by me!

I thought of Erica this particular morning, and was inspired to top my usual bowl of oatmeal with something special. Rather than simply slicing some apples and leaving it at that, I caramelized them. First I heated some coconut oil on a pan and then sautéed the apple slices, dates, and cinnamon sticks. After cooking them for a bit I added a splash of apple juice.

This bit of deliciousness was topped with pistachios and honey to boot!

Now on to lunch, dinner, and some lovely side dishes.

Honey Glazed Carrots

This was a recipe from “The Flexitarian Cookbook” that I finally got around to making. Rather than cooking them in regular butter though, I used ghee. This changed the flavor a bit, and in combination with the honey… I just wanted more.

Parmesan-roasted Parsnips

I haven’t made a recipe from one of my favorite cookbooks in awhile! Maybe some of you can guess which book it is, but for those of you who can’t it’s Simon Rimmer’s “The Accidental Vegetarian“. I wanted to marry him because the recipes in this book are so good. He still hasn’t proposed to me, and I’m not the kind of girl who sits around waiting. But that won’t stop me from cooking up his incredible recipes!

Almost a mish-mosh, but not quite.

I had lots of scallions leftover and the first thing that came to mind was Thai food. Then I started thinking of recipes involving noodles since I have a lot to use up. I ended up making a spicy Thai peanut sauce to go with some random veggies I had on hand, fried tofu, and a combination of rice and soba noodles. I’d bring this with me to class, and by now whenever I pull out my meals my mates ask me what I brought this time. They also remark on how everything I bring smells so good. Well, I can assure you that not only do my meals smell good, but they taste good too.

Soup for the season

This past week I made a batch of Angharad’s curried squash and carrot soup. This sounded like one of those soups I see in stores that I don’t buy because I’d rather make them on my own. I usually don’t end up making them, and I’m just left with a reminder whenever I stumble upon one of those convenient soups. This kind of soup was new to me though. I had never made a soup with summer squash, and I was wondering how well the flavors would hold up. The curry added just enough spice, but didn’t stand alone. I find that curry picks up other flavors, and goes well with so many things. Take tabasco sauce (not a big fan), for instance, it just cuts right through everything–so acidic!

Why is this the best? Well, first off it’s made using a chocolate tablet vs. cocoa powder. That automatically makes it tastier. I’m going to tell you how my grandma makes it. First she pours milk (almond for me, please) into a chocolatera (and aluminum pitcher), and brings it to a boil on the stove. She’ll let me skim off the yummy layer that forms on top, which is called nata in Spanish. There is a cake that is tediously made entirely of those delicious layers called postre de natas. After the milk is boiling she puts in the tablet of Colombian chocolate and takes a molinillo (a wooden whisker) to froth the melted chocolate. Then it’s lovingly poured into a cup for whomever is dear to you, that includes yourself! In Colombia it’s typical to let a chunk of queso blanco melt in the cup of rich, frothy hot chocolate.

The other day I brought in a non-conventional battery to my class.

This was a for a mini-project for my time-based sculpture class to help us think outside of the box. Food can be fuel, and I remembered reading a recipe in Brendan Brazier’s “Thrive:…” that offered fast energy. I didn’t bother explaining the science behind the dates and coconut oil to my class. Instead I just let them enjoy, which they did! Speaking of energy I have a little challenge for you…

 

Eating Under the Sun

Many of you asked about my opinion on the chia seeds. I have no idea how much they normally cost, but my parents are fortunate to live close to a discount healthfood store. Actually, I just checked and you can order things online, check it out here: Tunie’s. As for taste? I’m not sure if they have a distinct flavor or not, but I do like the bit of crunch they offer. I like having different textures in my meals though. As for what their benefits are, I honestly didn’t know until I saw the package. Did you know that the Aztecs ate them for strength? They’re also an excellent source of omega fatty acids and dietary fiber.

Lots of hummus has been consumed--my parents had a couple tubs of Sabra in the fridge!

Hummus in sandwiches, hummus as a dip, hummus straight up! I love using sautéed veggies in sandwiches, but cool cucumbers and tomatoes are wonderfully refreshing as well. With a bit of freshly ground black peppercorns and I’m a happy camper.

I had bookmarked this Tropical Applesauce Muffin ages ago and I stumbled upon it again. However, I forgot that I left my muffin pan at my friend’s house so I just made them into squares. They sure don’t look like muffins but they definitely tasted great! I also recommend using brown sugar instead of regular–that’s just my personal taste.

Drinking out of silly straws is also my taste.

I’ve been having delicious smoothies practically everyday. What goes into the blender?

-3/4 cup almond milk (whatever milk you desire)

-1/2 frozen banana

-1/2 cup frozen blueberries (or frozen fruit of choice)

-2 spoonfuls of coconut milk (I suggest using the regular kind)

-protein powder or Greek yogurt

-lots of ice!

1. Mix it together and voila! I’m addicted! I’ve also tried it with just a 1/2 a cup of almond milk and it comes out more like a soft-serve. No complaints here!

What do these treasures from my parents' garden behold?

Vibrantly colored heirloom tomatoes!

Try these with fried capers, chopped basil, and toss it all in olive oil. Then season with sea salt and black pepper. So simple, refreshing, and delicious. I’m telling you that fried capers are delicious and have this wonderful saltiness.

I saw a helpless yucca root sitting on my parents counter.

I took matters into my own hands and made yucca fries! A warning though: boil these first because they can be poisonous if you don’t cook them properly beforehand. I tossed them in coconut oil, a citrus marinade, some sea salt, and the yucca fries were served!

Sorry if you don't like feet (I don't) and you just lost your appetite, but I got my first pedicure ever!

The nail salon had my favorite kind of crackers on hand so I took some extra home with me!

More tropical inspired food--plantains!

I’ve been sprinkling them with cinnamon and sea salt, frying them, and then tossing them in coconut oil.

I also took a trip down memory lane because I haven't had French lentils in ages.

Ever since my family has gotten into Indian food we’d been giving red lentils a lot of attention. So it’s been years and I think it was nice to have some other lentils for a change.

My mom suggested we cook butter beans.

So I caramelized some onions and cooked them with dried thyme, shredded mango chutney, butter beans, and sweet potato. I added coconut oil afterwards and let’s just say that ever since my mom fried tofu with shredded mango chutney and thyme, she’s had me hooked! I asked her how she came up with the combination and she simply said, “I don’t know.” That’s good enough for me because sometimes the best things don’t have a reason. They just sort of… happen!

Still amazing! And you know what else are amazing? Baked sweet potatoes! Especially with coconut oil, cinnamon, and maple syrup. Even better? Add some goat cheese and you’re in for a treat.

I just realized that I didn’t get a birthday cake for my past birthday. Maybe I should get on that. Better late than never, right?

Look what this vampire found!

The other day I went to the local Italian market and you know I checked the chocolate aisle! I spotted this incredible bar and you know what’s funny? I actually stumbled upon a review of this bar earlier that day! I think everyone around me could tell how excited I was about this because everyone was smiling along with me. Dark chocolate with banana? Yes, please.

Consensus? Excuse me while I break off another piece to refresh my memory… okay back! Ah yes, I’m actually going to write a live review! Well the taste is fabulous no doubt about that. The level is sweetness is right on point and the banana is not overwhelming. My only wish is that it would melt a little more smoothly in my mouth, but I can deal!

Speaking of faces, my mom and I did some at-home spa treatment complete with monster masks and gooey hair!

Kind of resembles the cilantro dressing I made the other day, don't you think?

This dressing is deliciously refreshing, tangy, and goes well with goat cheese! I vaguely followed a recipe in my tapas cookbook, so I’ll share with you what I remember since I basically just eyeballed everything.

Cilantro Dressing

-2 garlic cloves

-ground cumin, not too much!

-a lot of chopped cilantro leaves

-a bit less than 1/4 cup extra virgin olive oil

-2 tbl apple cider vinegar

-salt and pepper

1. Put the garlic, cumin, and cilantro in a food processor, and pulse until well mixed.

2. Add 1 tbl at a time of the extra virgin olive oil. Throughout this process, using a spatula, scrape down the side of the bowl. Keep adding the oil until it has all been incorporated and the dressing has slightly thickened.

3. Add the vinegar to the dressing and process for a minute, or until blended. Season to taste with salt and pepper.

I asked my friend, Kelley, if she wanted me to make her oats in the morning.

I cooked her oats in almond milk and cinnamon. Then I swirled in some coconut oil and topped it off with banana slices and mango. I also spooned on a bit of Naturally More peanut butter. I’ve never tried this kind and it was very yummy! It wasn’t completely creamy and not super crunchy either.

I opted for something more refreshing.

I opted for granola, Greek yogurt, and Ezekiel toast. My parents didn’t have butter in the house (what?!) except for ghee aka clarified butter. It has a different taste than butter, but I liked it!

Mom made lunch again!

She wanted to try a new grain she bought at the store–amaranth. She made curry chicken for everyone and a tofu version for me. The amaranth itself was plain, but mixed with the tofu curry was much better and gave an interesting texture.

In Florida, avocado is a must with every meal.

Then we got ready to go out!

I think Matilda felt left out.
We went out to go dancing.

There was an artist painting a large mural that night in one of the dance rooms. They also had dancers that were painted from head-to-toe, a drag queen performance, people dressed up as squires, and many more theatrics. It was so much fun. We ended up meeting the artist’s agent and the club owner, then danced around in VIP till we decided to head home–daylight savings time hit us!

Lunch was a team effort.

I stir-fried some kale, mushrooms, and zucchini in a garlic & ginger paste + Soyvay sauce. My mom made her specialty curried fava beans in coconut milk. I also had some toast with peanut butter and a slice of Cabot’s cheddar.

Then we headed to Calle Ocho

Calle Ocho is basically a huge annual block party in the middle of Little Havana down in Miami. There’s lots of music, dancing, food, and people!

Living In a Daze, Part I

Hi everyone! As the title suggests, I’m going to break up the recent days in to more than one post. I still feel like my two feet have yet to hit the ground. Yes, I am feeling overwhelmed, but that isn’t always necessarily a bad thing. Why am I overwhelmed is the question. Over these past couple of days I’ve had many triumphs, adjustments, and realizations. I just feel like I’m about to start walking on new territory, but at the same time branching my roots out into familiar ones as well. It might sound confusing, and I admit it feels that way for me too! But whatever may be in store, I’m ready! And on that note, let’s jump in!

This chili smelled divine while cooking it. The thing I love about ayurvedic recipes is that they include an array of spices that awaken different tastebuds. Star Anise & Cinnamon Black Bean Chili with Molasses & Chipotle, but I also added some diced sweet potato and coconut oil to my liking. Betty Lou’s Cranberry Crave Harmony Bar; Success!

I wanted to show you all what this Betty Lou’s bar looked like. Check it out! Every time I open the wrapper I can’t help but think that it smells homemade. You know when you’re baking muffins and the sweet smell just puts you at ease? M’mm good.

Anyone ready for Florida?

That morning I had the juiciest, sweetest mango ever! Oh my gosh, just thinking about it is making me want go back to this. I had it with Greek yogurt, Udi’s Hawaiian granola (ginger-toasted macadamias, dried pineapple, and coconut flakes), and drizzled with coconut butter. Okay, so the mango alone was delicious, but all of this together… where do I begin? Ah yes, sitting on a hammock basking in the sun. But before we continue, let me put my ice cold pina colada down.

Alas, I’m just stylin’ the pajamas my grandma gave me, and about to enjoy OIAJ!!! Now that doesn’t sound like prison to me. Sunland’s banana peanut butter… you were so good to me!

However, OIAJ wasn’t the only exciting thing happening that morning. No, I had to get ready to pick up my mom!

We came home and I quickly put together our lunches

For myself I had a Garden Herb Sunshine Burger on a bun + ketchup + pepper jelly + onion + tomato, with butternut squash and sliced pear with cinnamon and coconut butter as well.

And for my mom...

This almost looks like a face! She had Ezekiel toast with fried egg whites and green “stuff” on top. The green “stuff” is a quick thing I whipped up: 1 avocado + nutritional yeast + soy sauce + turmeric + a bit of water for consistency. She also had some butternut squash on the side.

My dad picked up some goodies from a nearby local Jordanian restaurant.

Everything is made fresh, and they even grind their own spices and herbs weekly. In fact, they also make a Lebanese pita bread which involves garbanzo, barley, and other flours. My dad got a vegetarian sampler for all of us, and a spiced chicken gyro for them. The sampler included hummus, baba ganoush, tabbouleh, and dolmades.

I also got to take my mom to her first First Friday Artwalk!

It was very cold for her, but she loved all the life going on. She also got to meet some friends I’ve made in college, which is really nice! Now she has a better idea of who I’m talking about when I tell her things that are going on in my life. Anyway, this is it for Part I! Stay tuned for Part II (THE FASHION SHOW!!!) Rise Above the Stress

Let’s go back to Sunday morning. Easy like Sunday morning…

The goodness of coconut milk...

I made a bowl of oats with a diced pear, dates, cashews, cinnamon and coconut milk.

I love how much creamier the oatmeal gets.

I gave frozen pizza another chance.

Frozen pizza is one of those things I’m weary about. Usually I’ll end up trying one that tastes like crap. However, I’ve heard lots of great things about Amy’s pizzas. It almost seems like anything that comes out of Amy’s kitchen is a winner. Anyway, I tried the cheese & pesto on whole wheat crust, but what’d I think? I actually really liked it! I baked it so the crust was soft but not too chewy. When there’s pesto on pizza I don’t like to have a crunchy crust because I don’t think it lets the pesto shine and melt with everything.

It was actually warm and sunny on Sunday, so I was in the mood for something fruity.

Into the smoothie went: ice cubes, chocolate protein powder, and a medley of berries.

Then I got back to working on my sculpture.

I tediously made my own wire out of mesh-form, then made little sculptures out of that.

Funky dinner

I used the romaine as wraps for my lentils and rice. The lentils and rice may look bland, however, they are anything but! I cooked some sweet and sour lentils and amped up the ingredients to make it super flavorful. The thing that I love about cooking things like lentils is that I taste as I go. For the rice I threw in some green cardamom pods, cinnamon, coconut milk, and let it all cook together. With the addition of coconut oil when I served it, this dinner really hit the spot! I was very glad I made enough for the next day.

Then my room turned into the Blair Witch Project.

Critique days leave me no time to make breakfast--thank goodness for cereal!

I warmed up some almond milk with berries and coconut oil, polished off my box of Kashi GoLean Crunch, and threw in some almonds. Quick, easy, and yummy!

I was having trouble thinking of a way to hold the wire sculptures I made. I couldn’t figure out a solution to carry out my first idea so I came up with this. Personally, I am now thinking that the birdcage is too literal for my taste. I’d say I’m more of an abstract and conceptual artist. But I am particularly happy with one of the wire sculptures I made.

Well, except for the green filling–which comes from the spirulina. What was this exactly? Betty Lou’s vegan Organic North Shore Patty! This surprisingly didn’t taste “off” despite the funky color. I really enjoyed the moistness of the filling and how it was all covered in chocolate. Not really sure where the name comes from but I’m curious enough to find out!

Another fruit bar!

This was the Jumbo Cherry Fruit Bar. I really don’t think Betty Lou’s can go wrong with their fruit bars. You can smell the flavor as soon as you open the wrapper. Moreover, these are also vegan and gluten-free, but you wouldn’t even notice. They remind me of fruit pies! Yes, I couldn’t place my finger on it, but that’s it–a delicious fruit pie.

I also picked up a new cheese!

As a cheese lover I like to pick out a new one and see what delicious recipes I can make with it. Last cheese I got was manchego, and now its time for a new love affair. Meet Fontina.

On-the-go

That describes my week so far! Thank goodness for leftovers and sandwiches. This was the last of my favorite sandwich bread with Sunland’s dark chocolate peanut butter and raspberry preserves. In the actual sandwich container is some kale–still digging it! So far this week I’ve had a critique (and we’re finishing it up today), first rehearsal for the fashion show (!!!), first Video II class, taking care of delayed errands and Matilda’s medical needs, plus the usual business of the week. What do you guys do when you feel like you’re swimming in a sea of a seemingly endless to-do list?

Don’t Snow on My Parade

This post may be a bit like the weather I’ve been experiencing over here lately–a whirlwind. There has been consistent snow for the past two weeks and there is more to come! Not only has it been snowing constantly but it’s also been super windy. But I haven’t let the weather stop me from adventuring and atleast there’s been plenty of sun to help keep my mood up. Sophia recently asked what we appreciate from nature. Well, the sun is something I wholeheartedly love. It brings up my spirits and I can’t help but feel better on sunny days.

Starting off a sunny day with some chocolate!

I decided to try out another one of the chocolate bars the folks at Newman’s Own Organics sent me. I had only tried their dark chocolates and I wanted to change it up a bit with some milkiness. Deliciously creamy and made me feel like a kid again. Oftentimes milk chocolates get overwhelmed with all the other ingredients, but I like how you can still taste the chocolate in this bar. I feel like milk chocolate is often forgotten about nowadays. But I think dark, milk, and white chocolates all deserve a little love.

And this is how Matilda started out her snow day.

After some hang out time with my dad I went over to a friend’s house. I got to try a most delicious vegetable lasagna recipe she made up + garlic bread (ON HOMEMADE BREAD)! Afterwards we headed to one of the bars around here that reminds me of a tavern.

He let me try some of it with the bread they served it with (SO delicious). I also got a white chocolate chip and cranberry scone + soy cappuccino

The place is called Urban Farmhouse Market & Cafe and it’s really neat because you can even go grocery shopping in there. They sell things like organic milk, cake mixes, eggs, quinoa pasta, and granola made by a local Richmonder. We definitely plan on going back for lunch! It also seemed like a really nice place to study and have a nice change of environment.

I met up with Brittany at a local cellar for some wine and chocolate sampling. I haven’t seen her in ages and she’s just as radiant even in the winter! We both brought our dogs, but Matilda was being a brat to adorable little Olive, and Isaac had to bring her back home. I hope they get along next time they meet!

Friday turned out to be an up and down and up day. I got really upset at one point but before totally giving into it I knew I had to do something to help me calm down. I have worked so hard to not succumb to things that in the end are not good for me. I reached out, communicated my feelings, and ended up rising above the stress. I did what I knew would be best for me. So glad I wasn’t incredibly stubborn and didn’t give in. Now I plan on going out with some friends and dancing my worries away! Do any of you find it hard to let things go out of stubbornness?

This weekend there’s going to be tons of love in the air. Who knows what’s in store!!! Either way, I hope you all enjoy it whether you’re single or taken!

Making Up For Not Having a White Christmas

So my friends and I decided it would be safer not to drive out to Charlottesville for the weekend. I’m glad we didn’t go because they predicted 3 ft of snow for that area. I’m not sure how much they ended up getting though.

I have never tried any of the PB&Co flavors but I’d imagine it would taste similar to this. In the bowl I cooked some oatmeal with the last of my chocolate protein powder + cinnamon + coconut oil. Then I added in some diced apples, white chocolate chips, and crunchy peanut butter. So delicious!

I made a bowl of chocolate oats with a banana bruleed in + coconut oil + peanut butter + white chocolate chips. Obviously I loved the peanut butter and white chocolate chip combo from earlier that day.

Steamed kale later massaged in olive oil; To go with the brie I made a caramelized onion-cranberry compote + pine nuts for crunch and earthiness, then I baked some leftover Italian semolina bread. Even the kale with the brie and compote tasted delicious together.

When a friend of mine slept over, we opened up my box of Kashi GoLean Crunch that had been sitting in my pantry for ages--this became part of my snack pictured above.

This snack bowl consisted of Kashi GoLean Crunch + a crumbled Cinnamon Raisin gnufoods bars + almond milk + coconut oil (all warmed up).

Then it was crafting time for me!

I tried another flavor of the 3400 Phinney bars.

It had a delicious bold bitterness to it at the end and a nice crunch from the nibs.

Another new flavor I tried!

I tried the breakfast Sunshine burger. It was yummy but I don’t think I’ll be buying it again. It’s not horrible by any means, there are just other flavors I prefer; like the Southwest and Original (m’mm good). In the bowl is a recipe I got from a Mambo Sprouts newsletter: sweet and tangy mashed butternut squash. I just realized that I forgot the chives! Oh well.

While I was snowed in I took a detox bath and quenched my thirst with something I spotted at the store--mango flavored coconut water!

A recipe I wrote down ages ago and found the other day--smudges and all.

This was suppose to be a Jamaican inspired oatmeal recipe actually, but since I ran out of oats the day before (GASP) I did the next best thing–granola! I opted for Udi’s Au Naturel flavor over yogurt. They were topped with pineapple bits, a sliced banana, coconut shreds, almonds, and maple syrup (the one my friend got for me on her trip to Canada–peeking in on the left side). I loved every tropical bite of this; especially because I am ready for warm weather!

On that same page I wrote down some other recipes and decided to make another one for lunch.

Chickpeas in coconut milk + steamed kale + coconut & cinnamon rice (with coconut oil)

Chickpeas in Coconut Milk: serves 4

Ingredients

1 cup water

10 oz potato, cubed

14 oz cooked chickpeas

1 generous cup coconut milk

1 tsp salt

2 tbl sunflower oil

4 garlic cloves, crushed

2 tsp coriander

1/2 tsp turmeric

1/2-1 tsp chili

lemon juice

Suggestions for serving: naan or rice

1. Pour water into a medium saucepan and bring to a boil. Add cubed potatoes, reduce the heat to low and cook covered for 6-7 minutes. Add chickpeas and cook uncovered for 3-4 minutes. Add coconut milk and salt and slow simmer.

2. Heat oil, low heat. Add garlic and cook, stirring frequently. Add coriander, turmeric, chili, and cook 25-30 seconds.

3. Mix into chickpea mixture. Stir in lemon juice.

Quick dinner after a long day of errands.

After spending the afternoon with my roommate stocking up on goods at Target, Trader Joe’s and Whole Foods I was ready for dinner despite my snacks and yummy sampling! I bought some buns so I could enjoy Angharad’s spicy black bean burgers in burger form. These keep getting better and better! I topped it with vegan mayo, pepper jelly, melted manchego, yellow onions, cilantro, and ketchup. Holy delcious. I also had some steamed kale massaged in olive oil + cashews for crunch. I highly recommend making these burgers. Not only are they delicious, but they are so convenient for when you’re in a time crunch or don’t have the energy to prepare something. Actually, they’re wonderful for any occassion!

Comfort food with a twist...

This was such a great nighttime snack! Now what exactly was this snack? Well I cooked some cream of wheat in almond milk (I used Almond Breeze Original), and topped it with chopped dates, Artisana’s Cacao Bliss, and my favorite peanut butter. All of this melted together. So soothing and perfect for a Sunday night and some reading.

If all Mondays started like this... well then no one would be complaining!

Liz sent me a recipe that I knew I had to make ASAP! I had some leftover coconut milk from the soup I made the day before; Purrrfect for Indian spiced oats with coconut milk. Early classes on Monday = quick breakfasts so I used a packet of Uncle Sam Cinnamon Raisin Oatmeal + Soymilk. I threw in a handful more of oats in there + extra spices. For the finishing touches I swirled in some coconut oil + raisins + sliced almonds + coconut milk.

Can't get enough of the spicy black bean burgers!

I prepped it the same way as Sunday night only this time I had it with barbeque Popchips (better the second time around), and a Bugs Bunny carrot + my favorite peanut butter. Once again, this was quick enough for me to put together without eating my own arm off. For some reason I didn’t realize that my Seminar on Hinduism class ended at 6:40–not 5:40. It didn’t help that my afternoon snack sadly only held me over about an hour and I hadn’t anticipated being hungry that quickly. Apparently today was one of those bottomless pit days and the only thing I had packed was the 3400 Phinney Nib Brittle bar and that didn’t do much except please my tastebuds. Note to self: always keep something substantial packed. I’m usually good about this is if I know I’m going to be on the go, but today I had the leisure of snacking at home. Oh well, lesson learned.

Build Me Up Butternut

The other day I received a package with no return address and a secret admirer was the sender.

My heart leapt with joy because I knew it had finally arrived! My friend–whom I stayed with when I was in New York–had sent me a package awhile ago. I knew it was from her when I read that it was to her chickpea; she’s deathly allergic to them so it was a joke. Isn’t that unfortunate though? To be allergic to chickpeas… Oi!

There was a surprise beneath every layer.

I am seriously blessed to be surrounded by such wonderful people. Really and truly, every day I am given so many reasons to smile. From random bump-ins on the street, to constant messages from dear friends, and to comments I get from you all. Speaking of comments, my mom finally left her first reply in my last post! Whenever I’m in Florida we sit around the kitchen table and I’ll read my posts out loud to them. This blog makes them smile :)

It just so happened that before I opened the package I turned on the burner to heat some water for a cup of tea.

The chai tea was delicious and flavorful with all its spices. I had it with a warm lemon poppyseed Heart Thrive + coconut oil. After the picture was snapped I decided to spread on some cranberry preserves as well. This is the best way I’ve enjoyed this flavor of Heart Thrive. For some reason, it just tasted better this time around.

Dinner was something I was very much looking forward to... more so than usual.

Not too long ago while blogreading I checked up to see if the lovely Angharad was still alive and kickin’. Indeed she was because I saw a new recipe that I knew I had to recreate! Ladies and gentlemen, introducing the spicy black bean burger. This sounded like an amazing recipe to make on a Sunday night, since it’d be convenient to have these available on busy days. That night I had it in a handmade flour tortilla with bell peppers, homemade salsa verde, cilantro, and since I had no sour cream on hand I just used Greek yogurt. This was actually a surprisingly good substitute since the yogurt is thick and tart. As the patties were baking, my roommate and her boyfriend exclaimed how good it smelled. Well now I can say that they taste even better than they smell! Though the truth is, I don’t think Angharad could ever give us a bad recipe even if she tried.

A new twist on my favorite snack as of late.

Instead of using granola I nuked a crumbled lemon poppyseed Heart Thrive in the microwave with some soymilk till it got nice and soft. Then I added white chocolate chips and cashew butter. I am so glad I opened up this glorious bag of white chocolate chips!

Another surprise in the mail from a very dear friend of mine.

I’ve heard so many praises about this cookbook and now I know why!!! There are so many incredible sounding recipes, where’s a girl to start?! Thanks so much Liz! The ideal situation would be to invite every single one of you over and we’d all choose a bunch of recipes, then hunt and gather, and prepare and enjoy a most glorious feast. Imagine that? Being surrounded by that many awesome people and amazing food.

After having my critique (my piece was the only left to be critiqued) postponed three times–I was ready to get it over with! But I knew I had to start the day on a delicious note and the rest would fall into place. I had a bowl of yogurt, mango bits, pomegranate arils, a warm apricot Heart Thrive + coconut oil, and Sunland’s banana peanut butter.

Yeah, I think a yogurt mess was a great decision!

Oh and the crit went really well!!! It’s always nice to hear other perspectives and suggestions. The class actually answered one of my doubts of whether or not I should’ve made the video longer–they wished it was!

More randomness!

I had to have another  spicy black bean burgers! This time I filled the handmade tortilla with butternut squash, avocado, cilantro, manchego cheese, tomato sauce, and red pepper jelly. Can I get a witness?? This was so pleasing to every kind of taste; sweet, savoury, spicy, tangy, straight up delicious.

Couldn't get enough of the butternut!

When I was looking for falafel recipes I stumbled upon a few sweet potato ones. So this led me to making a falafel wrap with butternut squash, cucumber slices, tomato slices, avocado, cilantro, fresh tzatziki, onions, and lettuce. Yum yum yum and more yum!

One of them was a banana pancake and I chopped some dark chocolate on top. Coconut oil, cinnamon, and Apple & Maple syrup was spread on all the pancakes. The other two pancakes were topped with diced apples and confectioner’s sugar mixed with nutmeg. On the side I also made a dip for the apples; a mixture of Sunland’s banana peanut butter and yogurt. I’ve seen this done on some blogs so I thought I’d give it a try–and I shall try, try again. This was good!

Tried something totally new...

I have never had buffalo wings in my life so when I saw that I had one more Gardein freebie coupon left, I thought I’d give their vegan “buffalo wings” a chance. But I had no idea what they were usually served with. After “researching” it I decided to transform my tzatziki sauce into a ranch dressing by adding some extra ingredients. I also made some Old Bay season yam fries; and steamed some kale, seasoned it, massaged it in olive oil, and topped with avocado slices. Spicy!!! I can’t tell you if these were authentic tasting or not, but I can tell you that I liked them! The texture wasn’t too funky (+ no bones!) and you could taste the vinegar in the sauce, which I didn’t mind. Actually, after looking up some buffalo wings recipes, vinegar is a common ingredient.

Whenever I pull out my personal casserole dish I swear the stars instantly align!

In the dish: roasted butternut squash and yam (tossed in coconut oil and cinnamon) + avocado + kale + homemade falafel balls + tzatziki mixed with tamarind-date chutney + cilantro. Random and flavorful. I love the sweet and spicy combo of the tamarind-date chutney; it brought the tzatziki to whole other level.

After my last post, the rest of the week seemed to fly by. Something or someone out there is listening! It’s Friday and I have no idea what my weekend plans are. My choices are: go up to Charlottesville or stay snowed in the comfort of my own home. We’ll see, we’ll see. Now if only I could stock up on this no matter how my weekend pans out…

Winter Days

Many of you asked me about the brown rice cream in my last post. The company Erewhon makes it and you can order it online or check to see if it’s at your local grocer. It’s a really great 100% organic creamy cereal that’s a bit heartier than cream of wheat and is also gluten-free.

On the topic of answering questions, if anybody has any others for me regarding anything, don’t be afraid to ask! I’d be more than happy to answer.

This bowl = Oikos yogurt + Udi’s Hawaiian granola + caramelized banana + Sunland’s banana peanu butter. Let me remind you what’s in the Hawaiian granola (which is my favorite by the way)… ginger-toasted macadamias, pineapple, and coconut. I also did something special to the yogurt–sweetened it and also added a bit of coconut extract to give it an extra tropical flair. Yuuuuum!

I quickly put together this lunch before my Literary Journalists class.

The rest of the Health Valley vegetarian chili mixed in with bulgur wheat, hickory smoke sauce, corn, and mushrooms. I also had a side of steamed kale tossed in olive oil.

Something new to try...

Remember when I found the new caramel Oikos flavor in my last post? My first thought when I saw it I was disappointed because it looked like the plain yogurt. But then it occurred to me that it was probably at the bottom of the cup. Correct-o-mundo! First I tried it alone and I have to recommend this to everyone! There was nothing weird or funky about this. The caramel and the Greek yogurt blended together smoothly and tasted so yummy together. It’s sweet indeed, but it didn’t have an artificial taste.

Then it hit me--combine a diced jazz apple with the caramel Oikos...

And another idea hit me!

I wanted nuts but also something crunchier. Solution? Top it all off with vanilla & almond granola. Caramel apple much? This was refreshing and full of flavor!

For my to-go dinner I used a Sabra to-go cup and mixed in some pesto and cumin.

I had to go to photoshoot that night for a Valentine’s Day ad for a hip restaurant around here. I’ll let you guys know when the pictures come out! It was very different to be the one in front of the lens, but so much fun!

The other day when I saw hot cocoa in Holly's post I made some that night and I stumbled upon something I miraculously forgot!

Maya’s homemade marshmallows she sent me awhile back! How did I forget I still had some left? Well I knew just what I wanted to use them for. I already knew they were delicious alone and with hot cocoa, so I wanted to incorporate them into my favorite meal of the day. I made a bowl of oatmeal with chocolate protein powder, hot cocoa mix, coconut oil, and topped them with the lovely marshmallows. On the side I also had a sliced apple with Sunland’s caramel peanut butter.

They started to melt right in!

I made a tzatziki sauce with of Oikos plain Greek yogurt + other various ingredients.

Such a refreshing lunch... in the middle of winter!

I made a falafel wrap and a salad on the side–both topped with fresh and creamy tzatziki. The falafels I made the other day were definitely winners!

So. Good. I literally stopped everything to just sit and enjoy every bite of this wrap.

More snacking on the go!

I got back in touch with autumnal flavors with the Maple Pecan Boomi Bar. I was asked to go shopping with a guy friend of mine. He said he needed a lady’s expertise to find the right button-down shirt. Too funny!

We both ordered soy cappuccinos and I dusted mine with the dolce spice. Not sure what it is, but it sure smelled good!

After finding the perfect button-down and some other things we headed back home, but he had to make a quick stop at Trader Joe’s. What?! I got to go twice in one week! One of the cashiers swore he saw me riding my bike on a road I know I probably wasn’t cruising down recently. I’ve been told many times that I have a doppleganger walking around. Hmm?

At some point Matilda let us know that walking time was over so I picked her up and ran back home to warm my poor baby up.

Then I started to prepare a hearty meal for us--perfect for a snow day.

Such a comforting meal.

I just started to cook things that I felt would be delicious together. I cooked some bulgur wheat. Then sauteed onions and garlic with curry and cumin. Then I added the water and red lentils, bay leaves, diced tomatoes, green peas, hickory smoke, vegan Worcestershire, and red miso paste. After it was all done simmering I mixed the bulgur wheat, lentils, and swirled in some coconut oil for the final touch.

Here is some exciting news that I have to share with you all. Remember in my last post I talked about being very busy but enjoying what I’m doing and trying new things? Well recently I went to a model call for a local boutique around here. They’re hosting a fashion show featuring local talents and what not. I decided to give it a try and people of all sizes could come! I seriously thought I wouldn’t get a call back because I was lacking that “model attitude” when I did my walk, but maybe they saw something in me because I got a call back and I’m in!

I hope all of you are enjoying your weekends whether you’re snowed in, bundled up, or soaking up the sun even! Tonight I plan on going bar “crawling” through the snow with some friends. Should be fun!
